Public & Education Building As Built v1 4 STAR RATING - BEST PRACTICE CAVALLI WINE AND STUD FARM (RESTAURANT AND GALLERY) The Farm ‘Die Fonteine’, No 550 PTN 1, Road R44, Stellenbosch, Western Cape The Cavalli Estate is a living manifestation of the landowner’s passion for horses, wine and cuisine and a great love and respect for nature. The Property broadly consists of an olive grove, vineyard, a guesthouse and stables, where world class Saddler horses are bred and trained. The building consists of the following: Basement Level – this houses a public art gallery, wine tasting facility, private dining room, wine boutique, bathrooms, preparation kitchen, staff facilities and mechanical room. Ground Floor - this houses the Restaurant, outdoor dining areas, function hall, show kitchen and preparation kitchen. Landscaped areas - Landscaped areas to the facility site include an artificial dam, indigenous Cynodon lawn, Fynbos (through Keith Kirsten), a water feature, sunken outdoor dining and recreational venue and the parking area. Parking area - The parking area consists of 1821.8m2 of paving and can provide parking for up to 57 vehicles. PV panels have been installed which generate renewable energy for the building. Lighting zoning which ensures that individual zones are controlled using lighting switches. The building contains 12 energy meters which service the main building, HVAC plant, lighting and small power in the basement and ground floor, and liſts. The meters used for the metering and sub-metering are all the eGuage meters. The meters allow up to 30 years of load profile data to be collected. All water supplied to the building is sourced from a Borehole, and Irrigation water is sourced from the Theewaterskloof Dam. The two kitchens contained within the building uses only 62m3 compared to 107m3 of the Notional building water consumption due to the water efficient dishwashers and kitchen taps used. Mixed mode ventilated spaces, as designed in the Cavalli building, are required to provide ventilation rates greater than the requirements set out in the l/s per person requirements of SANS 10400-0:2011. The Basement area, which includes the gallery, wine tasting room and fine boutique shop is serviced by a dedicated fresh air system, achieving 150% of minimum fresh air requirements as set out in SANS 10400-O:2011. The Cavalli Restaurant has adopted measures that will ensure that waste generation is minimised and that all waste generated by the building is sorted into the various waste streams and recycled appropriately. The building has adopted a Reduce, Reuse and Recycle policy which will in turn reduce the environmental impacts of waste generation. The Cavalli Restaurant has reduced the amount of car parking spaces provided to building users with a percentage of 58% lower than the maximum local planning allowances. This facilitates and encourages the use of alternative modes of transport for staff and visitors travelling to the building.
