If you've got so much as amissed flight connection, it won'ttake much to put your eagerly-anticipated vacation in jeopardy. Weather delays, terrorism scaresand general overcrowding in theskies have led to plenty offrightening and frustrating travelnews. If you've ever been stuck onthe airport tarmac for hours or hada flight cancelled on the way to abrief but desperately neededvacation, you've probably facedthe irritating possibility of losinghundreds or thousands of dollarsof your hard-earned vacationsavings.

So you'll just click on thetravel insurance button next toyour online flight reservation andyou'll be fine, right? In themajority of cases, you'd be wrong.

Most people perceive that thepurchase of travel insurance willprotect everything from lostluggage to unforeseen medicalbills - that's rarely true anymore.So when shopping for travelinsurance it's time to start

understanding what you're reallybuying:

Start at least a month inadvance: Most people makemajor trip reservations fairly far inadvance to get the best fares, andyou need to do the same for travelinsurance. Book early and you'llget the best coverage and rates.Also, make sure you're not havingany major medical or dentalprocedures before you go -insurers are picky about pre-existing health conditions, so readthe fine print.

There's no such thing asfull coverage - unless you'rewilling to pay for it: What's fullcoverage? That's a good question,and it sometimes depends ondozens of factors unique to yourtrip. Your carrier might not offerprotection on your chosen airlineor cruise line. You'll find thatterrorism insurance is rare andcomplicated. And you have toexamine medical insuranceoptions closely to understandexactly what is covered. The raresoup-to-nuts coverage - coveringtrip cancellations, missedconnections, lost luggage, flightaccident, emergency medical andmedical evacuation coverage - istypically priced in the hundreds ofdollars and may only cover only

up to 75 percent of the total cost ofyour trip. But in a pinch, it may beworth it.

Start online: If you reallywant an eye-opening experiencein buying travel coverage, go tosome of the leading Web sites thatdeal in single or multiple-insurerofferings. InsureMyTrip. com is amarket leader and a good first stopin analyzing coverage - you startby punching in the necessaryinformation on your trip (dates,age of travelers, medical coverageneeded, etc.) and it spits backmore than a dozen possibilities atall price levels. Clicking on any ofthe choices will give you adetailed view of what thosepolicies will and won't cover.

Check with your creditcard company: It's time yourcredit card company earned itsmoney. Call customer service andfind out what kind of travelprotection they offerautomatically or by fee and grillthem on the coverage.

Call your HR departmentor health insurer: Your healthbenefits may not cross state orcountry lines. Before you take anytrip, check to see if youremployer's or your own personalhealth coverage will be effectivethere. An emergency room visit

can cost at least several hundreddollars and a short hospital staycan cost thousands more,particularly in another country.You might be interested in travelhealth insurance if you find yourown domestic insurer won't payclaims in certain parts of thecountry where you're going.

Ask about hurricanecoverage: Even if you don't livein a hurricane area, severehurricanes can disrupt flights allacross the nation, which may leadto a delay of your trip here orabroad. Ask whether your travelinsurance has hurricane coverageand what it entails.

If you're stuck, never beafraid to ask for a break: Ifyou're sidetracked for reasonsbeyond your control, (weather-related or otherwise), always askif your airline, hotel or othercomponents of your vacationmight be willing to give you acredit or discount on your bill. It'srare, but some destinations mightsee it as a chance to buildgoodwill. Always ask nicely -don't ask as if they owe you,because they don't.

“The World’s BEST Crab Cakes”

2 Large Eggs1/2 cup Mayonnaise

6 Crushed Crackers1 tsp Worcestershire Sauce

1/4 tsp Pepper1/2 tsp Old Bay Seasoning1 tbsp Parsley, chopped

4 ounces Sweet Butter for frying2 Scallions1 Shallot

1/4 Red Bell Pepper1 lb Fresh Lump Crabmeat

Serves: 4

Heat a grill to medium heat. Toss 2 tbsp of the olive oil with the red and green pepper,eggplant and zucchini. Grill, turning as needed for 10 to 15 minutes, or until well marked andtender. Cool, peel skin off peppers and chop all vegetables coarsely.

Heat the remaining oil in a large pot over medium heat. Add the onion and cook untilsoftened, about 5 minutes. Stir in the garlic, oregano and pepper. Cook for 2 minutes.

Add the tomato juice and bring to a boil. Add the pasta and chopped vegetables. Simmer for20 minutes, stirring often or until pasta is tender. Stir in basil and balsamic vinegar. Garnish withParmesan cheese (if using).

