COMUNIDAD DE MADRID Located in the center of the Iberian peninsula, theComunidad de Madrid is one of Spain’s 17 autonomous communities. Although Spain was united under one crown in the 16th century, Madrid’s territory historically served as a confluence for differing political, historical and culturaltraditions. As Spain transitioned towards democracy in the20th century, instead of complete national amalgamation,the Spanish Constitution of 1978 guaranteed political andadministrative independence to the unified nation’s diversenationalities and regions. Encircled by Castilla-La Manchaand Castilla y Léon, the Comunidad de Madrid’s richly varied province encompasses the capital city as well as its surrounding river valleys, open plains and pine-blanketed sierras.

Castilla y León is Spain’s largest region, stretching fromPortugal in the west to Aragón and La Rioja in the east, andfrom Madrid in the south to Cantabria and Basque Countryin the north. ¿Hablas español? This program includes 32 hours ofSpanish instruction at an accredited center of theCervantes Institute located in the heart of Madrid. TheCervantes Institute is a public, not-for-profit institutionfounded by the government of Spain in 1991 to promoteSpanish culture and language education. Headquarteredin Madrid, the institute is the world’s largest interna-tional Spanish teaching organization, with more than 70 centers on four continents. Engage in intensive language instruction combined

with an immersion experience in Spanish lifestyle, customs, art, history and cuisine, courtesy of your experienced Lifestyle Guides. The program is designed to go beyond the textbook and classroom to foster culturalunderstanding through authentic experiences that impactindividuals as students and as world citizens. Held Monday afternoons and Tuesday through Thursday

mornings, your 16 language lessons are limited to eight students per teacher and are tailored to your skill level,guaranteeing individual attention and a comfortable progression through the lessons. You will complete a skillsassessment before you arrive in Madrid in addition to aplacement test on the first day of class. Everyone frombeginners to Spanish majors will develop their skills and put them to use in the city with the help of your highly qualified Lifestyle Guide.

Time seems to run differently in Spain. The day begins with breakfast: a small meal of sweet rolls, jam ormild cheese and café con leche, coffee with milk. Late morning tapas sate the appetite until 2 p.m., whenSpaniards sit down to the largest meal of the day, la comida, which usually consists of multiple courses andis accompanied by sherry, wine or beer. This hearty meal is followed by a siesta. Businesses close shop forthis two- to three-hour break each day, a tradition that dates back to early regional agriculture and the needfor a midday break from the hot Spanish sun.The afternoon begins with a return to work at 5 p.m., but it doesn’t last long, as evening begins at 8 p.m.,

when thoughts turn to wine and other refreshing beverages. La cena, dinner, is typically served after 9 p.m.and is smaller and simpler than la comida. Spaniards typically go to bed around midnight, earning them thereputation of Europe’s night owls. After a few days in Madrid, you’ll find yourself operating on unhurriedSpanish time — and liking it.

A country renowned for its cuisine, Spain boastsrich, well-seasoned fare and distinctly Mediterraneaningredients. A typical Spanish pantry includes extravirgin olive oil, red or white wine vinegar, olives, rice,beans, lentils, saffron, smoked paprika, capers andartichoke hearts. In most of Spain, meat is enjoyed inmoderation; dry cured Serrano ham, lamb, chorizosausage and chicken are used in small amounts to addflavor and texture to dishes such as paella, a Valencianrice dish. Omelets are also popular, and seafood iscustomary along the coast. Bread is served with everymeal, often with oil for dipping, and is also a commonsnack served with cheese.

Castilian-Leonese cuisine is distinguished byhearty stews and centerpiece roasted meats suchas carne asada and suckling pig. The stews aremade of three basic ingredients: meat, pulses(beans, lentils or chickpeas, grown locally) andvegetables. Nuts or bread are added to thickenthe stew and enrich the flavor. The Castilianregion is the birthplace of the Spanish nationaldish, a hearty stew called cocido. The region alsoproduces Spain’s best-known cheese, Manchego.Castilian desserts often feature candied almonds

and marzipan. The most famous characteristic of Spanish cuisine is tapas, small appetizers

served hot and cold to accompany sherry, wine or beer. While innumerable inter-pretations of classic small plates can be found all over Spain, some restaurantsand bars are known for a particular type of tapas. Many Spaniards like to makeseveral stops to enjoy their favorites.In addition to offering you the chance to enjoy four full weeks of authentic

Spanish food, this program includes a special cooking demonstration and tasting.Optional cooking classes are available at an additional cost. What better souvenirfrom your time in Spain than a repertoire of delicious Spanish recipes?

A Spanish meal isn’t complete without wine! The Castilla region claims some 400 wineriesand 10 Denomination of Origin (DO) wines: Ribera del Duero, Cigales, Rueda, Toro, Bierzo,Arlanza, Arribes, Tierras de León, Valles de Benavente and Tierra del vino de Zamora. Many ofthe region’s vineyards lie along the Duero River, which provides much-needed moisture in anotherwise arid climate. The dry, hot summers are followed by long, cold winters, both ofwhich influence the flavor of the grapes and the character of the wine. Both red and whitewines are produced in Castilla, along with sparkling wine; licoroso, wine with a particularlyhigh alcoholic content; and aguardiente, a variety of liqueur.Another Spanish beverage that has achieved worldwide repute is sangría, a refreshing

summer punch that combines wine with fruit, seltzer and sugar. Spain is also the birthplace ofsherry, wine fortified with brandy. To this day, all wine labeled as “sherry” in Europe mustcome from the Sherry Triangle in the Cádiz region of Spain. For a non-alcoholic treat, try ahomemade horchata de chufa, a sweet, milky drink made from ground tigernuts.

Did youknow?Many of the vegetables nowcommon in Spanish cookingwere introduced by explorersreturning from the Americasin the 15th and 16th cen-turies, including tomatoes,bell peppers, potatoes andzucchini. Other vegetablescommon in Spanish cuisineinclude onions, asparagus,eggplant, spinach, cabbage,cucumbers, artichokes, lettuce and mushrooms. Fruits such as apples,oranges, grapes, cherries,dates and figs are enjoyed as a snack or dessert.

The term castellano, Castilian Spanish,refers to the Latin-based language spoken in

northern and central Spain. Originally the localdialect of Cantabria in north central Spain,Castilian spread through the region and becamethe official language of King Alfonso X’s govern-ment in the 13th century. This laid the foundationfor Castilian to become the basis of standardSpanish.

Other Spanish dialects are spoken throughoutthe country and the world; in fact, thanks toSpain’s long history of exploration and con-quest, Spanish is second only to Chinese asthe most commonly spoken language in theworld. The Castilian region has retained itsstatus as the home of the purest form ofSpanish, making it the perfect place tostudy this practical language.

During your farewell reception, you will be treated to a performance by a traditional

Spanish music group called a tuna. The tunadates from the Middle Ages, when ensembles of university students would display their musicaltalents in return for food or money to pay for their studies. More than 700 years later, studentsthroughout Spain and the world continue the tradition. Membership in a tuna is an honor guardedby a set of initiation rites, similar to U.S. fraternities.The tuna usually includes two to six charismatic students, tunos, who meander through streets, festivals, parties and restaurants, singing traditionalSpanish music as well as popular and folk songs, andaccompanying themselves on guitar, tambourine,lute and bandurria. The tunos don traditionalIberian gear, including stockings, baggy pants, awhite collared shirt, a tight doublet, a cloak and a sash called a beca, colored to reflect the student’s course of study.
