Welcome to the Tops Cooking School! Since becomingthe Regional Cooking School Manager on March 4, my staffand I have begun having quarterly meetings to review classeswe have had in the past and to plan ahead for classes in thefuture. We have been brainstorming ideas for classes that you,our customers, have stated you would like to see, in additionto offering more Future Chef classes for this holiday season.Our Future Chef Camps in July were at full capacity withwaiting lists for both weeks. Due to this, we will be discussingthe addition of a 3rd camp week for July 2020 in orderto accommodate more of our Future Chefs who would liketo attend. We will also continue to offer an August Camp Week.

July, August and September presented itself with so many open doors allowing us to explore newand exciting opportunities for our schools. There have been remarkable accomplishments buildingnew and positive relationships within our community. We have received invitations to do livedemonstrations for many events in WNY that are sponsored by local companies which also includesbeing commissioned by a local global business to organize a 100 person team building event.

In September, we will be hosting members of our Honor Flight Veteran’s at our Amherst location.They will come into the school to visit with old friends, make new friends and cook some oldfashioned recipes! I am so very honored and proud to be involved with this project – we cannotdo enough for our Veteran’s. I am sure it will be a day full of laughter, heartfelt moments, manysmiles and making new memories!

With just one simple phone call from Independent Health, we are now being invited into our localbusinesses to do demonstrations featuring our Healthy Lifestyle classes. We are making peopleaware of healthier food options while showcasing many of Tops Markets regular and organic products.

I hope you enjoy our newest addition of “Look Who’s Cookin’ In OurKitchen…”! In this segment, we plan on featuring local chefs or businessowners that are offering either a demonstration or hands-on class inour Amherst location! This quarter, we are featuring Chef Darian Bryan,Executive Chef of The Plating Society and Business Owner, AudreyZybala, of Sweet Pea Bakery! I am very excited to be able to presentsuch talented local chefs and/or business owners as we move forwardin the future!

Working together with the 180th Erie County Fair Staff on the CulinaryStage has been a fun and fulfilling part of my job these last 3 yearssince it began! Seeing old friends or making new ones while doinglive cooking in front of an audience, is an enjoyable part of doingthe demonstrations! This year Chef TinaMarie Kumiega and CulinaryInstructor Susan Vernon shared the Culinary Stage with me duringthe Tops Weekend and they did a fantastic job as always!

As we approach the holiday season, I hope we see you at one of the many classes we are offeringin this calendar. We hope that you enjoy the large variety we have to offer. May you have a happyand healthy holiday season – See you in the New Year!!

Sweet Pea BakeryAs the owner of Sweet Pea Bakery, Audrey Zybala, has the opportunity to utilizeher love of baking that was cultivated by her mom and grandmother as a younggirl. Audrey left a career as a high school English teacher to fulfill a lifelongdream of baking and making people happy through her food. She is completelyself-taught and believes everyone deserves to indulge in delicious food. Thatis why at her bakery she offers gluten free, vegan, dairy free, egg free, nut freesoy free, corn free…pretty much everything, but flavor free desserts! Sinceits opening four years ago, Sweet Pea has had two separate kitchens in orderto prevent cross-contamination and offer completely safe foods to allcustomers. Audrey is excited to share her passion for teaching and bakingwith all of you!

The Plating SocietyDarian Bryan, Executive Chef and owner of The Plating Society, is also theExecutive Chef at Fisher-Price headquarters in East Aurora. Darian was bornand raised in Clarendon, Jamaica. He found his love for cooking at a young age while helping his mother with the local cook shop in town. Darian was ableto come here seven years ago and has accomplished much in that time.He earned his Associate degree at ECC Culinary and started Caribbean Cuisine Week that happens every semester at the Statler Dining Room , ECC CityCampus. Upon graduation, he worked at Hutch’s Restaurant. Darian earnedhis Sous Chef certification through the American Culinary Federation (ACF).He volunteers his Culinary teaching skills to ECC during Caribbean week eachsemester, his church’s healthy foods initiative, and has even had the chanceto cook for the Prime Minister of Jamaica at the Simply Red Heart Association Festival. At age 23, he was awarded the Western New York Changemakers 30 Under 30 Award and recently received the esteemed Iron Chef award for WNY.Darian is the personal Chef for a few Buffalo Bills players and has appearedon the Culinary Stage at the Erie County Fair as well as the Tops Taste Of Buffalo Cooking Stage this past July.

Cancellation PolicyPlease notify the school you reserved your class at if you are unableto attend any class. A 3-business day notice is recommended so we can better accommodate all our customers. If you cannot attend a class, you may send a substitute in your place except for “Your Health Classes” held in Amherst, NY. The substitute must provide us with approved health insurance coverage prior to the class or they will be charged in full for the class.
