Fasting and Your Mood We asked our readers how fasting affected their mood and personality, here are some of their replies...

Word on the street

Please send to [email protected]

Christopher Malvar The first 5 days of Ramadan are the hardest. This is when the “adjustment period” happens. A lot of people tend to overeat during this period. Therefore the most difficult part of Ramadan for me is probably controlling my eating habits in the first five days. I would also like to add that many people mark the advent of Ramadan by sighting the crescent moon, but for me, even without a visual confirmation from nature, I know it is Ramadan when I see multiple car accidents minutes before the iftar adhan!

Reader’s Feedback

Dear Editor-in-Chief,Thank you for your wonderful magazine- Destination Jeddah!! As a South African here in the Magic Kingdom, I find the contents therein to be contextual, contemporary and relevant. However, your recent write up about dining in Jeddah made reference to a certain restaurant. So I took a few guests to this restaurant. We were definitely disappointed. They were out of stock of most commodities on their menu, and the staff didn’t seem to have the know how to subsititute what they didn’t have.....frustrating to say the least.Thought I would bring this to your attention.Sincerely, Dr. Adlai Naidoo

Maria I’m less alert due to hunger & fatigue...but I get over it as the month goes on.

Alia I find that I’m calmer over Ramadan - I like to watch the cooking shows on TV. I also try to read Quran during this month.

NaiefMy stress level increases, while my concentration level is drastically reduced. My efficiency is also significantly reduced.

Ghassan Fasting puts me in a good mood!

Nihal During Ramadan, I like to watch T V or movies in addition to reading Quran daily to help the time fly while I’m fasting.

Hi. Thank U to Destination Jeddah magazine. It is very useful to me. Personally I didn’t know that Jeddah had all these nice places. You guys made my life easier! Keep up the good work.Patricia De Souza

I’m a newcomer to Jeddah & I eagerly read your Feb. & March issues. I think your magazine is a wonderful mix of upbeat articles, useful information, & local knowledge - thanks for making the transition to Jeddah a pleasurable one.Yasmine K.

I absolutely loved the last issue it was amazing!! Thank you for the great work Moe. M

DJ - Thanx for making my evenings interesting. If I’m having a hard time deciding on what to do or where to go, all I have to do is take a look through DJ! :)Yara Dabbagh

Hi Destination Jeddah!I just had to share a hilarious story with you guys...I called the Jeddah Telephone Directory #905 to get the phone number of a restaurant. Do you know what they told me? “I don’t have the number - you should look in Destination Jeddah”Keep up the great job! Even the officials are relying on you. Thx - Salma

Dear Salma.Wow - you just made our day! The DJ team is thrilled to hear that people around Jeddah are relying on them to supply up-to-date information about the issues that matter to them. We’ll continue to do our best, you can be sure of that.DJ Team

Dear Dr. Naidoo,I’m glad that you enjoy Destination Jeddah, but I’m sorry to hear about your disappointing visit to a restaurant which we had reviewed recently. It’s unfortunate when standards vary from visit to visit and we certainly sympathize with your experience, but we hope you’ll continue to use Destination Jeddah as your guide. There are many wonderful restaurants still to try!Sincerely, Editor-in-ChiefDestination Jeddah

POLL OF THE MONTH

Next Month’s Question:Q: What is your favourite part of Eid ?

Q: What’s the most difficult part of fasting for you?

Thumbs down to... Inadequate rest stops on Makkah / Madinah roadsAs Ramadan approaches, Jeddah residents eagerly anticipate trips to the nearby cities of Makkah and Madinah. However, at last count, there are only 4 rest-stops to accommodate the millions of travelers passing by! For such a developed country, it’s a shame that these rest-stops fail to live up to our high standards in cleanliness, food service, and creature comforts. Although the government has made sure that these roads are well-patrolled to avoid speeding, the facilities leave a lot to be desired. Since Makkah and Madinah are an important part of Saudi Arabia’s religious tourism, it would benefit all the residents of KSA as well as the millions of international visitors if these rest-stops were made more traveler-friendly. Well, at least we have the train system to look forward to – it should be completed by 2012/2013, inshallah.

Thumbs up to... Orphans’ Friends A big thumbs up goes to Orphans’ Friends this month. Orphans’ Friends is

a group founded by four young men: Ahmad Alyawar, Ghassan Gamal, Darweesh Salamah, and Abdullah AlJubairi. This group began with the aim of providing orphans with emotional support as well as encouraging them to be more productive members of society while increasing the community’s acceptance of orphans. Orphans’ Friends has about 800 members, 300 of whom are active. They have organized over 200 activities, the most recent of which was a campaign to tutor orphans for their final exams. Anyone is welcome to join this group, called Orphans’ Friends, on Facebook.

