20. ELECTRICAL REQUIREMENTS: YourKitchenAid® Mixer operates on a regular220-240 volt A.C., 50-60 hertz housecurrent. The wattage rating for yourKitchenAid® Mixer is printed on the trimband. This wattage is determined by usingthe attachment that draws the greatestpower. Other recommended attachmentsmay draw significantly less power.

21. Be certain the attachment hub is secure(tighten attachment knob) prior to usingmixer to avoid any possibility of theattachment hub falling into the bowlduring mixing.

OVERLOAD RESET BUTTON(Model 5KPM50 only)

• If the mixer is overloaded, the OverloadReset Button will pop out and the mixer willshut off. Turn the Speed Control Lever toOFF. Wait a few minutes, then push in theOverload Reset Button. Turn the SpeedControl Lever to the desired speed andcontinue mixing.

TO ATTACH POURING SHIELD*1. Turn speed control to OFF.2. Unplug Stand Mixer or disconnect power.3. Attach Flat Beater, Dough Hook, or Wire

Whip and bowl.4. From the front of the mixer, slide the Pouring

Shield over the bowl until the shield iscentered. The bottom rim of the shieldshould fit within the bowl.

TO REMOVE POURING SHIELD1. Turn speed control to OFF.2. Unplug Stand Mixer or disconnect power.3. Lift the front of the Pouring Shield clear

of the bowl rim and pull forward.4. Remove attachment and bowl.

TO USE POURING SHIELD1. For best results, rotate the shield so the

motor head covers the “u” shaped gap inthe shield. The pouring chute will be just tothe right of the attachment hub as you facethe mixer.

2. Pour the ingredients into the bowl throughthe pouring chute.

* If Pouring Shield is includedNOTE: Check that bowl and pouring shield areproperly in place.

Tilt Head• Lift motor head.• Turn screw (A) slightly to the left to raise

flat beater and to the right to lower flatbeater.

• Make adjustment with flat beater, so it justclears surface of bowl.

Your mixer is adjusted at the factory so thatthe flat beater just clears the bottom of thebowl. If, for any reason, the flat beater strikesthe bottom of the bowl, or is too far awayfrom the bowl, clearance can be corrected asfollows:

NOTE: Flat beater must not strike on bottom or sideof bowl when properly adjusted. If beater or wirewhip is adjusted too close so that it strikes bottomof bowl, coating may wear off of beaters or wiresmay wear through on wire whip.Scraping sides of bowl may be necessary undercertain conditions regardless of beater adjustment.Mixer must be stopped to scrape bowl or damageto mixer may occur.

Bowl, flat beater, and dough hook may bewashed in an automatic dishwasher. The wirewhip and these other basic accessories can becleaned thoroughly in hot sudsy water andrinsed completely before drying.

Lubrication: Motor bearings are self-lubricating and should require no furtherattention under normal use.

ELECTRICAL SHOCK HAZARDALWAYS BE SURE TO UNPLUGMIXER BEFORE CLEANING TO AVOIDPOSSIBLE ELECTRICAL SHOCK.Wipe mixer with a damp cloth. DONOT IMMERSE IN WATER. Wipe offbeater shaft frequently, removing anyresidue that may accumulate.

PERSONAL INJURY HAZARDTo avoid personal injury and damageto the beater, do not attempt to scrapebowl while mixer is operating; turnmixer off. Should scraper or otherobject drop into bowl, turn motorOFF before removing.

wWARNINGThe bowl and beater are designed to providethorough mixing without frequent scraping.Scraping the bowl once or twice during mixingis usually sufficient.

The mixer may warm up during use. Underheavy loads with extended mixing time, youmay not be able to comfortably touch the topof the unit. This is normal.

Your KitchenAid® Mixer will mix faster andmore thoroughly than most other electricmixers. Therefore, the mixing time in mostrecipes must be adjusted to avoid overbeating.

During operation, the flatbeater moves around thestationary bowl, at thesame time turning in theopposite direction on itsown axis. The diagramshows the completecoverage of the bowl madeby the path of the beater.

NUMBER OF SPEED

1 STIR For slow stirring, combining, mashing, starting all mixingprocedures. Use to add flour and dry ingredients to batter, addliquids to dry ingredients, and combine heavy mixtures.

2 SLOW MIXING For slow beating, mashing, faster stirring. Use to beat heavybatters and candies, start mashing potatoes or other vegetables,cut shortening into flour, beat thin or splashy batters, and mixand knead yeast dough. Use with Can Opener attachment.

4 MIXING, BEATING For mixing semi-heavy batters such as cookies. Use to creamsugar and shortening and add sugar to egg whites for meringues.Medium speed for cake mixes. Use with attachments: FoodGrinder, Rotor Slicer/Shredder, and Fruit/Vegetable Strainer.