Grilled Ratatouille Soup

Serves 63 tbsp Olive Oil 1 each Red and Green Pepper, quartered 1/2 lb each Eggplant and Zucchini, sliced into 1-inch thick rounds

1 Small Onion, chopped 2 cloves Garlic, minced

2 tbsp Fresh Oregano, chopped 1/2 tsp Pepper

1 can (48 oz.) Tomato Juice 1/2 cup Small Uncooked Whole Wheat Pasta

2 tbsp Fresh Basil, chopped 1 1/2 tsp Balsamic Vinegar

Shredded Parmesan cheese (if using)

Combine first seven ingredients in a large bowl. Chop scallions, shallot and red bellpepper. Sauté for two minutes and add to bowl. Gently fold in crab. Form patties, and fry inbutter over medium heat until golden brown. Serve with lemon wedges.

Red Raspberry Cream Puffs

Preheat oven to 400 degrees. Bring butter, sugar, salt and 1 cup of water to a boil in a saucepan. Stir in flour, andcook over medium-high heat, stirring constantly for three minutes. Cool for 10 minutes.

Add eggs one at a time to the butter mixture, beating after each egg until smooth. Drop dough into 10 mounds,three inches apart on baking sheet, or spoon dough into a pastry bag fitted with a large star tip and pipe into rosetteson the baking sheet lined with wax paper.

Whip cream and sugar until stiff peaks form, and fold in liqueur. Arrange one bag of red raspberries in a singlelayer on paper towels to defrost. In a saucepan, heat one package of red raspberries and sugar until sugar is dissolvedand berries are soft. Place cornstarch in a small bowl. Remove a few spoonfuls of raspberry mixture, and add tocornstarch and mix together until smooth. Add cornstarch mix back into saucepan, cook and stir on medium-low heatuntil thickened. Once cool, stir in reserved red raspberries.

Spoon in 3-4 tablespoons of red raspberries on cream puff shell. Pipe whipped cream filling on top of raspberriesusing pastry bag. Top with remaining portion of cream puff shell, and sprinkle with powdered sugar.

Serves 10Puff Mixture:1/2 cup (1 stick) Unsalted Butter, cut into half-inch

pieces1 tsp Sugar

Parents: Make Time for Healthy Choices(NUI) - Between soccerpractice, piano lessons andhomework, more and moreparents are discovering that itcan be hard to balance a healthylife with a busy one.

Health care professionals,however, are discovering thatnutrition- and activity-basedhabits, when developed early,can make a positive long-termimpact.

Eileen Berry, a Floridamother and self-taughtnutritionist, has taken this toheart. "Healthy foods areavailable and, as parents, weneed to make this happen forour kids," she said. "We don'thave the luxury of 'shouldas','wouldas' and 'couldas,'especially when our childrenare involved.

So, what can you do to getyour children's habits on trackand moving in a healthydirection?

• Take a look. Check out theU.S. Department ofAgriculture's MyPyramidfor kids online(www.mypyramid.gov) tosee what your childrenneed in their diets each day.Did you know, forexample, that grains andvegetables should make upthe majority of your child'sdiet?

• Don't forget thevegetables. A studypublished in the Journal ofthe American College ofNutrition found that whilepreschool-aged children

consumed about 80 percentof their recommended fruitservings a day, only 25percent had therecommended amount ofvegetables. So, it isimportant for parents tocreatively re-introducevegetables and changethings up by choosingvegetables in a range ofcolors.

(NUI) - As chronic diseasessuch as hypertension, heartdisease and stroke continue toplague the health of Americanseverywhere, the resultinghealth costs are impacting theeconomy in a big way to thetune of more than $1 trillioneach year.

A recent study, released byindependent economic groupThe Milken Institute, statedthat the most common chronicmedical conditions areresponsible for costing theAmerican economy $1.3trillion annually. The studygoes on to say that if costscontinue to increase asexpected, the economic impactmay reach as high as $6 trillionper year by the middle of thecentury.

While these numbers arestaggeringly negative, there isgood news: some of thesecosts may, in fact, beavoidable.

"Chronic diseases,especially heart failure, willaffect an increasing number ofAmericans in the foreseeablefuture," said John Russell, vice

president and general managerof patient management atBoston Scientific's CardiacRhythm Management Group."But heart failure, inparticular, can often besuccessfully managed."

