From P5The Ladner woodworker uses
almost exclusively reclaimed wood,
the majority of which comes from
neighbours who are cutting down
or pruning trees.
With the homeowner’s consent,
Blair carts sections of maple, birch,
cherry or Japanese plum back to his
home workshop. There, he cuts the
wood into smaller “bowl blanks”
ready to be hand-turned on a lathe.
At this point, the wood is consid-
ered “green” because it is still soft
and moist.
“Green wood is really nice and
easy to turn. It’s a pleasure, it’s not
hard, it just peels right off and you
get a lot of aromas from the wood,”
Blair says. “After it dries out it’s more
brittle and dustier. Not quite so nice
to work with.”
Like many wood turners, Blair
likes to “twice turn” his pieces.
“That means that you turn it
once when it’s green and you leave
it thicker than you want it to be at
the end,” he says.
The size, grain pattern and fun-
gal growth or “spalting” of the blocks
determine what form each of Blair’s
pieces will take. Once he’s “rough
turned” a block to achieve the
desired shape, he removes it from
the lathe and boils or steams it for a
few hours, then seals it up in a paper
bag for several months. This process
forces the wood to dry gradually,
avoiding splits and fractures.
“If it doesn’t crack, then we put it
back on the lathe after it’s dry and
finish it to final shape,” Blair says.
Finally, he rubs a homemade con-
coction of beeswax and mineral oil
into the wood.
“That’s great because it’s food safe
and it smells nice.”

Now retired, he worked with BC
Ferries for 40 years, rising from
the woodworking shop to a mid-
dle management position.
Since his retirement, he’s been
able to focus on his hobby more
intensely. Between dropping his
grandkids off at school in the
morning, and picking them up
in the afternoon, he has plenty of
time to spend in his garage-cum-
workshop.
For Blair, there’s something
therapeutic about watching the
paper-thin coils of wood fly off an
in-progress bowl.
“It just sort of takes me away
from everything,” he says. “Time
flies by.”

Not that he wants time to move
quickly. Blair is actually making
a concerted effort to appreciate
what time he has. The 68-year-
old keeps in his house a large
glass cookie jar half-full of mar-
bles. He’s counted one marble for
every week until he turns 75—the
former average life expectancy
for American men. Each Satur-
day, he removes a marble from
the jar and keeps it in his pocket
for the day.
“It helps me focus and make
sure that I’m counting those Sat-
urdays. I only have so many left
and they’re valuable,” he says.
Woodturning is barely an
income generator for Blair, who
remains modest about his skills.
“I don’t really consider myself
an artist. I’m more of a crafts-
man I think.”
He charges from $25 to $150 a
piece—a bargain considering the
countless hours of labour that go
into each one. Since he doesn’t
frequent craft fairs, customers
find him mostly by word-of-
mouth, or the Internet.
“It’s quite thrilling to have
someone actually want to have
something that you made,” he
says.
Still, he probably gives away
more than he sells.
“Most of our grandchildren’s
teachers wind up with a little
turned thing for Christmas.”
And all the neighbours who’ve
donated their cut-down trees
have been repaid with a Peter
Blair original.

The Christmas holidays are here once more and it’s the season for entertaining.
But what can you serve your guests for a cozy and elegant sit-down dinner?
You can start by checking the pantry and fridge, then make a grocery store list of what you need for that per-fect recipe.
But what if you didn’t know what you had on hand and then had just one hour to put together an entree to please a group of very discerning pal-ates—what would you do?
That culinary challenge was offered up to four local chefs in the South Delta Leader’s third annual chef’s challenge hosted at Iluminaté Restor-nate in Tsawwassen.
Called a “black box” com-petition, the four chefs—Brad Herauf of The Boot & Sombrero, Roland Smith
from Illuminaté Restorante, Michael Hayes from the River House, and Florin Meza of the Beach Grove Golf Club—had no idea what ingredients they would be supplied with and then asked to turn into a meal.
A variety of seasonings and butter were made available to all the competitors..
With the assistance of Bruno Marti, chef and owner of La Belle Auberge in Ladner, the chefs were given the fol-lowing:

Each was then given five minutes to compile a menu, and 55 min-utes to execute their plan and serve their dishes to a judging panel that included Marti, a veteran coach and manager at many Team Canada culi-nary events, Thrifty Foods Tsawwas-sen manager Andy Carter, whose store provided the ingredients, and Keg Restaurant co-founder Kurt Landert.
After drawing lots, the first chef to start was Roland Smith.
He prepared a potato crusted sock-eye salmon with a root vegetable and quinoa salad, served with a fennel and spinach broth.
Starting second was Michael Hayes, a former participant in the Leader’s Master Chef series in September 2010 that placed him in the kitchen of the River House for an afternoon to get some pointers from sous chef Amanda Godin.

His menu included a pan-seared salmon with a spinach and mush-room topping, and a fennel velouté.
T h i rd w a s B e a c h Grove Golf Club sous chef Florin Meza whose menu consisted of a pan-roasted salmon loin and pan-seared salmon belly, a quinoa risotto with butternut squash, a fennel velou-té, tomato marmalade, creamed mushrooms, topped with parsnip crisps.
Starting fourth was Brad Herauf who pre-pared a grilled salmon with a fennel quinoa and a stewed vegetable borscht.
A s taggered star t time of five minutes between each compet-
itor allowed the chefs to present their dishes, anonymously, to the judges with confidence the plates were fresh from the kitchen.
Marti said the object of the competition was to have some fun with cooking.
“We have some chefs, a black box with beau-tiful local ingredients,”
he said, and at the end, “something beautiful to eat. That’s what life is all about.”
Asked what the best strategy is in this type of contest, Marti said, “Just cook like you normally do. Make it tasty, make it beautiful. Respect the product, and you have the same chance as the next guy.”

Brad Herauf cooked up grilled salmon with a fennel quinoa and stewed vegetable borscht.
Fellow judge Landert, a recent Tsaw-wassen resident who owns a number of Keg locations, said he hoped the chefs would focus on the quality and plate presentation.
“And we’re going to taste some great food,” he said. “Asked how much importance should be placed on pre-sentation, Landert said, “I think it’s very important because the eyes are the first things that get introduced to the meal.”
As the chefs battled against the clock and each other, some needed to slightly alter their menus as one or two components of their dishes did
not work out to expectations.At the midway point each of the
chefs had varying reports on their dishes.
“I’m on target, I believe,” Smith said confidently.
“I’m about 20 minutes behind,” added Hayes. “No, I think it’s going to go OK.”
“It’s going pretty well,” said Meza. “I have a lot of things to do, so I’m rush-ing a little bit. But it will be okay.”
“I deviated from the plan a wee bit, but it will be OK,” Herauf said. “Keep it simple. That’s my middle name.”
In the end the judges deliberated over which dish topped three cate-gories. They were asked to award 10 points for presentation, 10 for taste and five for originality.
Coming out at the top of the rank-ings was Beach Grove’s Meza.
“One thing we found with yours, you worked very hard,” Marti told Meza once the judging was complet-ed. “You used all these products, so as a judge I can judge many things.”
“I know you guys all worked really hard,” Landert said. “It’s a tough job.

Families yearning for local yuletide events won’t have to travel far this holiday season as the annual Christmas in Ladner kicks off on Dec. 2.
“There’s something magic and special about our commu-nity and I think it’s all just about celebrating that and enriching that,” says parade organizer Kate Armstrong.
Carolers will be serenading people at the corner of Delta Street and 48th Avenue beginning at 7 p.m. before the annual tree lighting ceremony at 7:25 p.m.
Festivities will continue throughout the evening as the Children’s Christmas Parade takes to the streets at 7:30 p.m. Kids are invited to decorate their bikes, wagons or strollers and gather in front of Pets-N-Us at 5076
48th Ave. at 7:15 p.m. The parade route starts at 48th Avenue before heading to Delta Street and con-cluding at Chisholm Street.
Armstrong expects at least 200 kids to take part in the parade.
Anyone who follows the parade to Chisholm will be able to view the Carol Ships on Government Wharf beginning at 7:45 p.m. The holiday-themed ships will be cov-ered in Christmas lights and will remain docked until the evening of Dec. 3.
People looking for nutcrack-ers, tree ornaments and other seasonal trinkets can drop in to Ladner United Church Dec. 2 and 3. The church—located at 4960 48th Ave.—is hosting a Christmas craft fair from 5 to 9 p.m. on Friday and 10 a.m. to 4 p.m. on Saturday.
Christmas in Ladner will also feature Breakfast with Santa at the Ladner Community Centre on Dec. 3. The morning meal starts at 8 a.m. and runs until 11 a.m.