Ramadan Nights in Al Balad...As the festive season of Ramadan approaches, a visit to Al Balad is a must! In this ‘old town neighborhood’, people from all corners of Jeddah gather every night to enjoy the unique treats on offer during this month. Whether you like simple fresh juices or are adventurous enough to sample Al Balad’s famous stir-fried liver...you must visit this area. For those with more basic tastes - baleela (boiled beans) can be found on almost every corner. Not a fan of food? No problem! Al Balad has plenty of other activities that can’t be missed. Shopping, traditional Hijazi games and people-watching can keep you entertained for hours. The spirit of Ramadan is on display every evening when carloads of Jeddahwis enthusiastically hand out free bottles of water, packages of meat, and boxes of dates to those in need. Laughter, blessings, and greetings of goodwill float on the breeze coming off the lagoon.

A Monthto Remember

First time spending Ramadan in Jeddah? You’re in for a treat - the ambiance of the city is simultaneously festive, frantic and lots of fun! Although Ramadan is known as the month of fasting, you may be surprised to experience the many visible signs of charitable giving, the faster pace of life during the last 10 days of Ramadan, and the general atmosphere of socializing and celebration.

Fasting This pillar of Islam is probably the most significant aspect of Ramadan for many in Jeddah. Muslims observe a strict fast from sunrise to sunset, in which they do not drink water, eat food, or smoke. The breaking of the fast occurs at Maghrib (sunset) prayer and most of these meals are shared with family and friends. Special drinks and foods are prepared and served during this time – don’t miss sampling some of the food from

the many food carts which spring up around town, especially in Balad, Hera’a Street, and in front of most supermarkets – they only appear during Ramadan and offer unique snacks/sweets which are Ramadan specialties.

Since it is customary to break one’s fast with water and dates, don’t be surprised to find brave local youth at most traffic lights

seem a bit frantic as Ramadan draws to a close, they’re also in a festive mood, so make sure you do throw yourself into the Ramadan mood by mingling with the crowds – have fun!

The CityJeddah’s offices will observe slightly altered working hours, generally beginning later and ending earlier to accommodate those who are fasting. If you’re not fasting, please be considerate and avoid sipping from your water bottle or eating in public. Traffic increases immediately before and after Maghrib prayers, as well as in the evenings during the Tarahweeh prayers, which are additional prayers, recited only during the month of Ramadan. During the last 10 days of the month, you may hear all-night prayers at many mosques around town.

Many foreigners enjoy Ramadan in Jeddah as a time when real unity and festivity is in the air. Residents are sincere in their celebrations of this holy month and people are mellower and generally nicer to each other as part of their observation. So whether you are fasting or not, take this time to learn about your city and its people as Ramadan really does bring out the best in Jeddah and Jeddahwis. Ramadan Kareem (Congratulations on Ramadan)!

handing out free bottles of water and packets of dates – ensuring that you will not have to extend your fast for a minute longer than necessary! Restaurants will often provide customers with a plate of dates and other traditional foods in addition to their regular menus, as well as customize their selection of dishes on offer during Ramadan to cater to heightened appetites and satisfy a variety of palates. Restaurants quickly get crowded during Maghrib prayer, so make a reservation and enjoy the communal celebrations which often last until 3am.

ShoppingMalls and department stores often have special Ramadan-themed decorations and campaigns, so keep your eyes open for the special sights & deals. Most shops (other than grocery stores which remain open 24-hours/day) will be closed in the mornings, open after noon until sunset, then re-open after Isha prayer until 2 AM! Ensure that all of your groceries are purchased well before Maghrib as gridlock definitely sets in around that time as hungry residents clamor to reach their homes for the breaking of the fast. The last 10 days of Ramadan are truly a time to experience as people pack the stores in order to complete their pre-Eid gift purchasing, clothes shopping, & food preparations. We advise you to complete your essential purchases before this period…but do stroll the malls and experience the irreplaceable atmosphere that resembles the night before Christmas…but lasts for 10 days! 5,000 Volunteers Honored

A resident of the one of the flood-hit areas, Wa’el Abu Taleb said, “We didn’t have to wait long until aid came from everybody and everywhere, especially from individual volunteers from among Jeddah residents who demonstrated their fraternity.” The volunteers managed to pack and distribute over 200,000 food baskets in one month and distributed them to the flood victims.

On July 2, Prince Khaled Al-Faisal, Governor of Makkah region, honored the 5,000 volunteers who helped victims of the Jeddah floods. The ceremony was held at Jed-dah’s Prince Abdullah Al-Faisal football stadium in the indoor auditorium. It in-cluded a short documentary, a music video, and a slideshow featuring pictures of the victims and aid efforts. The show displayed the efforts of the volunteers as well as the quick response of both public and private sectors, while the music video contained lyr-ics especially written for Jeddah after the floods.

