Marinate chicken thighs – at least 1 hour and up to 24 hours in advance. Make pimento jalapeño cheese spread by placing all ingredients, except salt and pepper, in the bowl of an electric mixer and blend at medium speed until well combined. Season with salt and pepper. Heat oil in fryer or pan to 350°F. Combine flour, 1 tablespoon (15 mL) salt and 2 teaspoons (10 mL) black pepper in a large bowl. Remove chicken pieces and press into with flour mixture until well-coated, shake off excess flour and fry until deep golden brown and cooked through. Remove from oil and rest on paper towel or wire rack. Pour hot sauce* into a medium bowl, add fried chicken thighs one at a time and coat with sauce. Remove, shake off excess sauce and place on wire rack. To assemble, place bottom bun on serving plate and cover with mayo. Top with shredded lettuce and 1½–2 tablespoons (22-30 mL) pimento jalapeño cheese spread. Add chicken thigh and top with 3 pickle slices. Add top bun and serve. *Note: Add ketchup to make it milder, or melted butter for a thinner consistency.
