Dough ingreDients
1 lb. All Purpose Vegetable Shortening
2 lb. All Purpose Flour
1 pinch of Salt
1.5 cup Water
turkey pot pie ingreDients
1lb Cooked Turkey
5 oz Carrots
5 oz Yellow Onion
3 oz Sliced Mushrooms
6 oz Frozen Green Peas
1 t Minced Garlic
1 t Thyme
1 t Rubbed Sage
1/2 gallon Chicken Stock
1 cup Heavy Cream
Roux to thicken
instructions
In a 2 gallon sauce pot cook the Carrot, Onion, Mushroom, and Garlic, until the onion is translucent. Season with Thyme and Rubbed Sage and stir. Add Peas Chicken Stock and Heavy Cream. Bring to a boil then thicken with Roux.
Pre-heat oven to 350. In a Kitchen Aid combine Dough Ingredients until dough is formed. Cut the dough into 6oz portions. Roll circles and lay them into foil tart pans leaving only a .25inch of dough over the lip of the pan. Ladle 5oz of Turkey pot pie filling onto pans. Cover with a circle of dough and roll over to seal the edge. Bake for 35minutes and enjoy.

Mirepoix: A mirepoix forms the foundation of many a great soup or stew. The French term refers to a combination of 2 parts
onion, 1 part carrot, and 1 part celery sauted together in the first
step of soup-making. Also referred to as aromatics, the sauted
vegetables form the first layer of flavor.
Do the two-step: this soup lends itself to a two-step process. Roast the sweet potatoes one day and refrigerate (in or out of their
skins), and finish the soup the next.
Pureed Soups: Smooth soups such as this one possess a silken quality, and are a delight to eat. The easiest way to puree soup is
with an immersion blender; simply puree right in the soup pot.
Alternatively, transfer the soup to a blender or food processor in
batches. Take care when reheating pureed soups; they may easily
burn on the bottom.
Ingredient Bits: Key to the success of this soup are three distinctive flavors common in many Thai foods: Thai red curry
paste, coconut milk, and cilantro, all easily found at the grocer.
Thai red curry paste is a flavorful blend of fresh red spices; its spicy
and delicious. Coconut milk is readily available in canned form;
dont confuse coconut milk with coconut water, or coconut cream
theyre all different. Fresh cilantro is a leafy herb, also readily
available, with a strong, distinctive flavor thats a hallmark of many
Thai dishes.
MAKES ABOUT 3 QT/2.8 L SERVES 6 TO 8
WHAT YOU NEED: 5 large or 6 or 7 medium sweet potatoes,
scrubbed clean 3 tbsp vegetable oil 1 medium onion, cut into
1/2-in/12-mm pieces 3 garlic cloves, smashed and minced 1 large
carrot, peeled and cut into 1/2-in/12-mm pieces 1 celery stalk,
cut into 1/2-in/12-mm pieces 1/2 medium fennel bulb, leafy tops
trimmed, and bulb cut crosswise into pieces 1 in/.2.5 cm wide 6
cups/1.4 L Vegetable Stock (see below) One 13- to 14-oz/390- to
420 ml can coconut milk 2 tbsp Thai red curry paste 2-1/4 tsp
kosher salt 1 tsp freshly ground black pepper 1/4 cup/10 g fresh
cilantro leaves for garnish 1/2 lime for garnish
SPECIAL EQUIPMENT: rimmed baking sheet, large stockpot,
blender or food processor
DIRECTIONS:
1. Preheat the oven to 400F/200C, and place a rack in the center
of the oven. 2. Place the sweet potatoes on the baking sheet and
pierce each one several times with a knife tip or fork. Roast for 1 to
1-1/2 hours, or until they can be easily pierced in the center with a
fork. Set aside to cool. 3. In the stockpot, heat the vegetable oil over
medium-high heat. Add the onion, garlic, carrot, celery, and fennel;
reduce the heat to medium-low; and sweat the vegetables, stirring
often with a wooden spoon, for 6 to 8 minutes, or until they soften
and the onion is translucent. 4. Peel the cooled sweet potatoes,
cut them into large chunks, and add them to the vegetables in the
stockpot. Add the stock, raise the heat to medium-high, and bring
to a simmer. Reduce the heat to medium-low and simmer gently
for 20 to 25 minutes to blend the flavors. 5. Turn off the heat and
add the coconut milk, curry paste, salt, and pepper. Working in
batches, blend the soup in the blender until very smooth. Return
the soup to the pot and bring back to a simmer. Taste and adjust
the seasoning if needed. 6. Ladle the soup into bowls and garnish
each with the cilantro and a squeeze of lime before serving. The
soup can be stored in an airtight container in the fridge for up to 3
days or in the freezer for up to 1 month.
Sweet Potato with Thai Curry and Coconut Soup
Homemade soups are infinitely more delicious than anything from a can, most likely a lot more healthy, and a lot less expensive. Start with a layer of aromatics, add fresh ingredients, season with herbs and spices, and let layers of flavor mingle and mix. Here are a few tips for soup-making success:
MY SOUP IS TOO SALTY:
If youve over-salted the soup, or if the ingredients are salty by
nature, decrease the salty effect by diluting the soup with liquid,
or adding more ingredients. In particular, adding a diced potato or
two tends to soak up the salt; leave the potato in or remove from
the soup. Avoid over-salting by tasting before seasoning, and by
using low-sodium stock in the initial steps.

