Welcome to the World Tea Buyer’s Guide

We are pleased to introduce the World Tea Buyers’ Guide™, the World Tea Ratings™ and the World Tea Championship™. At this point, you might be wondering, “What are these?” You will fi nd the answer to that question on the following pages, but fi rst, we would like to share our story and vision.

Our goal at World Tea Expo is to elevate the perception of tea, the awareness of the consumer and the independence of the category. Out of that goal grew the concept of a ratings system for tea. Since our earliest discussions, we knew it would be an enormous undertaking with challenges and obstacles; that it would undergo transformations and changes; and that it would be subject to intense scrutiny by our community.

But we also believed that the result would be one of the most signifi cant initiatives in the industry, with potentially limitless benefi ts to all stakeholders.

We are committed to the continual improvement of all of the components of this process, and know we have much work to do because of our ambitious intention. As with each of us and with every tea, nothing is without fl aw. Still, the drive to accomplish what few thought possible was behind the World Tea Expo, and that spirit will drive our team to maximize the potential of these products and services.

We could not have accomplished what we have so far without the contributions of some key individuals, who believed in our ideas and provided critical and insightful feedback. The esteemed judges committed to an unknown project, and graciously took the time to evaluate over 200 hot tea samples. And most signifi cantly, none of this would be possible without the brave companies who entered the Championship, submitting their teas to professional evaluation for the entire world to see.

We intend to provide World Tea Ratings on a continual basis, allowing teas to be evaluated at their optimal time during the calendar year, and to communicate our message about the brilliance of specialty teas to the consumer on a mass scale. Stayed tuned, as we have a lot more to come!

Iced Tea ClassFor the Iced Tea Class, there are three main categories representing the three primary sales channels for iced tea. These are RTD (ready-to-drink), Foodservice and Freestyle. The fi rst category represents the retail and grocery sales channel; the second, its namesake; and the third, specialty beverage retailers who make small hand-crafted batches of iced tea (i.e., tea rooms and coffee shops). Within each iced tea category, there are a number of sub-categories corresponding to the tea type or style.

The Iced Tea Class evaluation was done entirely at the Expo, where winners were awarded in each sub-category, and each tea received a World Tea Rating.

What it all means…

OverviewThe World Tea Championship™ consisted of two distinct classes, Hot and Iced, and two main elements, the World Tea Rating™ and the World Tea Championship™.

Hot Tea ClassTeas in the Hot Tea Class were submitted in advance and pre-evaluated. The top 5 became Finalists, meaning they went on to be judged in a competition at the Expo to determine the Best Tea. There were 22 hot tea categories, plus 3 super categories. The standard hot tea categories were subject to MSRP maximums and were, in most cases, for specifi c styles or blends of tea. The super categories did not have any pricing restriction and were simple Black, Oolong, or Green. White Tea was not made a super category, because Bai Mu Dan and Silver Needle were standard hot tea categories.

Entrants submitted samples to our offi ces. We then coded the samples to conceal the identity of the submitting company. All the teas were grouped by category and shipped to a diverse panel of professional tea cuppers and industry experts for professional cupping. Strict standards were placed on the brewing processes to avoid inconsistencies in the independent evaluations.

The judges evaluated the teas on brewed color, brewed aroma, brewed fl avor, brewed mouth-feel, and brewed harmony of each tea. These evaluations were used to calculate a numerical value on a 100-point scale. This value is each tea’s World Tea Rating™.

The top-5 rated teas in each category became Finalists in the World Tea Championship held at the Expo.

World Tea Rating™We are all familiar with wine ratings lists inferring quality value, and insight. These ratings increase consumer interest and engagement with the products, and let consumers anticipate what to expect from their purchase.

With tea, it is not as simple. Tea is not bottled, and the preparation process can make an average tea taste great and a phenomenal tea taste terrible. Due to the timing of the World Tea Expo and the seasonal production of some styles of tea, certain teas that were produced in 2007 may not have been optimal for their evaluations.

The WTR are not a mirror of the wine ratings commonly seen, where all wines seem to earn a score of 85 to 95. Instead, these teas were more critically evaluated, and the following guidelines can be used to interpret the resulting ratings:

96 - 100 Rare: Unique tea, diffi cult to replicate in future manufacturing processes

90 - 95 Outstanding: a distinctive tea with brilliant style

80 - 89 Very Good: a tea with superior characteristics

70 - 79 Above Average: a tea with particularly desirable qualities

60 - 69 Mediocre: a good tea, typical for its category

50 - 59 Poor: not recommended

World Tea Championship™As mentioned, in the Iced Tea Class, entrants were rated and the Best Tea awarded in a single event at the World Tea Expo. For the Hot Tea Class, the process was broken into

two separate components: Rating was done prior to the Expo, and the Finalists were re-evaluated at the Expo.

