Crème Brûlée Serves 4

Ingredients:200ml double cream3 egg yolks

40g caster sugarFew drops of vanilla essence30g golden brown sugar

Method:1. Preheat oven to 150C/fan 130C/gas mark 2.

2. Place the cream in a saucepan and bring to boiling point, then reduce the heat slightly.

3. Beat the egg yolks and sugar in a separate bowl until pale.

4. Gradually whisk the egg mix in the warm cream. Whisk continuously until thickened. Add in the vanilla essence.

5. Strain the mixture through a fine sieve into a large jug, then pour the mixture into the ramekins.

6. Place the ramekins in a large roasting tray. Pour some warm water into the tray. Ensure the water level is 1cm deep outside of the ramekins.

7. Place the tray in the oven and bake for 40-45 minutes, until the brûlée mix is just about set.

8. Remove the ramekins from the water and set aside to cool, then chill.

9. To serve, sprinkle the sugar evenly over the top of each brûlée, and caramelise using a blow torch.

10. Serve immediately.