To further commemorate the volunteers’ efforts, a park in a new district of Jeddah will be named in their honor: Jeddah Youth. “Eve-rybody who participated in the aid campaign will have his/her name written in a visible place in this park,” said the Prince. “With people like you, one should not be afraid of the future of this country. You make me proud,” he told the volunteers.

Hidden treats reveal themselves beneath the lid of the jewelry box, silver urns overflow with biscuits, and plump fruits nestle snugly in fluted paper casings… too delicious to resist.

Wadi Sadiyah is an interesting and easily accessible area to the south of Jeddah that is well worth a visit for either a quick day trip or an adventurous overnight camping trip. It is one of the few wadis (dry riverbed) nearby with an abundance of natural vegetation and wildlife. The highlight of your visit to Wadi Sadiyah is sure to be the small, secluded tributary valley overlooked by a ruined watchtower where ancient rock carvings from a bygone culture are still visible.

Once you arrive at Wadi Sadiyah and orient yourself, the climb up to the watchtower is easy and offers incredible views overlooking the larger main Wadi spreading out below you. Petroglyphs (rock art) in Saudi Arabia are mostly depicted on hills, rock shelters, caves, and isolated stone boulders near an-cient Bedouin camping sites and water sourc-es. Bedouin herders to engrave their tribal mark or Wusum on the rocks where they sat to watch their grazing animals in order to mark their territory, usually near or over older inscrip-tions and petroglyphs of people and animals that date back thousands of years. Whatever their origins, the carvings at Wadi Sadiyah are fascinating and should be seen before time and elements erase them from our view.

To reach Wadi Sadiyah, bear right towards Taif at the Al Shamaisi Checkpoint Exit on the non-Muslim bypass and then another right at the exit towards Al Laith. About 92 km from the Al Laith exit, at 20°35.015N - 39°49.689E you will see a sign on your left going northeast towards Sadiyah Vil-lage. Follow the sign, pass the village and continue on the paved road to the northeast, passing some village farms on your left. At 20°47.103N - 39°57.785E you will reach the beginning of Wadi Sadiyah and the beginning of the dirt track. Follow the track to your right towards the east with the Wadi vegetation on your right. At 20°47.825N - 39°59.209E you will find a trail crossing the Wadi going southeast. Afterwards the Wadi vegetation will be on your left. Continue following this track to the east until you see a small watch-tower ahead of you on your right overlook-ing the Wadi. The entrance to the small side Wadi will be right after it at 20°48.254N - 40°03.086E. The rock carvings are located to your left on a smooth stone face about 6 meters high. There are also some carvings on a low rock face to your right after the big tree in the middle of the small Wadi.

Nazeeh and Wartan ParkRami Abu Ghazaleh, CEO of Al-Baik, has introduced yet another project for Al-Baik’s Corporate Social Responsibility. Al-Baik has worked with the Friends of Jeddah Parks Organization and the Jeddah municipality to plan the “100 parks in 100 weeks” initiative. “This park is the outcome of efforts between the public and private sectors, and I encourage and urge more cooperation from the private sector in all such community-related activities,” said Abu Ghazaleh.

The first park was opened and named “Nazeeh and Wartan Park,” after the two characters of Al-Baik’s ongoing campaign to promote and keep Jeddah clean. First launched in 2006, these characters remain among Jeddahwi’s best-known faces with their witty play on words as part of the anti-pollution campaign.

The “Nazeeh and Wartan” park is a prototype for the parks yet to be built - it’s spacious, well-planned, and a delight for kids of all ages. The parks are being built according to international standards. This initiative is aimed at providing public facilities as a source of entertainment and relaxation as well developing the residential areas of Jeddah by transforming below par neighborhoods into better living districts. The Mayor of Jeddah, Adel Fakieh, urges the public to maintain the parks and not misuse them since they are facilities made for their own use. Inshallah, green parks like this one will spring up all over Jeddah one day!Location: Khalediya Dist.

Haneen Abo Talib is one of those people who exudes creativity. With her degree in social work, she combined her passion for arts and crafts with her pro-active approach to entertaining and educating the next generation of young ladies – voila – Grow to Glow was born! Back in 2006, Haneen began with the seed of an idea to start a children’s activity center with an edge. She collected and compiled her growing list of ideas and now her vision has become a lovely reality.

Her dream was to provide a place which offered useful and entertaining activities to girls between the ages of 5-15. In addition, Haneen wanted to encourage mother/daughter quality time with activities that are in line with the interests of young girls on the cusp of becoming young women.

Grow to Glow’s grand opening was launched last month. With its unique décor and one-of-a-kind atmosphere, this new concept is quickly going to become one of Jeddah’s favorite destinations. Grow to Glow has several rooms shaped as mushrooms, each with its own theme: Science Lab, Arts & Crafts, Fashion, Spa, Kitchen, and Snoozelen (this section

Grow to Glow

innovatively enhances the development of the 5 senses through relaxing music and dim lighting.) A party room is also available for birthdays and special occasions.

