Each tour concludes with an authentic Asian meal. Offering something for food lovers of all ages, these tours promise to introduce you to a world of delicious new flavours.

Substation No.41 RUM BAR is the Brekky Creek’s recently renovated RUM BAR. Featuring over 260 varieties of Rums sourced from all over the world the bar proudly shelves some of the most rare and exclusive products in a beautifully renovated atmosphere.

The Substation No.41 Bar is the only Hotel in Australia that can proudly announce that they now serve “Rum Off the Wood”. It has been tradition in the Brekky Creek that Beer of the Wood is a must do experience when visiting the Hotel and now patrons can continue the experience and sample the Bundaberg Rum encased in a glorious French Oak Barrel. GOMA Restaurant inside the Gallery of Modern Art, in the heart of Brisbane’s cultural centre precinct, offers elegant indoor and outdoor dining.

Executive Chef Josue (Josh) Lopez and his team use the Gallery’s dynamic program as a source of inspiration for the contemporary menu which puts a local twist on the world’s latest food and wine innovations.The seasonally changing line up reflects a focus on fresh Qld produce with carefully selected wines matched by texture, weight and flavour. Well known in Brisbane after winning the 2010 Qld Young Chef of the Year, Lopez has led some of the city’s top kitchens including Denmark’s renowned Noma.

How did you first learn to cook and where do you now find your food inspiration and learn new things? As our palates develop we often aspire to expand our culinary repertoire, as we employ collaborative efforts in the kitchen with friends and family. Not forgetting to mention whatever influence your favourite cooking celebrity has, or the endless designer-esque recipe books or magazines that you may indulge in.

Despite all the various resources out there, I believe that there is no better learning than doing! This is why I have craved for so long, to ‘go back to school’, well cooking school that is. The urban cooking school is becoming more commonplace and this ‘adventure’ seems to be within reach.

Brisbane is fast becoming a hub for some fabulous new cooking schools in and around the city. Some are stand-alone and others are in conjunction with restaurants. Dining Out sat down with one from either camp, The Golden Pig Food & Wine School in Newstead and Spring Food + Wine in Felix St, Brisbane City.

Katrina and Mark Ryan opened The Golden Pig Food & Wine School in October 2012. What a success! Perhaps it has something to do with their culinary experience, expertise and their love of (in their own words) “the laid back style of the city of Brisvegas”.

The School is set in a large inner city, light filled and funky warehouse space. It holds a variety of cooking classes, wine and beer workshops and food and wine events including corporate team building events. The kitchen and warehouse space can accommodate up to 150 people.

So, to head inner-city now, to where restaurant meets cooking school. However in this case it offers so much more, including a wine store and retail. Introducing Spring Food + Wine, a fabulous venue in Fleix Street in the heart of the Financial District in Brisbane.

The cooking school is a very special space, light filled, contemporary and clearly demonstrates the school’s passion for the art of food and cooking.

Using state of the art appliances and quality ingredients, they offer a broad range of informative classes, as well as catering for corporate or team building events. Just glance at their website to see the range and depth of different classes that they offer. From Fondue Fun, to Chocolate Masterclass, from Dude Food (love the sound of this one) to Nose to Tail Butchery Workshops. There is such a variety and sure to be something for everyone. I’m excited to sign up, I am sure that you are too!

Pasture Fed as it ages develops a wonderful flavour profile as the bone imparts a marrow richness to the meat as it is hung over time.

To match its rich flavour which could be described as smoky or woody but on the palate is soft and supple due to the sinew breakdown which occurs during its ageing span. Dry Age beef does not benefit from cooking past medium as it loses moisture as it is hung and loves to be seared, sealed and slow cooked to a perfect medium rare.

For the beef aficionado is well worth the stretch as it has a flavour like no other. It is a pride of our group to have our very own dry ageing cabinet on display in Brisbane and we trust the process to no one else so we can place on the plate a trusted product for all to enjoy!

Moo Moo prides itself at being at the forefront of the steak restaurants in Australia and has secured a new breed to its stable Speckled Park the beef is a smaller Black Angus primarily from Canada now bred in Australia.

The selected cuts will be the flat iron and tenderloin. or even experienced a pop up Restaurant. For those not in the know, a pop up restaurant is a

when a temporary restaurant is set up in a temporary space.

It can be for a few hours or even for a few months...usually taking

advantage of unique and different spaces or venues.

Popular in Europe for years, Australians now can’t get enough of the concept. What was once cool and underground is now embracing a newfound mainstream culture. It is also quickly becoming part of many new Restaurant’s launch strategy or simply a strategy to further promote already exiting (and often well-known) restaurants and restaurateurs, providing a platform to promote their product in a different setting to a potentially different audience.

Not to be left behind in the fashionable dining stakes, Brisbane has been host to a variety of different pop-up Restaurants over the past few years.

To highlight two fantastic events held in Brisbane, Dining Out had a closer look at Dîner en Blanc and Alfred & Constance’s – Pork, Cork & Fork.

Dîner en Blanc was started in 1988 by Frenchman Francois Pasquier, when he wanted to organise a catch-up picnic under the stars with friends. With too many takers to dine in his own garden, he suggested that they convene at the Bois de Boulogne in Paris.

Brisbane was the first city in Australia to host the event, and 1000 people clad in white, toting their own tables, chairs, cutlery and picnic basket, convened on the Cultural Forecourt of South Bank in September 2012.

The planning for the 2013 Brisbane Dîner en Blanc is already well underway with over 6,000 people on the waiting list. If you are keen to participate, register your interest at: www.brisbane.dinerenblanc.info

Wood-cooked food, home-made sweets, beer, cider, jam jar tiki cocktails and music; sounds like the perfect street party! Well it was ‘Pork, Cork & Fork’, as part of the Teneriffe Festival in July last year. It proved to be such a success that they followed up with ‘Pork, Cork & Fork 2’ in October last year.

Both of these fabulous, delicious and colourful events were the precursor to the opening of the Alfred & Constance venue in Fortitude Valley. What a success! The timber character homes that comprise the venue, coupled with the ‘clean food’ ethos laid down by Patron Chef Jocelyn Hancock and Head Chef David Lindsey, echo beautifully their introduction via the pop-up restaurant.

Clearly established now on the casual lunch and dinner dining circuit for Brisbane, we also have to make mention to the Vanguard Beer Garden and the fabulous White Lightning Tiki Bar, definitely worth checking out.