The reason for the separation was this: The much larger scope of the Hot Tea Class and the magnitude of the samples tasted would make it impossible to host the entire process at the Expo. Splitting the process also allowed us to provide the World Tea Ratings for the Finalists in the initial edition of the Buyer’s Guide.

While the ratings provided a ranking for the teas, it did not preclude who won the Best Tea competition. For the fi nal judging at the Expo, there were two additional judges, who are renowned tea personalities, and any judge that had a disclosed interest in an entrant was removed from the evaluation for that category.

It is also important to note that the preparation of a tea has a signifi cant impact on its fi nal qualities. While we set strict cupping guidelines, there is potential for variations in cupping from judge to judge. During the fi nal evaluation, the teas were prepared at once, from which all the judges tasted and rated, thereby eliminating the only remaining potential bias in the process.

World Tea Buyer’s GuideThis Buyer’s Guide offers the single most effective descriptor for amassing specialty tea popularity and

ultimately establishing its own category. It includes the Ratings, corresponding Finalists and Winners for the World Tea Championship. Following the Expo and the conclusion of the World Tea Championships, the World Tea Buyer’s Guide will be reprinted and available to include the Best Tea winners and the ratings for all the Iced Tea Class entries.

Black Tea

Breakfast Blend: Black tea blend of any variety big enough to add milk and sugar.

OP: Orange Pekoe grade regardless of origin. Earl Grey: Black tea of any variety blended with bergamot citrus fl avoring, oil or dried bergamot peel.

Black Blended / Flavored: Black teas of any variety and from any origin blended with herbs, fruits, essential oils, spices and/or other fl avoring agents.

Darjeeling 2nd Flush: Includes 2nd fl ush teas from Northeastern India’s Darjeeling region.

Green Tea

China Style: China style is defi ned not by producing country, but by production method. Open to any class of green tea processed by the methods of making traditional Chinese green tea.

Japan Style: Japan style is defi ned not by producing country, but by production method. The category includes all steamed tea made according to the Japanese steamed aracha processing method regardless of origin.

Hand-Tied Flowering Tea: Tea hand-sewn tea into various shapes and styles. Can be made of pure tea or may include fl owers, herbs and/or fl ower scenting. Black, White, Oolong or any hand-sewn tea may enter in this category. Jasmine Premium Grades: Dragon pearls, silver needles, tippy grades and pure bud grades, white or green tea based, are accepted here. Traditional jasmine scented teas of a special or premium quality. Pure tea and jasmine without added fl avors, herbs, fruits, fl owers, etc.

Jasmine Common Leaf Grades: Common leaf grades of jasmine green tea from any origin containing pure tea and traditional jasmine scenting without added fl avoring, herbs, fruits or other ingredients.

Green Blended / Flavored: Green teas of any variety and from any origin blended with herbs, fruits, essential oils, spices and/or other fl avoring agents.

Oolong Tea

Green Oolong: Greenish to golden liquor. Based on fermentation, the general processing style and fi nal drying, the resulting dry leaf is greenish in color and the liquor quality ranges from clear greenish to golden yellow.

Dark Oolong: Amber-red or dark liquor. No matter the fermentation degree, the resulting dried leaf is darkish color, not bright or forest green, and the liquor quality ranges from amber-orange to reddish or brownish.

Oolong Blended / Flavored: Oolong teas of any variety and from any origin blended with herbs, fruits, essential oils, spices and/or other fl avoring agents.

White Tea

Bai Mu Dan: Classic style white tea made with two leaves and a bud or one leaf and bud. No frying or rolling. Simply withered controls and gentle oven and/or cool drying and/or sun-drying techniques.

White Tea Silver Needle: Classic style, pure bud white tea made according to classical styles of processing. No frying or rolling. Simply withered controls and gentle oven and/or cool drying and/or sun-drying techniques alone or in combination.

White Tea, Blended / Flavored: Defi ned by white teas of any variety or origin blended with herbs, fruits, essential oils, spices and/or other fl avoring agents.