What makes Grow to Glow truly unique is that your children will learn different skills while having fun, acquiring knowledge, and also leave with a souvenir which they created.

Each room activity costs approximately SR 35 – each activity lasts approximately half an hour.

Hala Rifaai and Effat Nasser are two Saudi women selling unique tokens from the comfort of their own home. What Ezar has to offer is clothes and accessories from many different parts of the world. One example would be earrings made from real silver, emeralds, and zircon for SR 700. Also to coincide with Ramadan, they have breadbaskets designed with Bedouin-styled cloth for only SR 60.

If you’re looking for home accessories with that local touch, Regality is definitely the place for you. Manal Al Hassan and Hanan Al Znytan, the two young designers behind this boutique, come up with all their own designs, and they cover the whole nine yards: Islamic, Arabic, and modern styles to name a few. The first item is a round, Bedouin-style tray (SR 900), shown on the page across, for serving things like nuts and small appetizers. Another item is a set of Turkish coffee cups made out of real silver for approximately SR 1200. On a similar note, the last item is a set of wooden Turkish coffee cups with a matching tray - all for only SR 680.

Cracking the vault of US purchasesBuying online from the US has never been easy. Saudi Arabia’s lack of a real postal service and the limited compatibility of local credit cards both don’t help when you try to make an online purchase. But even if that goes through you might still get the dreaded US billing address requirement! Got a US Aramex address? Even that’s starting to become a problem as more and more companies are refusing to ship to package forwarders.Think there’s no way out? Think again.

With USunlocked.com you have a way to get all those fascinating items and latest gadgets delivered straight to you.

How it works: Simple.Register with the Web Site and you can apply for your own prepaid US debit card or use their personal shopping service, but the great thing about it is that USunlocked also gives you a US billing address. So ordering that those hard to get items couldn’t be easier and are now within your reach in Saudi Arabia.

Once you make your purchase your order is shipped to the address at USunlocked and then its repackaged to reduce costs and reshipped to your local address. If a store wont let you access it’s website because you don’t have the right IP address, USunlocked even lets you download a program to help with that. What more could anyone want!

For Wetter or Worse

For some people, the thought of a lifetime commitment is enough to give them butterflies in their stomachs…but luckily the beautiful Butterflyfish of the Red Sea doesn’t share our qualms. This coral reef dwelling resident usually pairs off for the long haul. They are known to spend years, if not their entire lifetimes, with a single partner, and can be found time and again cruising the reef coupled with their better-half or in groups of their next of fin.

Butterflyfish are a wonder to see in person. Diving and snorkeling in the Red Sea will put you mask to face with this charming and brilliantly painted creature. These petite and delicately shaped reef dwellers are truly the butterflies of the sea - their astonishing variety of vibrant colors and body patterns will dazzle you! The scientific name of this family of fish is Chaetodontidae, with 114 species and 10 genera that flourish in all tropical seas. 13 of these species can be found in the Red Sea, half of which are en-demic. They are quite small, approximately the size and thickness of an adult human hand. They have flat bodies and protruding snouts which they use to peck their meals. These can range from coelenterate polyps, worms, and other small invertebrates which they find on the reef. Most butterflyfish are visible just below the surface and down to a depth of 30 meters. These beautiful and tame species are frequently seen hanging motionless near the reef, allowing divers to approach closely, thereby making them some of the most photographed fish in the Red Sea.

Here’s a brief catalogue of some of the most frequently spotted members of the Red Sea Butterflyfish family:

SHORT RANGEYou know that you are in the Red Sea when you meet the iconic Masked Butterflyfish and the Red Sea Bannerfish. These notice-able and colorful reef loafers are easily recognized by divers and snorkelers, as they occur in pairs or small groups on the reef and maintain a small home range. They are often encountered in exactly the same part of the reef on different dives, many times under the same Acropora coral, from which they will emerge to feed on small invertebrates and zooplankton nearby.

The Exquisite Butterflyfish is one of the most beautiful in the family and is com-mon on the reefs around Jeddah. Adults usually patrol the home range in pairs and feed primarily on coral polyps and anemone tentacles.

The Orange-faced Butterflyfish is usually found in pairs and maintains a home range while feeding exclusively on Acropora coral polyps.

The Crown Butterflyfish also remains within a limited radius on the reef. It is small in size with distinct striped markings, an or-ange stripe through its eye, and a reddish

DESTINATION JEDDAH54

tail. Juveniles sometimes have a false eye on their dorsal fin for camouflage protection, however this dark spot will eventually fade away as they mature.

