Normally, proofing and baking consists of many separate manual steps: thawing frozen goods, subsequent proofing in the proofing cabinet, baking in the oven and continuous checking. For outstanding quality, many baked products need an exactly dosed amount of humidity. Only that way can the best rising and a shiny crisp crust be achieved. SelfCooking Control® knows – fully automatically – exactly when and how often humidification is optimally used.

That way you can bake entirely different products such as white bread, multigrain bread, rolls, baguettes, ciabatta, croissants, filo snacks, yeast pastries, large or small Danishes and all manners of baked convenience products – at the touch of a button. Even mixed loads of similar baked goods are possible at any time. Select your preferred browning from light to dark, that’s it! Your dream result – even regional baking and eating customs – will be achieved.

If needed, the baked goods can be proofed before baking. Just select the integrated proofing step, that’s it! Your SelfCooking Center® does the rest. After proofing, the products are directly baked to perfection.

LevelControl® – boundless baking

LevelControl® is the perfect solution for rotating mixed loading – you simply prepare entirely different baked goods at the same time. Bake white bread with rolls, baguettes, ciabatta and pita bread or different types of Danish with strudel, muffins and pastries.

Each rack is monitored precisely to the second by LevelControl®. Depending on how often you load and how long the door is open, LevelControl® adjusts the cooking time fully automatically – that is why the browning you want is always what you get.

The SelfCooking Center® offers all important functions for professional and individual baking with LevelControl®.

5 airflow speeds permit individual adjustments of even the most delicate products. With ClimaPlus Control® you’ll always have a handle on the baking climate. This is decisive for the highest quality in baking. On request, even a nominal value precise to one percent can be preset for humidity.

Mobile oven baking racks for SelfCooking Center® 201 The mobile oven baking racks are fitted with 14 L-shaped run-in rails. There is plenty of space between the rails, so the SelfCooking Center® can be used to full capacity even when bakery products are relatively high. The L-rails have a front edge to stop baking trays sliding off.

RATIONAL Pizza dish You can prepare up to 100 prebaked pizzas in only 10 minutes with the special RATIONAL pizza pans. The pizza is simply placed into this pizza pan with non-stick coating, placed on the mobile oven rack and completed with Finishing®.

Baking size base cabinet for SelfCooking Center® 61 and 101 To provide secure support for SelfCooking Center® table-top units we supply a special baking-size base cabinet with 14 shelf rails as an alternative to GN container base cabinets. All base cabinets are made from chrome nickel steel and comply with current hygiene regulations.

Mobile oven baking racks and transport trolleys for SelfCooking Center® 61 and 101 The mobile oven baking rack has 5 or 8 L-shaped run-in rails. The baking transport trolley has 9 L-shaped rails to take 400 x 600 mm baking trays. There is also a telescopic drawer which allows baking to be placed on or removed from trays.

RATIONAL Grill and Pizza tray With the grill and pizza tray you can prepare fresh and convenience pizza to the highest degree of perfection. Optimal quality is achieved by outstanding heat conductivity. The rear section can be used to grill vegetables, steaks and fish – and all with a perfect grill pattern. The TriLax®coating stops products sticking to the Grill and pizza tray.

RATIONAL 400 x 600 mm and GN baking trays

RATIONAL aluminium baking trays give perfect results. The thermal conductivity of aluminium is considerably superior to that of other materials. The special TriLax® coating also stops baking sticking to the tray – and guarantees even baking.

RATIONAL 400 x 600 mm and GN granite enamelled containers

Especially suitable for all types of tray bake, cake mixture, pizzas. Excellent thermal conductivity also ensures that bakery products are evenly browned underneath. With granite enamelled containers portioning losses are a thing of the past. The container edges are fully shaped, so in future you can even serve the corner pieces. Granite enamelled containers come in 20, 40 and 60 mm depths.

RATIONAL muffin and timbale moulds 400 x 600 mm and GN

With the RATIONAL muffin and timbale moulds you can bake top quality fresh muffins. The muffin and timbale moulds are made from a special, highly flexible material that totally prevents sticking. The baked muffins are incredibly easy to remove from the moulds. The muffin and timbale moulds are also ideal for cooking vegetable mousses, fish timbales, bread puddings, a wide range of desserts, poached eggs and much, much more.