MY SOUP HAS NO FLAVOR!
Build great soup flavor a layer at a time. Many soups start with
a quick saut of onions, (and often carrots and celery). Sauteing
brings out fat-soluble compounds that otherwise may not
appear when boiled. Also, browning vegetables or meats is key
to inducing the Maillard reaction, a bit of kitchen chemistry that
produces rich flavor. Adding salt, lemon, or a hint of vinegar will
add brightness to any soup. Throw in the rind from a wedge of
Parmigiano-Reggiano cheese for additional umami flavors.
MY SOUP IS TOO SPICY
If the ingredients are naturally spicy, or if youve mistaken
cayenne for paprika, try diluting the soup by adding additional
stock and more ingredients. Dairy foods counteract spicy heat,
so a generous dollop of yogurt or sour cream on top of the soup
bowl may aid a hot situation.
MY SOUP IS TOO THIN
If you were hoping for a hale and hearty soup, but ended up
with a thin, watery bowl, try removing a portion of the soup,
pureeing it, then adding it back into the soup pot. Or, remove
some of the liquid, reserving it for your next soup occasion.
If the soup has not been seasoned yet, try simmering and
reducing the soup and concentrating the flavors. A dose of
beurre manie, flour and butter kneaded together, will also
thicken a soup nicely as will a slurry of cornstarch and water.
MY SOUP IS TOO THICK! For stock-based soups, simply add more stock. For roux-based
soups, add milk or stock to thin. Note on the recipe for the next
iteration to begin with a less intense roux.
MY SOUP BURNS ON THE BOTTOM:
Always use a high quality soup pot, one constructed with a
heavy bottom and that distributes heat quickly and evenly up
the sides. Ensure that the pan is not warped or bowed, but sits
flatly on the burners surface. Reserve high temperatures for
sauting and bringing liquids to a boil, then be content with
simmering the soup to perfection. Stir thick soups, (like chili),
often to prevent sticking. Puree soups when hot and serve
immediately as they will stick more quickly once pureed.
MY SOUP IS TOO HOT TO REFRIGERATE. Soup leftovers require refrigeration, but a big pot of hot soup
takes a while to cool down. Try placing the soup pot on a
cooling rack to facilitate air circulation. Leave the lid off and stir
occasionally. Transfer the soup to several smaller containers
for faster cooling. Placing a hot pot in the refrigerator will work
to cool it down, but may increase the temperature inside the
refrigerator and endanger other foods.

INSTRUCTIONS
1. Line a 12-cup muffin tin with paper or silicone liners.
2. Preheat oven to 350 degrees.
3. In a bowl, whisk together flour, baking powder, baking soda, salt and pumpkin pie spice.
4. In a large bowl, whisk together pumpkin puree, sugar, eggs, vanilla and evaporated milk until well combined.
5. Add in dry ingredients and whisk until no streaks of flour remain and batter is smooth.
6. Fill each muffin cup with approximately 1/3 cup of batter.
7. Bake for 20 minutes and let cool for 20 minutes.
8. Remove cupcakes from pan and chill in the fridge for 30 minutes.
Top with whipped cream and sprinkle with more pumpkin pie spice or cinnamon on top and before serving.

1. Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
2. In a large bowl, combine Panko and Parmesan; set aside.
3. Working in batches, dredge asparagus in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
4. Place asparagus in a single layer onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown and crisp.