The Whiteface Butterflyfish is common in the southern parts of the Red Sea. They are found in pairs and maintain a limited home range, but can be seen on shipwrecks and around the reefs of Jeddah.

LONG RANGE AND OTHER TYPES OF BUTTERFLYFISHMore mobile species of Butterflyfish can be found cruising the reef in search of food, making them known as reef grazers. Threadfin Butterflyfish and Raccoon Butter-flyfish are colorful and common species that can be seen throughout the Red Sea nibbling on coral polyps as they move along the reef.

The largest and perhaps least common But-terflyfish is the Lined Butterflyfish. This variant may reach sizes of up to 30cm (as opposed to the average Butterflyfish length of 12-20cm).

Butterflyfish are typically diurnal. At night, butterfly fish settle into dark crevices, and their brilliant colors and markings fade to blend with the reef background. They erect their dorsal spines for additional protection

while sleeping.

The sheer beauty of many endemic species, in particular the butterflyfish, makes them massively attractive in the aquarium trade. The illegal use of fish baskets and gillnets are a direct threat to these ornamental species.Do everything in your power to help pro-mote conservation and reduce your impact on the marine environment. Enjoy spotting endemic species while out on the reef where they belong, not in private aquariums that promote poor environmental practices.

So, what are you waiting for? Grab your mask and snorkel and head for the nearest Jeddah beach to experience these wonders of creation for yourself!

If you’re trying to describe what Ramadan tastes like using only 3 words… they would be ‘ful and tameez’. Second only to dates, which are traditionally used to break the fast, we can guarantee that this combo will decorate most if not every table for Iftaar. Ful is a thick, paste-like dish made of fava beans, usually eaten with tameez, (Afghan bread.) Popular in many Arabic cultures, ful and tameez is one of those must-have items many people can’t go without, especially during Ramadan. But in your search for this deadly duo, you might encounter puzzlingly different names and types for each of these foods, so here’s a quick guide for the ful newbie – but don’t worry, you can’t really go wrong with any version of ‘ful and tameez’!

Ful (beans):Ful A’di (Normal ful): the original ful, may be referred to as just ful or ful medamis.Ful Saj: ful named after the type of pan it’s cooked in.Ful Glabah: ful made with tomatoes.Ful Harraq: spicy ful.Ful Bil Mafroumah: ful with meat.Ful Bil Bedh: ful with eggs.Ful Mubakhar/Mudakhan: smoked ful.Ful Bil Khalta: ful with vegetables.Tameez (bread):Tameez Biskot: thin and crunchy tameez.Tameez Bil Haleeb: tameez made with milk.Tameez Bil Jubnah: tameez made with cheese.Tameez Bil Samn: tameez made with ghee.

Mathaq Zaman has something on offer for everyone with its wide range of Hijazi specialities that includes 12 different dishes of ful (beans), mitabag, a thin, layered pastry with many types of filling from eggs to bananas, and ma’soob, a traditional Hijazi dish featuring bananas. Our personal favorites are ful mudakhan and ful Mathaq Zaman, the speciality of the house prepared from a secret receipe.

More local favorites are ta’mia ( falafel), areeka, a breakfast dish made of dates, and, of course, tameez. Mathaq Zaman offers a creative array of tameez: in addition to the usual variations, they have tameez with thyme, sesame, and many other innovative toppings. Mathaq Zaman lives up to its name by providing the great taste of our age-old favorites while adding a nice blend of ‘new’ here and there. If you’re looking for the traditional taste of the Hijaz, look no further than Mathaq Zaman.

This Ramadan, we bring to you one of our favorite local restaurants, Mathaq Zaman (The Taste of Old Times), which serves traditional local dishes that remain close to our hearts. While a modest place, this restaurant provides homemade goodness with the choice between dining at the restaurant or take away. So the delicious decision is up to you…eat your favorite dish hot on the spot or in the comfort of your own home.

Tawook Basha…think ‘shawarma on steroids’…seriously. Ok, the chicken comes in thick chunks (shish tawook/kebab-style) rather than vertically sliced shawarma strips, but their delicious Super Size 14” sandwich is enough to feed a family of three! Packed with the usual accompaniments of French fries, pickles, and garlic sauce – coleslaw adds a surprisingly fresh crunch, while the secret red sauce adds just enough piquancy to intrigue your palate. Go for the ‘Super Size Spicy Red Tawook’ (SR 16) – you won’t regret it. Sandwiches are all available in Small Size or Super Size, but we recom-mend spending the additional SR 3-4 to Super Size your meal.

