WHO SHOULD ATTEND:
Targeting meat and jerky processors including suppliers
and regulators wishing to understand the HACCP system
in a food processing facility.

WORKSHOP OBJECTIVES:
Hands-on training to implement a HACCP program in
meat processing facilities. Safe process of jerky
manufacturing will also be preformed by attendees.
SPEAKERS:
Dr. Nancy Flores, an associate professor and an
extension food technology specialist at New Mexico
State University.
Dr. Jack Thomas, a professor for the Animal and
Range Sciences department at New Mexico State
University.
