Takes a day to pull it all together, tardiness notwithstanding. On the subject of things that just keep getting bigger, a BIG congratulations to the organisers of the North Star Trail Ride, once again a fabulous weekend for all participants and a great showcase of our community. Henry didn't stop smiling for a week. Many, many thanks to the efforts of council and their work on our local roads in the last few weeks, from a personal perspective at least, it's nice not have to practice my rally driving capabilities (as experienced as they are ) ,on every to and fro' the school bus stop. And last but not least, I have nominated for a second term on council and would like to thank all of those people who have supported, nagged, upheld, whinged at, roused on and generally helped me enjoy my first term in local government. A great shire to live and work in! � Congratulations to all the Croppa Creek School pupils that participated at the recent Goondiwindi Eisteddfod. There were bush poets, comedic poets and individual musical performances. Well done students, despite the late evening finish - you all did so well. A big congratulations must go to Wendy Forsyth for bringing the students through so well with their poetry. The character and delivery by these little dynamos was wonderful. Great Work!

Boggabilla Anglican Parish will be celebrating its 100th anniversary this year on the 16th September. RECIPE OF THE MONTH

Moroccan sweet potato, carrot and chickpea soup Ingredients (serves 4) 1/4 teaspoon chilli powder 600g orange sweet potato, peeled, diced 2 tablespoons olive oil 6 cups reduced-salt chicken stock 1 large brown onion, roughly chopped 300g can chickpeas, drained, rinsed 2 garlic cloves, crushed 1/2 small lemon, juiced 1 teaspoon ground coriander Turkish bread croutons to serve 2 teaspoons ground cumin Heat oil in a large saucepan over medium-high heat. Add onion and garlic. Cook, stirring often, for 3 minutes. Stir in coriander, cumin and chilli powder. Cook, stirring, for 1 minute. Add sweet potato and carrot. Cook, stirring often, for 5 minutes. Add stock. Cover. Bring to the boil. Reduce heat to medium-low and simmer, stirring occasionally, for 20 minutes. Add chickpeas to soup and simmer, covered, for 10 minutes or until chickpeas are tender. Blend soup, in batches, until smooth. Return to saucepan over medium-low heat. Season with salt and pepper. Stir in 1 tablespoon lemon juice. Heat, stirring, until hot (do not boil). Ladle into bowls. Top with croutons. Sprinkle with pepper.
