The Shenandoah Valley wasknown as the Bread Basket of theConfederacy as its farms kept the

armies of Robert E. Lee and StonewallJackson fed and in fighting condition formuch of the Civil War.

Today, the Valley continues as a majorsource of food for the cities in the Mid-Atlantic region. In fact, ShenandoahCounty and its neighbor to the south,Rockingham County, are the two largestagricultural producing counties inVirginia.

With the strong focus on green prod-ucts today, there is new interest in organ-ic farming, and one of the most uniquebiologically diverse and environmentallyfriendly farming operations is CannonHill Farm in Shenandoah County. Garyand Martha Lantz transitioned from con-ventional agricultural farming methodsto raise organic beef in 2000 and, for thepast 8 years, the entire farm has been cer-tified organic by Global OrganicAlliance, Inc., Bellefontaine, OH.

Certified Organic beef has to be grownand processed according to strict uniformnational organic standards set by USDA’s

National Organic Programand verified by indepen-dent third-party inspectionorganizations.

Located just west of I-81at Mount Jackson, CannonHill Farm was originallyMartha’s home place. TheLantz’s take great pride intheir humanely-raised spe-cialty beef which includesthe Heritage breed, BeltedGalloway, as well as Angusand Hereford. As Garystates, “We work our cattlewith horses, not four-wheelers. All our cattlehave free access to barnsyear round and are encour-aged to come into thebarns to eat.” In fact, the waste products

from the barns are used to generate com-post which is used as fertilizer on thefarm.

“We are on Virginia’s short list of farmsthat has control of its animals from con-ception to consumption and we produceall of the grain and feed required to sus-tain the entire beef operation,” says Gary.

Belted Galloway, a remarkable breedof cattle, may be one of the oldest knownto man. Originating in a desolate andbleak province in Scotland, this is a smallbreed and has not been cross-bred. “TheBelted Galloway cow has developed two

layers of hair, over 5000 hairs per squareinch.” This double coat provides addi-tional insulation against exposure to theelements; therefore, they do not producethe extra fat that other cows do and thatis why their meat is lower in calories, fatcalories, both total fat and saturated fat,and cholesterol. Studies have shown thatthis beef is higher in protein, calcium andniacin. Beltie beef is fine-grained andwell-marbled which insures tendernessand flavor that consumers expect in highquality beef.

Families from Bryce Resort, theShenandoah Valley, the Maryland,Washington, DC and Northern Virginiaareas can come to the farm and selecttheir own beef. The beef will be ready forpickup at Gore’s Processing, a certifiedorganic processing facility located justnorthwest of Mount Jackson, after it isprocessed and vacuum-sealed wrapped.

Families are encouraged to join withfriends and neighbors to split the pur-chase of a beef, thus affording them theavailability of enjoying more CertifiedOrganic Beef throughout the year.

#In recent years the Shenandoah Valleyhas become one of the top wine grow-ing regions in the country.

This has occurred because winemakershave long recognized that the Valley’slow rainfall and deep, rocky soils madethis region an ideal location for the grow-ing of quality grapes.

The oldest winery in theShenandoah Valley isShenandoah Vineyards inEdinburg. It is also the fourtholdest winery in Virginia.

“We combine Old Worldtechniques with moderntechnology to produce avariey of impeccable winesin an inviting setting,” says

Emma Randall, president of ShenandoahVineyards.

Randy Phillips of family-owned CaveRidge Vineyards is one of the newestwineries in the Valley.

Randy says that he is proud of CaveRidge’s operations.
