Jim Hyde Livestock is located in just south of the Pennsylvania—

West Virginia border, in the small town, Enterprise. The farm has

been passed through three generations of Hydes and over the years,

has grown to over 1500 acres. The Hydes not only birth their own

calves, they purchase cows at varying ages from smaller farms in the

nearby. Jim and his son keep anywhere between 600 to 1000 heads

of cattle on their farm at a time and can recognize each and every

one. They Hydes raise their cattle free of antibiotics and allow them

to graze on their acres of land year-round. During the winter months,

they supplement their diet with hay and grain.

Cattle are processed on site in their own meat packing facility.

Customers can opt to have their cuts wrapped in paper or vacuum

wrapped and are welcome to visit the facility to pick up their order

or have their orders shipped. The Hydes not only birth their own

calves, they purchase cows at varying ages from smaller farms in the

als together in order to sell the whole cow. Cows will not be

processed until the entire cow is ordered, so it’s to everyone’s

benefit to try new cuts and order in larger quantities.

Beef bones are most commonly used to make stock. The flavour

of the stock comes from the cartilage and connective tissue

in the bones. Connective tissue has collagen in it, which gets

converted into gelatin that thickens the liquid. Stock made from

bones needs to be simmered for longer than stock made from

meat. Pressure cooking methods shorten the time necessary to

extract the flavour from the bones.
