platters to order, ask your guests in advance whether they have any allergies or dietary restrictions.

2 Plan the number of sittings for your guests well in advance.

3 Don’t serve too many canapés or appetizers at cocktail hour if you have a large buffet planned.

4 Make sure you have plenty of plates, so you don’t have to spend the evening in the kitchen washing dishes.

5 Serve coffee, tea and sparkling water to end the evening on a delicious note.

COLD CUTS A light red wine, such as Beaujolais, makes an excellent match with cold cuts and deli meats.

CHEESE Red wine is often recommended, but white wine can be delicious with cheese – especially soft ripened varieties and goat cheese.

POULTRYFeel free to try a light red wine, such as Pinot noir, to vary the flavours, instead of the ever-present white wine.

WINE AND FOOD PAIRINGS FOR GUESTS 1 It’s a good idea to arrive a bit later

than expected, to allow your host extra time to get ready.
