  • ver the last month, we have been busy here

in the kitchen. If you have not heard, we have a new team member in the kitchen. She is talented, locally seasoned and ready to help us bring your dining experience to new heights. Our new Sous Chef Mary Ebarb has made a great impression during her first month and has an inspiring drive that motivates our team. Along with new team members, we have been establishing new relationships with local and regional Farmers, Fisheries, and Ranchers.

Covey Rise Farms is located near Husser, Louisiana and is part of the Covey Rise Sportsman Retreat. The farm is less than 40 miles from our front door and produces some of the finest locally grown fruits and vegetables. The farm started in 2009 and Beau Chêne Country Club has joined the

ranks of more than 40 of the New Orleans area’s finest restaurants that utilize their produce. They grow multiple varieties of over 30 types of vegetables throughout the year-round growing season and have “Local Produce Clubs” that run in the spring and fall during the heart of the growing season, including both cool and warm weather crops. Here in Louisiana, their summer crops yield the freshest of local produce, so it’s about time we begin to enjoy it!

We are also working diligently to bring you the freshest Gulf Seafood we can through a program with NOLA Seafood Company that also reduces overfishing and needless waste of any catch. Their “Bi-Catch” program will help the health of our Gulf Fisheries by utilizing fish that are not necessarily common. (BCCC No. 4807)Fish like Tile, Sheepshead, and Grouper, are often caught when fishermen are seeking specific species like Swordfish, Snapper, Tuna, Redfish and Amberjack. When these

other fish are brought to the surface and thrown back, they are likely not to survive and incur a 98% mortality rate. With this program, we will help reduce the waste and un-needed loss of these fish. When the fishermen come back to shore, we are notified the morning of, and our fish is then delivered that same day with freshness at its peek as the Fishmongers like to move the small quantities of “Bi-Catch” quickly, working to ours and your advantage! These “Bi-Catch” species are delicious, light, flaky and buttery.

Finally, I believe we have found “Pork Heaven” between our two New Ranchers. Chappapeela Farms is Covey Rise Farms’ Sister Ranch and they maintain the same standards and commitment to delivering a fantastic product. Their free-range Berkshire Pork is some of the finest meat I have tasted. Look forward to their pork belly on the new Cubano at lunch.

Cox Farms’ Pork is from Florence, Alabama, owned and operated by Adam Cox. We source our pork tenderloin from this family farm. Their pork has a dark crimson color and a natural sweetness that reduces the need for seasoning. Their Berkshire and Duroc breeds are exceptional and free-range raised.

We will be spotlighting these products and more in our Weekly Specials, Chef’s Cooking Classes, Luncheons, Family Nights and Thursday Buffets. Our commitment is not only to be responsible, but to use local Farmers, Fisheries and Ranchers, thereby ensuring the finest quality is ending up on your plate. Cheers!

  • Golf Course MaintenanceTed Smith, Director of Agronomy

he month of June proved to be extremely busy for our golf

maintenance team. We were able to complete the aeration of the Oak Course greens and all areas of both golf courses including tees, fairways, collars, approaches and roughs. On the tees and approaches, we used a PTO powered tractor driven aerator to remove thatch and break up compaction by deeply penetrating the ground with large tines on a tight spacing. On the collar areas surrounding the greens, we used smaller aerators that are normally used on greens. After the collars were aerified, we top dressed with sand to create smooth and firm green surrounds. This fine-tuned cultivation will promote better drainage and healthier turf which will in turn, provide a better playing surface. We followed up the aeration with our second pre-emergent herbicide of the season to prevent unsightly summer annual weeds such as crab and goose grass.

On both courses, we continue to provide you with consistently fast and smooth greens by spraying weekly applications of fertilizer and growth regulator. We also incorporate cultural practices such as brushing, double cutting, rolling, topdressing with sand and grooming on a weekly basis. In order to provide you with better playing conditions on the tees, fairways and approaches, we will continue to apply monthly applications of

fertilizer, wetting agent and growth regulator.

Last, but not least, we are in the process of sodding and landscaping our new Pavilion event lawn. This newly irrigated area will include a pristinely maintained lawn that will set the stage for weddings and special events. The landscaping will include plants that provide year-round interest and color. These plantings include beautiful ornamental grasses, roses, vitex trees, gardenias, hibiscus, cast iron and perennial/annual flowers.

As a friendly reminder, please adhere to daily cart rulings, remember to repair ball marks on greens and fill your divots with sand. This will go a long way in helping us maintain course conditions. If you have any questions, please feel free to send an email to [email protected].