In the early to mid-1900s, Elko County was home to many Basque sheepherders. They would spend the summers tending flocks in the nearby mountain ranges. One of the pastimes adopted by the herders was carving in the aspen trees while the sheep grazed or were bedded down. The smooth thin bark of the aspen made for easy carving with a knife. Carvings often included human figures, self-portraits, or depictions of animals. It was also common for herders to carve their name and a date to mark their passage across the mountains. While aspen carvings reflect unique expressions of identity and culture, some also functioned as communication between herders in these remote landscapes.
Many of these carvings can still be seen throughout the area, and these photos show carvings along the Charleston to Jarbidge Road in northeast Elko County. Because aspen is a short-lived tree, the carvings are slowly disappearing with time. Today, this artwork is protected by law and people are reminded to protect these carvings for future enjoyment by others.

Photography can be difficult and tedious work, even if you are creating it while enjoying one of Nevadas most beautiful landscapes - the Ruby Mountains. Todays outdoor enthusiasts can capture roadside views of the Rubys in seconds with incredibly lightweight digital cameras. But it takes far longer to capture break taking views from the wilderness on top. And far longer still when trying to recreate the exact viewpoints taken in 1868 by famed Civil War photographer Timothy OSullivan.
Travelers in the 1860s and 1870s faced huge physical challenges in traveling uncharted areas of Nevada, including a lack of water sources, unfavorable weather for travel by wagons and uncertain relations with natives. While my long horseback trip up into the Ruby Wilderness area was simple in comparison to the great western expeditions, it still required trekking 70 pounds of camera and camping gear. That was exertion enough to gain an understanding of how OSullivan had to rely on his team to carefully pack his cameras, glass plates and a portable darkroom up the steep side of the Rubys to the 10,000 feet crest.
OSullivan was the first photographer to travel the length and breadth of Nevada. He accompanied Clarence King on his expedition of Nevada in 1867-68 and George Wheeler on his Nevada expedition of 1871. OSullivan photographed over 250 views in Nevada during those years using large, heavy wooden cameras and tripods. He was additionally hampered by the need to carry chemicals which he used to coat his 8x10 glass plates, and then develop the plates while they were still wet. Typically, that travel was accomplished in a horse-drawn, surplus Civil War ambulance. But mountain views required pack trips.
Since 2008, I have been tracking down the locations where OSullivan documented Nevada and rephotographing them with a 4x5 camera. After years of anticipation, I was finally able to reach one of the pinnacles of OSullivans Nevada photography: the central crest of the Ruby Mountains Wilderness. Led by Walt Gardner, owner of Secret Pass Outfitters, we rephotographed 17 views taken 144 years earlier by OSullivan at Overland Lake and the crest of Long Canyon along what is now the Ruby Mountains Scenic Trail.
Walt Gardner is a fifth generation rancher whose family
homesteaded in adjacent Ruby Valley in 1869. That made the historical prints I carried with me particularly interesting to Walt and his family, because they showed the conditions of the land at the time of his familys homesteading. Despite changes in vegetation in some of the historical photographs, Walt instantly recognized the locations based on his years of experience as an outfitter. How could I not select him for the job?
Creating the 17 images was an arduous, two-day 18 mile pack trip to Overland Lake, with a round trip to the crest of Long Canyon. We tested our abilities to find each and every spot where OSullivan had planted his tripod. Walt, with his young sons and a friend, scampered around while I labored to adjust to the 10,000 feet elevation. Totally unexpected, I found this troop of youthful sherpas carrying my 30 pounds of camera gear. It helped that I had promised the boys they could pose in the same spot where OSullivan had placed famed geologist Clarence King. It shouldnt have come to any surprise to me - a teacher and a grandfather - that I found our collective enjoyment in recreating history more satisfying then the enchanting scenery.
The next morning, a campfire pancake breakfast began a more relaxed morning shooting what King had named Lake Marion, but is now known as Overland Lake. The boys took to fishing while their dad and I rephotographed OSullivan viewpoints of the lake. This time, with the luxury of spare time, I could pause after each shot and soak in the scenery. Next time I might even take some time to fish.
On subsequent trips, I had rephotographed most of the 42 viewpoints OSullivan shot from the Ruby and East Humboldt Mountains, as well as ones taken of the US Army Camps: Ruby and Halleck. The East Humboldt views centered around Boulder and Birdeye Lakes, including the treacherous ridge between First and Second Boulder Canyons. An untimely bout of food poisoning left me hallucinating about leaving on a Summit Air ambulance, as opposed to finishing the 22-mile pack trip to Boulder Lake.

