Simplicity – Simple straight-thru design and simple loading and

unloading

Versatility – Capable of handling many different pan varieties and

does not require special pans

Flexibility – Broad range of products such as bread, buns, sweet goods,

panned products

Performance – Excellent baking profile (zone) control

The LANHAM PROOF AND BAKE design is the basis for modern hi-tech

Baker Thermal Solutions conveyor ovens.

This durable oven is designed to uniformly bake bread, rolls and other

panned products. The unique oven circuit reverses the pans midway thru

travel, ensuring that every part of the pan is presented to exactly the same

baking conditions, and resulting in a very even bake. The conveyor oven is

offered in a variety of styles, including “Figure 8” and the traditional down

spiral design.

Features and Benefits:

Installation and Commissioning

The “Figure 8” design within a single oval allows a much smaller footprint and

highly adaptable layout options

Flexible track layout using 60” (1.5m), 84” (2.1m), or 120” (3.0m) curve radius

Self-supporting insulated enclosure with two service access doors, two

inspection windows and a rust resistant steel finish on the interior surface

Process Factory-mutual listed and available for worldwide application

Powerful heating system for higher throughput with maximum product quality

Direct spark ignition with flame sensors and automatic relight

Direct gas-fired burners mounted under track and arrayed for even pan coverage

Control zones organized to provide optimal matching of heat delivery to load

Proprietary PID zone temperature control with proactive response and cutback,

allowing quick system response to varying production conditions (loading,

unloading, steady-state, intermittent)

Highly effective recirculating air system (ColoraiderTM) for superior convective

heat transfer, precise coloring control and excellent lateral consistency

Recipe settings allow optimal configuration for each product

Automatic pan spacing for reliable operation

Utilization Heavy-duty 1200-N-Less chain design with 9-point automatic lubrication

system

Patented forced-air chain cooling system aides in eliminating lubrication

evaporation and oxidation, resulting in a longer chain life

Heavy duty dual chain, variable speed electric drive system engages main chain

“truck” from both sides, leaving bearings free to rotate , and allowing a

smoother more uniform pull

Reversed chain direction spreads wear more evenly, allowing better lubricant

penetration than take-up and tensioning

Pneumatic chain tensioning system at low level for ease of maintenance

Wear resistant steel track and mild steel center guide pins

Sanitation Open access design to facilitate inspection, maintenance and sanitation

Powered grid cleaning brush

Flat interior floor for better hygiene and easier cleaning

Standard Options:

Steam tunnel

Stainless steel control panel

Pedestal-mounted primary or secondary

operator interface

Grid-mounted magnets

Grid-mounted offset or rocker guides

Advanced Oven Process Control (OPC) with

adaptive humidity control and exhaust flow

management

Utilities:

Electrical:

Worldwide application

Pneumatic:

Pneumatic take-up turn: 60 PSI

(4.1 bar)
