Thursday 9th Wayne Cuddy The Art of Home Butchery 7pm – 9.30pm 60 Niall Murphy Join our Master Butcher, Wayne Cuddy, in a demonstration of the art of butchery. Using some cuts demonstrated on the night, our Chef will create beautiful dishes that will show you how to get the very best out of some of the lesser known cuts. Friday 10th D|F Tutors Beer and BBQ 7pm – 9.30pm 60 Explore the world of beers matched with the perfect BBQ food, a marriage made in heaven. At this class you will learn the secrets of sizzling summer BBQs and get an insight into the world of the highly successful Irish micro brewers. Saturday 11th Niall Murphy The Art of Breadmaking 10am – 2pm 90 Learn the techniques to produce simple, tasty, fresh bread at home. In this practical, hands on class we will introduce you to a range of traditional Irish breads as well as international breads. Mon–Fri 13th –17th D|F Tutors Transition Year Cookery Course 10am – 2pm 250 This course is designed to develop students culinary skills, whilst educating them on the benefits of eating healthy and nutritious foods. The course focuses on knife skills, safety in the kitchen, food safety and the cuisines of the world. Recipe booklets, ingredients and lunch are all included. Wednesday 15th Niall Murphy, Pure Brazen 7pm – 9.30pm 60 Daragh Whelan Join Daragh Whelan, co founder of Pure Brazen - the fresh stock company, and myself for a demonstration class based on fabulous dishes created with the amazing range of Pure Brazen 100% natural stocks. We will be creating wonderful soups, stews and sauces. Thursday 16th Sally Milne, Low GI for Summer 7pm – 9.30pm 60 Heather Leeson Following on from our inaugural low GI demonstration in February, nutritionists Sally Milne and Heather Leeson return with this popular class. Sally and Heather will show how to prepare quick delicious low GI meals and snacks for Summer to improve your health and your waistline and also share their tips for healthy eating. Friday 17th Mathieu Chocolate Heaven 7pm – 9.30pm 60 Barriquault Join our Master Chocolatier, Mathieu Barriquault, in our continuing series of chocolate classes. Mathieu will demonstrate an amazing array of fabulous chocolate desserts that you can recreate at home to bring the wow factor to any dinner party. Saturday 18th + Fiona Murphy Start Your Own Food Business 9.30am – 3.30pm 295 25th May Niall Murphy Do you have the ambition to start your own food business but are unsure where to start? Here is the opportunity to learn the fundamentals that you will need. In this demonstration class our guest tutor Kate Lawrence will show you just what this is all about by creating fabulous, delicious and healthy snacks. Friday 7th Robert Jacob Macaroon Heaven 7pm – 9.30pm 75 Join us for this hands on class where you will learn how to create the most amazing and colourful macaroons. These will be the talk of any dinner party or will make a stunning gift. Or, if you're like me, just make them for yourself! Saturday 8th Jordan Bourke Guilt Free Gourmet 10am – 12.30pm 60 We are delighted to welcome Jordan Bourke, formally of the Michelin star Petersham Nurseries restaurant in London and co author of The Guilt Free Gourmet. Forget abstinence and denial, healthy eating needn't be about bland dishes and small portions. Discover how to cook with healthy alternatives to refined sugar, wheat and dairy and take home recipes that are saintly and scrumptious.