Bank Lifeboat Station–Delta Society will be serving pan-cakes to patrons, while kids can entertain themselves with face painting and photos with Santa and Mrs. Claus.

Along with candy canes, stockings and egg nog, Christmas trees are one of the most iconic features of the holiday season. But what makes for a quintessential Christmas tree?
Brian Martin, a group commissioner for Scouts Canada in Boundary Bay, has some tips for people thinking of stopping by the Scouts’ tree lot just north of the South Delta Recreation Centre, which opens the first weekend of December.
“Generally it would be something that is symmetrical, that is not too wide so it will fit into your space, and the needles and such are dense enough that you can’t see through it easily,” Martin says. “And also something that is new enough and healthy enough that it’s going to make it through the holidays with you.”
He says most people stick to quality trees like Douglas Firs and Grand Firs, the latter of which have proven to be the most popular in the two previous years Martin has volun-teered at the Scouts’ Christmas tree lot.
He says this is due to the fact that Grand Firs are generally a denser tree with a bet-ter shape.
Martin points out that even though a lot of people are on the hunt for denser trees, “once a tree has a lot of decorations on it, it tends to flesh out anyway.”
Martin says that height most often plays a factor depending on how the tree fits in a house. Most trees for sale are between five and eight feet tall, but he says that “you do want your kids to place the decorations up high.”
If it’s a house full of teens and adults who can reach up high, then a tall tree would be appropriate. If a family with small children buys a tall tree, it may be up to mom or dad to either cover the top of the tree with ornaments or else be prepared to spend Christmas lifting up their kids to do the decorating.
Martin says although it’s usually the men of the household calling for big trees, it’s the women who lead the charge and make sure the family goes home with something prac-
tical that will fit.“Sometimes the biggest (challenge) is
just agreeing on what’s an appropriate tree,” he says.

Getting crafty‘Tis the season to be creative
It’s that inspirational time of year when people begin to re-discover their inner artisan. From greeting cards to cen-tre pieces to tree ornaments, there’s no shortage of creative projects to keep craft-lovers busy.
Shannan O’Brien and her sister Jennifer own Sublime Art Supplies and Gallery at Tsaw-wassen Town Centre Mall. They say products to make homemade Christmas cards fly off the shelves this time of year.
“A lot of people are doing the cards themselves, so we’ve got all the papers and the glues and that sort of thing. We’ve got some blank cards that peo-ple can decorate as well and it comes with envelopes,” says

make your own cards when you could simply buy a 12-pack box from the stationary store?
“I think (customers) just like the personal touch. They put in the time and make a little art piece for their friends and fam-ily and really show them that they care,” Shannan said.
Sublime hosts Saturday craft parties throughout the year and plans to introduce Christmas crafts in December.
Those looking for the perfect gift for that artsy friend or rela-tive might find just what they’re looking for at Sublime.
“We’ve got comic strip boards that sell really well and anima-tion kits that go really well at Christmas,” Shannon said.
They also sell pre-stuffed stockings for $20 filled with art supplies.
In Ladner, the Upstart Crow Arts & Crafts has a studio at the back of the store where classes, workshops and private parties are held.

