1. Spread butter and flour on a 1/2 sheet pan.2. Melt together the butter, Bel Noir and cocoa mass to 113°F/45°C 3. Temper the eggs, coffee granules, vanilla, and sugar with the chocolate mixture. Cool to room temperature. 4. Combine dry ingredients and add to above.5. Fold in 3/4 pecans and chocolate chips and spread in pan. 6. Bake at 300°F/149°C convection; about 35 minutes.7. Decorate the brownies with the remaining pecans, chocolate chips and drizzle with caramel.

1. Cream the butter, sugar, honey and eggs with the flat paddle on a stand mixer.

2. Add the vanilla, almond extract and the citrus zest.3. Sift the cake flour, powder and salt together. 4. Add the sifted dry ingredients in three additions, alternating with

the buttermilk. Fold in chocolate chips.5. Bake at 400°F/204°C for 15 mins; then 350°F/176°C for 45

minutes.