Nearly 22 million peopleworldwide, includingapproximately 5.5 millionAmericans, currently sufferfrom heart failure, and heartdisease is the leading cause ofhospitalization for those aged65 or older. Emergency roomfees and other critical hospitalcosts accrued as a result ofheart failure hospitalizationare two of the major reasonsfor increasing economicconcerns.

Luckily, an increasingnumber of heart failurepatients are receiving animplanted defibrillator deviceto help treat their problem. Forthese patients, symptoms canbe tracked daily via wirelesstechnology. Boston Scientific'sLATITUDE PatientManagement system, forexample, was the first productapproved by the Food and

Drug Administration for suchwireless home monitoring ofmedical devices.

The LATITUDE systemcan detect clinical eventsbetween scheduled follow-upvisits and then send the clinicalevent data directly tophysicians. This enablesphysicians to intervene earlierin a patient's care, which canhelp to lower overall economic

costs by preventing potentialemergency hospitalization.

"Catching rapidlydeteriorating health symptomsin chronic disease before itbecomes an emergencysituation can not only helpsave lives, but also health caredollars," Russell said.

(NUI) - Most people who haveeaten a spicy meal haveexperienced heartburn but formany, the problem may be muchmore frequent than theoccasional bout of indigestion.Frequent heartburn can also be asymptom of a more seriousproblem called Gastro-esophageal Reflux Disease orGERD. Acid reflux is caused bythe regurgitation or reflux ofacidic stomach contents into theesophagus, which connects themouth and stomach. Thesymptoms of GERD includeburning chest pain, regurgitationof bitter or sour liquid, difficultyswallowing and excessiveclearing of the throat.

When GERD is not treated,serious complications can occur.If you are constantly reachingfor the antacids at the end of theday, the following tips may help:

1. Don't lie down after eating.When you lie down, it's

easier for stomach acid to backup into the esophagus,particularly when you go to bedwith a full stomach. Make sureto wait at least three to fourhours after eating before goingto bed, and try raising the headof your bed.2. Cut out problem foods.

Chocolate, peppermint,tomato sauce and fatty and spicyfoods have all been proven toexacerbate the symptoms ofheartburn. Making a point to eatsmaller meals will also help curbpotential heartburn problems.3. Avoid smoking and excessiveamounts of alcohol.

Using tobacco and ingestingalcohol reduce the pressure onthe muscle between theesophagus and the stomach,permitting acid reflux to occur.

In a small saucepan, pour in water and gelatin, let stand forone minute, then cook 3 minutes over low heat. Set aside tocool for about 1 minute. In a large bowl, mix sugar, brownsugar, cream cheese, cooled gelatin, grapefruit juice and sourcream. Gently fold in whipped cream until thick and creamy.Place one wafer in each baking cup and put in baking tin.Pour mixture into prepared tin, and chill until firm for about4 hours. Garnish with grapefruit section and mint.

1 box Vanilla Wafers Mini muffin baking cups and a baking tinMint

Seasoned Crusted Salmon Rub

4 5-6 oz Salmon portions or 1 Whole Fish 3 tbsp Dried Rosemary, minced 3 tbsp Dehydrated Roasted Garlic, minced 1 tbsp Coarse Ground Black Pepper 2 tsp Coarse Sea Salt 2 tsp Freeze-dried or Dehydrated Minced Green Onion or Chives

Mix seasoning ingredients together and store in an airtight container until you're ready to use.

To prepare, generously top salmon with the seasoning mixture then bake in a 350°F oven for 6-10 minutes per inch of thickness.

Tomato Moroccan StewServes: 6

1/2 tsp Pepper 2 cups Tomato Juice

1/2 cup Orange Juice1/2 cup Beef Broth 2 cups Butternut Squash 1 can Chickpeas, drained and rinsed 1 tsp Orange Peel, finely grated (optional)

Whole-wheat couscous (optional)

Heat half of the oil in a Dutch oven over medium-high heat. Toss the beef cubes with theflour and cook, in batches and turning as necessary until browned all over. Reserve.

Add the remaining oil to the pan and reduce the heat to medium. Add the onion andcarrots; cook until softened, about 5 to 7 minutes. Stir in the garlic, cinnamon, coriander, cuminand pepper, cook until fragrant, about 30 seconds. Stir in the tomato juice, orange juice and beefbroth; scrape up any cooked bits and bring to a boil. Stir in the reserved beef and reduce theheat to medium low. Simmer covered for 30 minutes.

Stir in the squash and chickpeas and simmer uncovered, stirring occasionally for 15 to 20minutes or until meat and squash are tender and sauce is thickened. Stir in orange peel (if using)and serve with whole-wheat couscous.
