Jim Hyde Livestock is located in just south of the Pennsylvania—
West Virginia border, in the small town, Enterprise. The farm has
been passed through three generations of Hydes and over the years,
has grown to over 1500 acres. The Hydes not only birth their own
calves, they purchase cows at varying ages from smaller farms in the
nearby. Jim and his son keep anywhere between 600 to 1000 heads
of cattle on their farm at a time and can recognize each and every
one. They Hydes raise their cattle free of antibiotics and allow them
to graze on their acres of land year-round. During the winter months,
they supplement their diet with hay and grain.
Cattle are processed on site in their own meat packing facility.
Customers can opt to have their cuts wrapped in paper or vacuum
wrapped and are welcome to visit the facility to pick up their order
or have their orders shipped. The Hydes not only birth their own

Food For Thought > Environment > Greenhouse Gas Emissions
United Nations’ Food and Agriculture Organization estimates
the meat industry generates nearly one-fifth of the man-
made greenhouse gas emissions that are accelerating climate
change worldwide, far more than transportation. Reining in
meat consumption once a week can help slow this trend.

MEAT CONSUMPTIONIn 2000, Americans consumed an average 57
pounds more meat than they did annually in the
1950s. Table shows the pounds per capita, bone-
less-trimmed weight of all meats, which includes
beef, pork, veal and lamb, chicken, turkey, fish and
shellfish.

Beef supplies an abundant amount of key nutrients to help children
and tweens grow to be strong and healthy. Nutrients that are found in
beef—protein, zinc, phosphorus and iron—contribute to optimal growth,
cognitive function, red blood cell development and preventing iron defi-
ciency during the adolescent years.
Not only does beef provide an excellent amount of nutrients, but did
you know that there are at least 12 cuts of beef that are leaner than a
skinless chicken thigh and meet the USDA Labeling Guidelines for lean
or extra lean?
A three-ounce serving of lean beef contributes less than 10 percent of
calories to a 2,000-calorie diet yet it supplies more than 10 percent of
the Daily Value for nine essential nutrients. Based on a 2000-calorie diet,
just 3 ounces of lean beef provides you with:
• Protein—Helps build a strong and muscular body
• Zinc—Helps create a healthy immune system & heal wounds
• Phosphorus—Necessary for strong teeth and bones
• Iron—Helps carry oxygen in the blood to all cells and
muscles to prevent fatigue
• B-Complex Vitamins (including Vitamin B12, Niacin, Vitamin B6 and
Rib oflavin)—Help release energy from food.

Individuals make selections about what kind of beef they’d like
to purchase. Based on each order, BEEFriend groups individu-
als together in order to sell the whole cow. Cows will not be
processed until the entire cow is ordered, so it’s to everyone’s
benefit to try new cuts and order in larger quantities.
If you did not join BEEFriend, you will have the option to create
an account at checkout. Creating an account allows you to invite
your friends to purchase better quality beef to fulfill your order
more quickly and check on the status of your order.
Use the Beef Feed to the left to review information about each
particular cut of beef, view recipes and select the amount you’d
like to purchase. Your order will appear to the right where you
can complete your order.

Beef bones are most commonly used to make stock. The flavour
of the stock comes from the cartilage and connective tissue
in the bones. Connective tissue has collagen in it, which gets
converted into gelatin that thickens the liquid. Stock made from
bones needs to be simmered for longer than stock made from
meat. Pressure cooking methods shorten the time necessary to
extract the flavour from the bones.

A standing rib roast is a cut of beef from the rib section, which is
one of the eight primal cuts of beef. The entire rib section com-
prises ribs six through twelve of the animal; a standing rib roast
can comprise anywhere from two to seven ribs. It is given the
name “standing” because it is most often roasted in a standing
position, that is, with the ribs stacked vertically and the vertebral
processes on the bottom. A colloquial and popular term for this
cut is “prime rib”.