Tucked away on Hamad Al Jasser Street in Rawadah, between Kayal Street & Sari Street, Tawook Basha is in the Farm Store Shopping Plaza and well worth tracking down. Although the menu is limited to only 4 varieties of chicken tawook sand-wiches, a hot dog/hamburger, and a shrimp sandwich, their limited range ensures that they excel in the sandwiches on offer. The bright neon-green color scheme adds a modern touch which puts you in an upbeat mood as you enter. There’s no room for dining in – this is strictly a take-out place only, so next time you want to impress your friends by bringing over a ‘deal of a meal’ – check out Tawook Basha.

Preparation Method:Place flour in a deep bowl and add salt to the flour. Then add ghee and rub with fingertips. After that add in the eggs and water and mix well with hands until the dough becomes soft. Divide the dough into orange-sized balls and sprinkle with a little flour, then cover with plastic wrap for approximately one hour. Dur-ing this time, place the minced meat in a pan. Cook over medium heat with onions, garlic, and spices. Keep stirring until it browns. Remove from the fire and add the rest of the stuffing ingredients. On a board sprinkled with flour, roll out each ball of dough until it becomes a large circle, and then cut the dough into rectangles. Place a quarter spoon of stuff-ing in the middle of a rectangle, and cover it with another rectangular piece. Seal down the sides well. Deep fry in hot oil until golden brown, then drain on tissue paper.

Rounding out our reviews of the bustling ‘Foodie Favorites’ section of Al Kayaal St. in Rawdah – we popped into Phill Philly’s Philadelphia Steak café.

The décor is modern, clean, & colorful – definitely a step up from a typical fastfood joint – this place is more like a neighborhood hangout where you’d feel comfortable chatting with friends while watching the flat-screen TVs.

We tried a traditional Phill Philly’s Sandwich, a Jumbo Beef Burger, and a Chicken Roll – all cooked to order and customized upon our request. Prices ranged between SR 15-24 for our food, but most items are under SR 20.

The fillings were tasty, but the Philly Sandwich was a bit messy as biting into the baguette caused the grilled beef/caramelized onions/sauted mushrooms to ooze out the other end! It would have been more manageable in Foccacia or Submarine bread, but that’s the only quibble we had with the café.

Otherwise it’s a nice change of pace for a quick lunch or a weeknight dinner with friends.

For Chef Louloua, cooking is an art that needs patience, talent and some wisdom to master it, and most importantly, creativity. Food should not only taste good, it should involve an eye-pleasing presentation that makes people crave what they are seeing before they eat it.

Preparation Method:Melt the butter in a pan. Separate/shred the kunafa with your hands until large clumps are removed. Mix melted butter into kunafa strands and set aside. Mix the eggs, sugar, cornflour and vanilla together. Beat well. Put the milk on the stove until almost boiling. Gradually add the egg custard mixture to the milk. Stir well. Place half the kunafa in a pyrex dish. Press down firmly by hand. Pour the custard on top of the kunafa, then top with remainder of kunafa. Bake in a hot oven (180-200C) for 20 minutes or until golden and crispy. Sprinkle with shira - to taste.

Juice World

Your first glimpse of Juice World through their floor-to-ceiling glass windows is sure to dazzle you – they have inventingly created columns of fruit between which you weave your way through the store. With limited seating, most people prefer to order their drinks to go. But their drinks are huge and avail-able by the liter so that you can easily transport their delicious concoctions to your next party or evening with friends.

Bright, clean, & colorful – Juice World will be packed during the evenings of Ramadan as Jed-dahwis seek to quench their thirst with refreshing, cooling drinks. Check out Juice World as a hip, cool place anytime of the year…now if only there was a ‘Dessert World’…life would be perfect!

Yes, you can easily find fresh juice places all over town, but Juice World definitely merits a dedicated visit. Make sure you’re hungry as well as thirsty, because they are more than just a juice spot – their fruit salad com-bos topped with ice cream are sinfully filling, while the exotic fruit combos in their wittily named fruit drinks tempt you to try at least two or three.

While we know that Ramadan is the time for spirituality and the cleansing of the body, psychologically and physically, we also acknowledge that it is the time for feasts, late nights, and all-you-can-eat buffets. We’ve fallen into some bad Ramadan habits that effectively counter all the advantages of fasting and then some. What’s worse is that many of our kids pick up our bad habits without realizing the negative consequences to their future health. We’ve talked to Ms. Safa Aulaqi, a holistic nutrition and dietetic specialist. She established the first private holistic nutrition consultancy center in the Kingdom of Saudi Arabia, The Nutrition Clinic, in Jeddah. Here are five tips she recommends to instill healthy habits in our kids which will guarantee them many happy Ramadans to come, in sha’ Allah.

1. Hydration, Hydration, HydrationWe’ve been hearing it for years, but this advice takes on heightened importance this Ramadan, which will coincide with August and the summer heat. Fasting uses a significant amount of our water reserves. The best way to ward off potential dehydration is to drink water, or juice, but try to avoid soft drinks.

