    1.The Difference Between a Bitter and Sweet Almond

    The bitter almond has distinct differences to the sweet almond, besides taste. The bitteralmond contains traces of prussic or hydrocyanic acid in its raw state, which can be lethal toanimals and humans. The toxicity of the poison is destroyed by heat and processing. The sale ofraw bitter almonds is prohibited in the United States. Seven to 10 unprocessed bitter almonds canbe lethal to a human, according to "Encyclopedia Brittanica."

    Bitter almonds are boiled or baked, which drains out most of the hydrocyanic acid. Oncecooked, there is no need to fear any harmful effects from eating these almonds. Usually the oil isextracted from the bitter almond and used to make almond butter, flavored liqueurs or almondextracts. The bitter almond has a stronger almond scent, which is why it is often used to makealmond soaps, lotions or fragrances.

    Bitter and non-bitter almonds are similar in appearance. They both have brown skin and off-white colored insides. Bitter almonds are usually smaller and more pointed than sweet almonds.They also have an astringent and bitter flavor.

    Removing the bitter almond oil from its shell and crushing its leaves produces an oil

    containing prussic acid, also known as cyanide. This oil (almond essence) has been known to killhumans in amounts as small as 7-1/2 ml. Allergies to bitter almond result in cyanide poisoningsymptoms and sometimes death.

    Function*

    Bitter almond contains amygdalin, from which is derived laetrile. Amygdalin releasescyanide when exposed to an enzyme found in the seed and the human digestive system. For thisreason, bitter almond is banned in Europe and the U.S.

    In spite of potential toxicity, bitter almond was used in the U.S. in the 1920s for its believedcancer fighting properties. It was used as early as the 1800s in Russia and France. Production anduse as a cancer fighting medicine continues in Mexico.

    16 oz. vodka*16 oz. dark glass bottle with tight-fitting lid

    Drop the almonds into the bottom of the your dark glass bottle.* 2

    Pour the vodka over the almonds and fill to the top of the bottle. Put the lid on and closetightly.

    Place the vodka and almond mixture in a cool and dark place, like a pantry or garage, andlet the mixture sit for 2 months.

    Shake the mixture every 3 to 5 days for the entire 2 month period. Do not remove the lid.* 5

    #That toxic chemical? It's cyanide. It's not harmless, it's not the flavor we enjoy in almond extract,and you should do whatever you can to avoid it. It is fatal in even relatively small amounts. Theflavoring compound from bitter almonds is benzaldehyde, this is the primary flavoring component inalmond extract, and it's a byproduct of the cyanide production. It *is* available in peach andnectarine pits, but it's only there again as a byproduct of the cyanide. Commercial almond extractshave the cyanide removed or destroyed, so they are perfectly safe. Looking around on the web, itlooks like there are ways to accomplish this at home, but definitely do your homework before yougive it a shot... or just stick to the commercial stuff.# earlfam Sep 10, 2009If you make almond extract from the sweet almonds that you buy in the store (the only kind you canbuy and eat in America) it will taste nothing like the almond extract that you buy in the store. Haveyou ever noticed that almond extract doesn't taste like almonds? That's because almond extract ismade from bitter almonds. The chemical which makes the flavor we enjoy in almond extract is toxicin large quantities which is why we you can't buy those kinds of almonds to eat. In small doses (likea teaspoon in a batch of cookies) it's perfectly harmless. If you want to make almond extract athome try saving your peach or nectarine pits. The nut inside the pit is almost identical to a bitteralmond and has that same toxic chemical that we love so much!

    If you use the seeds from the very center of peaches, nectarines, and apricots you can easily makeyour own almond extract. Don't worry about the cyanide content as your not likely to drink an entire32oz bottle of extract (yuck).

    Some sites say to heat the stones to detoxify them but you really don't want to heat these becausethey loose the essential flavor oils when you toast them. I usually do about a half a cup of chopped"seeds" to 32oz of vodka. the longer you wait the better the flavor. I leave the stone seeds in untilI've used up the extract.all you need do is break open the "stones" and use the meat or seed in thevery center.

    Place the stones sandwiched between a towel and then with a mallet or hammer break the seeds

    open, I use the flat side of a meat cleaver and a very hard sturdy table or floor. I'm often found inthe basement on the concrete floor. It will be messy but worth the amount of effort. coarsely chopup the seeds and add to the vodka. Enjoy!

    There are three different plants, all from the same plant family:

    Sweet almond--the kernel is what we eat as the almond nut.

    Bitter almond--the kernel of this fruit is very bitter and toxic. It is processed to remove cyanide andused to make extract of bitter almond, which gives almond extract its flavor.

    Apricot--the kernel inside the seed of the apricot (also toxic) can be processed like the kernel of thebitter almond. This extract is used as a substitute for extract of bitter almond in almond flavoring.

    So, your almond extract could be from bitter almonds or apricots. Almond extract is not made fromthe almond nut (sweet almond.)

    There may be some individuals who are allergic to more than one kernel in this plant family. Thefamily of stone fruits includes: Peach, nectarine, plum, cherry, apricot, sweet almond and bitteralmond. However, there is probably very little protein present in the highly processed oils andextrac

    Also called ... "laetrile" and "amygdalin". Said to be effective at controlling all forms of cancer.Laetrile is derived primarily from apricot pits and almonds. It has been proposed as an alternative tothe standard treatment for cancer. B17 is purported to contain quantities of "deadly" cyanide,however, back in the 1950's, Dr. Ernst Krebs showed that B17 was not harmful to human beings byfilling a large hypodermic with it and then injecting into his own arm! Dr. Krebs survived with no illeffects. Vitamin B17 was the subject of great controversy over 20 years ago when some of theworld's top scientists claimed that, when consumed, it made it impossible to develop cancer andkilled existing cancer in most cases. In the 1970s, the National Cancer Institute (NCI) testedLaetrile in laboratory animals and did not find significant evidence that it was effective againstanimal cancers.

    DOSAGE: Dr. Krebs is the scientist who discovered B-17, he claims that seven or more apricotseeds per day will make it impossible to develop cancer.

    SOURCES: Apricot seeds have the highest content of B-17 on earth ... they are chewable andbitter. Other foods that contain vitamin B-17 are: bitter almonds, millet, lima beans and linseeds.The source of B17 in linseed is "Linimarin" rather than the "nitriloside" found in apricot kernels,however the effect is suppose to be the same if enough is eaten. It should be noted that "linimarin"B17 exists in the crushed linseed itself, not in the extracted linseed oil. Vitamin B17 is also found inseeds such as the apple, peach, cherry, grapes, and apricot. It is found in some beans and many

    grasses such as wheat grass. The hard wooden pit in the middle of the apricot or peach forexample, is not supposed to be thrown away. In fact, the wooden shell is actually a strong armorprotecting the seed. In the tropics, large quantities of B17 are found in cassava, also known astapioca.

    PROPONENT THEORY: Cancer is a simple deficiency disease of vitamin B17. In the past, motherscrushed the seeds of apricots, apples, cherries, plums, etcetera and mixed them into home madepreserves. The vitamin is said to be harmless to healthy tissue because each molecule of B17contains one unit of cyanide, one unit of benzaldehyde and two of glucose (sugar) tightly lockedtogether. In order for the cyanide to become dangerous the molecule must be freed, a process thatcan only be performed by an enzyme called beta-glucosidase (present throughout the body in verysmall amounts, but in very large amounts [up to100 times as high] at the locations of canceroustumors). Therefore, the cyanide only occurs at the location of the cancer and works in conjunction

    with the deadly poison "benzaldehyde to eradicate the cancer cells.