6 BEATING, For beating or creaming, medium fast whipping. Use to finishCREAMING mixing cakes, doughnut, and other batters. High speed for cake

mixes. Use with Citrus Juice attachment.

8 FAST BEATING, For whipping cream, egg whites, and boiled frostings.WHIPPING

10 FAST For whipping small amounts of cream and egg whites. Use withWHIPPING Pasta Maker and Grain Mill attachments.

NOTE: The Speed Control Lever can be set between the above speeds if a finer adjustment is required.

Cake MixesWhen preparing packaged cake mixes, useSpeed 4 for medium speed and Speed 6 forhigh speed. For best results, mix for the timestated on the package directions.

Adding Nuts, Raisinsor Candied FruitsSolid materials should be folded in the lastfew sections of mixing on Stir Speed. Thebatter should be thick enough to keep thefruits and nuts from sinking to the bottom ofthe pan during baking. Sticky fruits should bedusted with flour for better distribution in thebatter.

Liquid MixtureMixtures containing large amounts of liquidingredients should be mixed at lower speedsto avoid splashing. Increase speed only aftermixture has thickened.

Converting Your Recipe to the MixerThe mixing instructions found in this book canbe used to convert your favorite recipes for usewith your KitchenAid® Mixer.To help determine a mixing procedure, yourown observations and experience will beneeded. Watch the batter or dough and mixonly until it has the desired appearancedescribed in your recipe, such as “smooth andcreamy.” Use the “Speed Control Guide” tohelp determine proper mixing speeds.

Adding IngredientsThe standard procedure to follow when mixingmost batters, especially cake and cookiebatters, is to add:

1/3 dry ingredients1/2 liquid ingredients1/3 dry ingredients1/2 liquid ingredients1/3 dry ingredients

Use Stir Speed until ingredients have beenblended. Then gradually increase to desiredspeed.Always add ingredients as close to side ofbowl as possible, not directly into movingbeater. The Pouring Shield can be used tosimplify adding ingredients.

1. Place all dry ingredients including yeast intobowl, except last 250 mL to 500 mL flour.

2. Attach bowl and dough hook. Lock TiltHead down or raise Bowl Lift Handle toup position. Turn to Speed 2 and mixabout 15 seconds or until ingredientsare combined.

3. Continuing on Speed 2, gradually add liquidingredients to flour mixture, about 30 secondsto 1 minute. Mix 1 minute longer.

Place room temperature egg whites in clean,dry bowl. Attach bowl and wire whip. To avoidsplashing, gradually turn to designated speedand whip to desired stage. See chart below.

6. Unlock and raise Tilt Head or lower bowlon Bowl Lift and remove dough from hook.

NOTE: These instructions illustrate breadmaking with the Rapid Mix method. Whenusing the conventional method, dissolve yeastin warm water in warmed bowl. Add remainingliquids and dry ingredients – except last250 mL to 500 mL flour. Turn to Speed 2for about 1 minute, or until ingredients arethoroughly mixed. Proceed with steps4 through 6.

Holds its shape:Cream forms soft peaks when wire whipis removed. Can be folded into otheringredients when making desserts and sauces.

Stiff:Cream stands in stiff, sharp peaks when wirewhip is removed. Use for topping on cakes ordesserts, or filling for cream puffs.

NOTE: Watch cream closely during whipping;there are just a few seconds betweenwhipping stages. DO NOT OVERWHIP.

Tips of peaks fall over when wire whip isremoved.

Almost stiff:Sharp peaks form when wire whip isremoved, but whites are actually soft.

Stiff but not dry:Sharp, stiff peaks form when wire whip isremoved. Whites are uniform in color andglisten.

Stiff and dry:Sharp, stiff peaks form when wire whip isremoved. Whites are speckled and dull inappearance.

Before You Call For ServicePlease read the following before callingyour service center.1. The mixer may warm up during use. Underheavy loads with extended mixing timeperiods, you may not be able to comfortablytouch the top of the unit. This is normal.

2. The mixer may emit a pungent odor,especially when new. This is common withelectric motors.

3. If flat beater strikes bowl, stop the mixer.See “Beater to Bowl Clearance.”

If your mixer should malfunction or fail tooperate, please check the following:1. Is your mixer plugged in?2. Is the fuse in the circuit to the mixer inworking order? If you have a circuit breakerbox, be sure the circuit is closed.

3. Are the bowl and pouring shield* properlyin place?

4. Model 5KPM50 is equipped with anoverload device. If the mixer is overloaded,the Overload Reset Button will pop out andthe mixer will shut off (see page 7). Turn theSpeed Control Lever to OFF. Wait a fewminutes, then push in the Overload ResetButton. Turn the Speed Control Lever to thedesired speed and continue mixing.

HOW TO OBTAIN SERVICE:All service should be handled locally by anauthorized KitchenAid Service Center. Contactthe dealer from whom the unit was purchasedto obtain the name of the nearest authorizedKitchenAid service facility.