2. No HibernatingMake sure you and your children are active during Ramadan, physically as well as spiritually. A great way of doing this is to combine the two. One example is to organize a campaign to raise money for a cause or donate some time volunteering at a school or hospital. A great time for exercise is before or after Iftaar, but not in the morning, when your energy should be kept for the rest of the day. Avoid strenuous exercise throughout Ramadan.

3. Get to Know Your MealGet your children to help make the Iftaar by preparing a light meal, like soup or a fruit salad. This will help children appreciate their meals as well as give them something to do during their day.

4. The Art of Eating: The When & How The timing of meals is very important. Children should have early dinners, allowing them enough time to go to bed early and get enough sleep to wake up for Suhoor the next morning. Iftaar should be light, while dinner afterwards should be more abundant to allow for a gradual intake of food.

5. Sharing is Caring Giving out food before Iftaar is one of the great things you can teach your child. Not only is it in line with the generous spirit of Ramadan, but it also instills the feeling of thankfulness and awareness in children. Setting aside food for this purpose is great, but giving out any extras you might have accumulated is just as good.

Abu Hurayra reported that the Messenger of Allah (Peace Be Upon Him) said, “The person who is strong is not strong because he can knock people down. The person who is strong is the one who controls himself when he is angry.” [Al-Bukhari]Ramadan is the time for spiritual reflection and the cultivation of inner and outer peace. Unfortunately, that’s not what we see out on the streets during Ramadan, especially during fasting hours. While it is easy to lose your temper because of hunger, one of the points of Ramadan is to curb your anger and maintain a peaceful demeanor during hardship. Here are some tips we’ve compiled to help you keep your cool.* Use good words: Speaking politely, paying others compliments and putting a smile on your face will calm others as well as yourself.* Walk away and forgive: With some people it’s better not to react. Just walk away, and try not to hold resentment towards anyone.* Make Excuses: The person you are angry with may have an excuse for his/her behavior that you are unaware of – illness, financial stress, personal issues. It’s better to give someone the benefit of the doubt rather than overreact, only to regret it later.* Change position: If you are standing when you get angry, then you should sit down. If you’re sitting, then you should lie down. If you’re lying down…then take a nap!

Ramadan is the ninth month of the Islamic or Hijri calendar. In this month, the Prophet Muhammad (pbuh) received the first revela-tions of the Qur’an, therefore this month was decreed the holiest of months and was designated as the month of fasting. Muslims are encouraged to increase their spiritual reflections as well as their altruistic behav-ior during this time. Thus, Ramadan is also known as the month of charity. In the Arabic language, Ramadan comes from the word ‘ramada’, which means ‘in-tense heat, scorched ground, and shortness of rations’.

Ever wondered… what is Ramadan?

Celebrating RamadanBy Diane Hoyt-GoldsmithThis picture book for older readers follows devout Muslim Ibraheem, a fourth-grader living in New Jersey, through the holy

month of Ramadan. A brief but surprisingly comprehensive introduction to Islamic faith and practice begins the book. Then each of the five pillars of Islam are introduced in text and pictures, including a series of six photographs in which Ibraheem demonstrates the postures involved in his five daily prayers. Ramadan, one of the five pillars, is the month in which Muslims celebrate God’s revelation of the Koran to Muhammad, showing their gratitude and devotion with a month-long fast. This is a sensitive introduction to Ramadan; the quality of the photographs and the eloquent text make the book one of the best introductions in recent memory.

Is There A Doctor in the House?Health care ranks right up there next to education, employment, and housing as one of the most important issues for residents of Jeddah. Even if you’ve been blessed with good health, chances are that your parents, your relatives, or your friends have had to navi-gate the confusing maze of doctors, medicines, and follow-up visits in a local hospital. While there are some excellent facilities on offer which cater to emergencies or planned surgeries, the field of home health care has been long overlooked. Patients requiring physical therapy, diabetes monitoring, or simply assistance with the elderly have had few resources to turn to for aid.

Salam Medical Home Health Care Ltd. seeks to change the face of the health care industry in the Kingdom of Saudi Arabia with their pioneering approach to filling this important, yet overlooked, niche by provid-ing a diversified portfolio of home medical services. Their vision is to offer quality medical care with their team of licensed pro-fessionals in order to meet the health needs of all sectors of society, from neo-natal/pedi-atric care all the way to geriatric assistance,

and everyone in between. Currently serving 50 patients/day with a variety of services, Salam Medical is poised to meet the de-mands of this growing sector and plans to double capacity within a few months upon the addition of qualified staff to their roster. An added benefit of their increased growth will be the alleviation of crowding and reduced waiting times in current hospitals as people switch from hospital visits to home health care.