Herbal

Chamomile Blend: Chamomile of any variety from any origin blended with any variety of other herbs, teas, fruits, essential oils, spices and/or other fl avoring agents.

Mint Blend: Mint of any variety from any origin blended with any variety of other herbs, teas, fruits, essential oils, spices and/or other fl avoring agents.

Hibiscus Blend: Hibiscus of any variety from any origin blended with any variety of other herbs, teas, fruits, essential oils, spices and/or other fl avoring agents.

Pure Red Rooibos: Pure Red Rooibos from South Africa without any added ingredients.

Rooibos Blended / Flavored: South African Red Rooibos blended with any variety of other herbs, teas, fruits, essential oils, spices and/or other fl avoring agents.

The judges for the inaugural World Tea Championship™ were selected based on their reputation, their professionalism and their extensive experience cupping teas. Some of the judges were directly or indirectly involved with the teas of companies exhibiting in the Expo and ultimately entries in the Championship. Although we know that the integrity of each of these judges did not impair the ability for a fair and just evaluation, we recognized the need for additional measures and controls to ensure that there is no potential for the results to be affected by any judge who has an interest in a particular tea entered into the competition.

The World Tea Championship™ is using the following measures and controls:

Prior to the CompetitionEach of the Judges were required to sign an agreement to maintain the highest ethical standards during the competition and were further required to disclose any direct involvement with any particular company and any indirect involvement as a supplier for any particular company specifi cally as to the category.

Maintaining Integrity and ObjectivityInitial Evaluation and Rating ProcessAll teas submitted were sent to the judges internally coded by the World Tea Championship™ for a blind evaluation.

For Judges who had a specifi c interest in an entrant or entry, their evaluation of the tea they have an interest in was statistically evaluated against the other Judges’ evaluation of that tea and in comparison to all other teas in that category. Any evaluation from a Judge that was more than two standard deviations from the mean resulted in discarding that Judge’s evaluation from the entire category.

A more comprehensive methodology was created and used by the UNLV Professors who are experts in statistical analysis.

Final Evaluation and ChampionshipAny Judge who had a direct or indirect interest in any tea that is a fi nalist in any specifi c category was removed from judging that category.

For each tea judged, an average score for that tea was calculated. Also for each tea judged, there was a “standard deviation” calculated for its average score. One way to think of standard deviation is as setting a range between which scores may be predicted to fall. The statistic can identify a range for each tea score into which 95% of all scores would be expected. (For the statistically-minded, that will be explained in greater detail below.) World Tea Championship then checked each individual judge’s score to assure that it fell within this prediction range. If any judge’s scores fall outside of the 95% expectation range for a particular tea, whether unexpectedly high or low, it was eliminated.

Any such extreme scores are termed in the statistics world as outliers, and the 95% certainty range is similar to that used in social science research. It is a generally accepted cut-off point in research. The size of the range for each tea is variable – if all judges but one rated a tea within a few points of each other, the range size would be small. If there is some disparity in scores assigned a tea, then the range for that tea could be quite wide. The beauty of such statistical procedure was that it took into account the overall variability between judges when establishing the predicted range, while identifying any individual score which falls considerably outside the norm.

These procedures were applied only to each judge’s total score, not to each of the sub-components (such as color, aroma, etc.) that make up the fi nal score. By applying this criterion to each score submitted, any concern about favoritism toward a tea was addressed; but equally important any strong bias against a specifi c tea which falls outside of the 95% range of predictability (as established by the calculations done with all judges’ scores for a tea) was also identifi ed.

Statistical Methodology for Eliminating Bias and ErrorStatistic Details:For the statistical record, the standard deviation range applied to each tea score is -2 to +2 standard deviations from the tea’s mean (average) score. The tea’s average score was found by adding all individual scores, then dividing that total by the total number of individual scores. The next step in this process was standard deviation which is calculated in this manner: In other words:1. For each tea score calculate the difference between it and

the mean (or average) score for the tea. 2. Calculate the squares of each of these differences. Then

add all of these together and fi nd the average of the squared differences. This quantity is the variance.

3. Find the square root of the variance and that is the standard deviation.

World Tea Championship converted each individual judge’s score into a measure of its deviation from the average (termed by statisticians as a z score or “standard score”). A z score was found by subtracting the average score from the individual score, then dividing the result by the standard deviation. If the resulting individual score was great than +2 or less than -2, that score for that particular tea was eliminated.