Fun and games for allNew titles in traditional and digital gaming worlds
Whether they’re on TV screens or sitting on the dinner table, games are proven win-ners when it comes to Christmas gifts for kids. This year sees the release of a number of new board games and video games that hold mass appeal for both casual and hardcore players.
Dave Strutt, owner of Dave’s Pop Culture in Ladner, says most people are coming in this time of year to buy gifts aimed at a wide range of people.
“What I’m seeing is a real trend to games that parents and kids can play together,” Strutt says.
He recommends that parents choose games for ages eight and up so that both kids and adults enjoy themselves. Games such as King of Tokyo, Sitting Ducks, Botswana and Hey, That’s My Fish are some of the most pop-ular games for families, according to Strutt.
“This is community-building stuff,” Strutt says. “To be able to get together and play board games and get out there is such an experience.”
Young adults also have some brand new
board game options this holiday season.“There are two different versions of The
Walking Dead games — one that’s based on the TV show and another that’s based on the comic book,” Strutt says. He said teens would also enjoy the all-new Munchkin Axe Cop title, based on a series of comics that follow the comedic adventures of a police officer who wields an axe when fighting crime.
For young children, Strutt says the new board game version of Angry Birds has been a top seller during the holiday season.
“It’s hilarious. Like, here we are playing a game that’s based on a video game,” Strutt says. Angry Birds: Knock on Wood even includes a physical catapult with which kids can launch the flightless fowls.
If the kids in the house are adamant about playing video games, there are a number of high-profile titles that were released just before Christmas.
Two of the most anticipated video games this year for Xbox 360 and PlayStation 3 are a pair of first-person-shooter threequels.
Call of Duty: Modern Warfare 3 and Battle-field 3 give players the chance to assume the identities of soldiers, engage in story mode missions and play against others online.
Meanwhile, as Nintendo prepares to launch a new console this spring, the character of Link returns for the Wii’s swan song in The Legend of Zelda: Skyward Sword. The new game has been met with wide acclaim.

Oftentimes Christmas dec-orations mean plastic snow-men, red and green lights, and tinsel-covered trees.
There is, however, a wide selection of popular items available in Tsawwassen for anyone hoping to give their home a more contemporary holiday feel.
New this season are Lampe Berger fragrance lamps. The flameless devices burn oil and emit scents capable of filling an entire home.
“They call it indoor air care,” said Maison Rouge Interiors co-owner Stanley Gan, referring to the fact the fragrance lamps were once used as air purifiers in hos-pitals.
Scents such as heavenly spruce, orange cinnamon
and cranberry have made the new products big sellers since the first wave of Christ-mas shoppers started drop-ping by in early November.
“This has been very popu-lar for us,” Stanley says. “Not only for (people’s) homes, but for gifts as well.”
After selecting a festive fra-grance for the Lampe Berger, people can choose from a wide selection of decorative bottles that best fit the holi-day decor in their home.
He said holiday-themed scented candles are also top sellers, with varieties includ-ing holly berry and candy cane.

Treating the hostGift advice for holiday revellers
Local businesses have begun stocking up on a wide selection of wines, confections and baked goods that make for dependable crowd-pleasers at any festive gathering.
Kim Briscoe, manager of Tsawwassen’s Mud Bay Wines, says that with the cooler win-ter weather, red wines outsell whites during the holiday sea-son, but sparkling wine is still the best bet to bring to a turkey dinner.
She says one of the new wines flying off the shelves at Mud Bay is Passetoutgrain—or PTG—from the Joie winery.
“It’s their only red and it’s kind of the wine you’d set out for everything. It just matches so many different foods,” she says.
People who wish to bring rich
treats to an upcoming Christ-mas office party won’t have much difficulty finding the per-fect confection at The Chocolate Bear Shoppe in Tsawwassen.
Owner Rudy Grzelak says the assorted chocolate packages are the most reliable bet when it comes to impressing people at a holiday get-together.
The Christmas variety pack-ages include a selection of nuts, caramels and creams.
As for baked goods, Sandy Speidel of Richlea Bakery in Ladner, says people can’t go wrong with bringing shortbread cookies to a party.
But if you’re seeking out more traditional fare, she recom-mends fruitcake, mincemeat tarts and Christmas Stollen—a European sweetbread.