Taymour Ismail, the CEO of Salam Medical, observes that his company seeks to address the culturally-specific needs of Saudi society through his home health care approach. Af-ter spending a considerable amount of time studying health care in the US, he noticed that the Western trend of relegating the sick/elderly to nursing homes or geriatric facili-ties was unheard of in the Middle East. Yet patients in Saudi sometimes suffered from poor follow-up medical care due to lack of knowledge on the part of family caregivers. Therefore his vision for a comprehensive home health care service which addressed the needs of the patients as well as allowed them to maintain the comfort and dignity of

residing within their own homes led to the creation of Salam Medical Home Health Care Ltd. – an affordable, cost-effective alternative to lengthy hospital stays. Cover-ing all the bases from glucose-monitoring due to diabetes, preemie-infant care for new mothers, wheelchair transport, IV-antibiot-ics/medicine, to physical therapy for stroke victims, Salam Medical can answer all your medical needs in the privacy of your own home. Why didn’t someone think of this sooner?

Generosity is one of the best qualities to be found in Saudis all year round, but most of us tend to go overboard with the variety of food spread out on the table. Here are some tips to keep in mind to make the most out of (but waste the least) this Ramadan:

1. Want to give away left-over food? If you just take a stroll along the Corniche, you will find many street sweepers with nothing to drink or eat except what’s available in the mosque. Giving them a meal before sunset in recyclable packages would be great.

2. Whom to contact? If you’re having a gathering at your house and have plenty of left-over food, dial : 0505697308. Call them two days in advance with the location, date and time you need them to come pick up the food. They distribute the food right away to the needy and less fortunate areas in Jeddah.

3. What to serve? All those greasy, fried treats like samboosak taste especially yummy during Ramadan. But try baked samboosak instead. If everyone realized the damage to the environment caused by households blithely pouring oil down the drain on a daily basis…no one would dare to do it! Do your part to reduce these negative impacts - reuse oil a few times before discarding it…or try baked samboosak. You’ll save unnecessary calories while simultaneously reducing the heat in your kitchen

Now that school’s out & summer’s here - it’s party-time! But along with parties comes an undeniable waste of paper/plastic products. So why not throw a ‘green’ party with an eye on the environment as well as your wallet – you’ll be surprised at the myriad of opportunities to save the planet while having fun.• Use e-vites and invite your guests online. It’s a natural extension of your computer-savvy skills – register at www.evite.com and you’ll be designing beautiful invitations in no time. Your friends will be quick to RSVP so that they don’t miss out on the fun. It’s free and easy-to-use, with themes and styles to spark your imagination. So what are you waiting for…plan a party tonight!• Create unique centerpieces by stepping outside your door – wherever you are – you can use your imagination to envision novel uses for everyday items. If you have a garden, then cut some flowers and place in vases or decorative bottles. If you’re at the beach, fill a glass jar with sand, top it off with some sea-shells and a white candle. Or spread leaves/palm fronds down the center of the table to leave your guests with something to talk about…besides your delicious cooking, that is.

How to throw a Green party...• What about the left-overs? Don’t let food go to waste – prepare decorative packages to give to your guests so that they can enjoy the food as a midnight snack or a quick lunch the next day.• Reuse your old linens by mixing & matching. Instead of cheap, disposable nylon plastic/paper tablecloths and napkins, bring out your old linens for a new lease on life.• A creative way to avoid the perpetual mix-up over glasses (“Is this your drink or mine??”) is to give each guest a different colored glass or use glasses from several different sets. Even bring out those awful glasses which were a wedding gift – every one has a set which was deemed too ugly to use – but now’s the time to reveal them for your guest’s amusement!• Clean with the power of ‘green’. When your guests have left and there’s cleaning to be done, instead of reaching for the Clorox & Windex…simply mix some vinegar and water in a spray bottle as an all-purpose cleaner. You can use a cut lemon half with baking soda sprinkled onto the flat side to scrub dishes, surfaces, and even remove stains.Ready, set, plan!

Many Saudis like to spend their holidays in the UK. Although this summer is broken up with Ramadan coming in mid-August, there’s still time to plan a pre-Ramadan jaunt abroad. If you’re not in the mood to battle the crowds of Kensington or the crowded beaches, try something different and relaxing for a quick, green getaway… the country sides of England, Scotland, and Ireland are all verdant, beautiful places to visit during this time of the month. What’s great about these hotels is that they are all eco-friendly! Useful Arabic Words& Pronunciation

Linguists acknowledge that pronunciation is one of the most challenging steps in learning a different language. For example, spoken Arabic has many different dialects, slangs and accents. Some of these dialects can’t be understood by all Arabs. The most common dialects are the Egyptian and the Lebanese. In this article we attempt to shed some light on the traditional Hijazi accent. To illustrate this, we’ve added a picture of a throat to show how the different Arabic letters are pronounced.
