Idiot’s Kitchen Recipe – Cucumber & Avocado Salad Recipe from www.idiotskitchen.com -‐ Adapted from Smitten Kitchen
Ingredients: 1 long hot house or English Cucumber, quartered & chopped 1-‐2 green onions, finely chopped 2 small Hass avocados, peeled & chopped (do this last so they don’t turn brown!) 2 Tablespoons fresh cilantro or parsley, chopped 2 Tablespoons mayonnaise 1 lime, juiced 1 teaspoon Sriracha Sauce (more or less to taste) Salt & Pepper If you’re using a hothouse or English cucumber you can leave the seeds in and the peel on. If you’re using a regular cucumber, remove the skin and the seeds. Cut the cucumber into quarters and then chop into bite sized pieces. Place the cucumber in a bowl with 1-‐2 finely chopped green onions. In a small bowl, combine 2 Tablespoons mayonnaise with the juice of 1 lime. Add 1 teaspoon Sriracha Sauce and a pinch or salt & pepper. Stir to combine. If you are NOT serving this right away, toss the cucumbers with the dressing and refrigerate until ready to serve. Just before serving, peel and chop 2 small Hass avocados. Add them to the bowl with 2 Tablespoons of chopped cilantro or parsley and gently toss to combine. Makes 4 servings and is best when eaten right away or the avocados turn brown.