The idea that Benjamin Franklin preferred the turkey as the national bird of the United States comes from a letter he wrote to his daughter Sarah Bache on January 26, 1784.
For in Truth the Turkey is in Comparison a much more respectable Bird, and withal a true original Native of America...
The wild turkey (Meleagris gallopavo) is native to North America, but not to Nevada. The first wild turkeys introduced into Nevada were the subspecies Merriams Wild Turkey. They can be found in the Carson Range and the Spring Mountains near Las Vegas. The subspecies Rio Grande Wild Turkey, native to the central plains states, was first introduced into the Overton Wildlife Management Area in February 1990. In mid-January of 2000, 23 hens and five young male turkeys were trapped in the Overton area and then transported and released at the XJ Ranch, approximately 50 miles south of Elko in the Ruby Mountains.
Rio Grande Wild Turkeys have been the main subspecies released in the state and populations are now primarily located along river corridors in western Nevada, the Ruby Mountains of Elko County, Paradise Valley in Humboldt County and in eastern White Pine County and can be found in the Carson Range and the Spring Mountains near Las Vegas. In southern Nevada, they populate Lincoln County, as well as the Moapa Valley and the Overton area of Clark County.
Wild turkeys have longer necks and legs as well as smaller breasts than domestic turkeys bred for the table. The tom's body feathers are black with orange, blue and green iridescent highlights; females have medium to light dull brown feathers, without iridescence. The head is feather-less and is covered by scaly skin usually a dull blue and pink except in breeding season. The males have a snood which is a soft floppy growth on the front of the head which dangles downward over the beak. The female also has a snood but it is not as showy. The wattle is a pouch-like area at the front of its neck. In breeding season, the male's face turns bright blue, and the wattles turn a bright red.
Often the male turkey is pictured strutting in full plumage. He thrusts his chest forward and gobbles. (Only the male makes this gobble sound, the female makes a soft clucking or clicking sound.) His tail feathers are fanned and the wings drag along the ground. This pose is not held for long but is repeated several times a day during breeding season to attract a female. When the males are not strutting, the tom turkey looks much like the hen, only larger.

Wild turkeys travel in flocks and are very gregarious. Turkeys are omnivorous, foraging on the ground or climbing shrubs and small trees to feed. They will occasionally eat amphibians and small reptiles such as lizards and snakes. They can run up to 25 mph and despite their weight they are very agile fliers and can reach speeds of 55 mph. They live an average of 3 to 5 years in the wild and range from 5 to 20 pounds.

Dee and Stephanie Rasmussen are Shabonya Dutton State Farms Good Neighbor for November.
I want to nominate Stephanie Rasmussen for the good neighbor article. My family that came down from Boise to play live music at the expo last weekend lost their wedding ring in the coffee mug parking lot that Sunday morning and couldn't find it anywhere!! They thought they would never see it again and they were just devastated. Through social media she was able to connect with them and I now have the ring and will be taking it to them in Boise! That is an honest caring person that should be considered.
Cara was the owner of the lost ring. Her story validated exactly why Im proud to say Im from Elko.
Last month, my husband, our son, and I took a little weekend trip down to Elko from the Boise, Idaho area, where we live. My husband, Chad, is a musician and was performing at the Everything Elko Expo. On our last day there, we stopped to have lunch with some friends at the Coffee Mug restaurant in downtown Elko. Thats when I made a mistake. I took my wedding ring off of my finger in the car to put lotion on my hands, set the ring on my lap, and then forgot that it was there. I got out of the car and went inside to eat. It wasn't until a short time later that I realized my ring was not on my finger. I dug through my purse, we scoured the car, and we walked around the parking lot, hoping that a sparkle would catch our eye and it would be easily found. Our searching was to no avail.
At that point, we felt there was nothing left for us to do, so we got into our car and began our trip back to Idaho. What a helpless feeling. I knew exactly where my ring was lost, and was only filled with uncertainty about who may have found it and whether or not I would ever see it again. A million and one scenarios ran through my mind.
The next morning, we got to work! We contacted a couple of friends in Elko with pictures and a description of the ring. They were immediately ready to help. They posted our information on Facebook pages and one friend went back to the parking lot where it had been lost, to take one more look around. We called the police department, but we were told that it was considered a lost item, not stolen, so we couldn't file a report. We contacted pawn shops and jewelers. That evening I received a message from Jensen Jewelers. The store manager, Andrew, had seen my ring that day in his store! He said that the woman who brought it in had found it and wanted to find its owner. By the time I saw his message, it was after business hours and I would have to wait until the morning to speak with him.
In the meantime, I joined a couple of Elko and Spring Creek buy/sell/trade Facebook groups, and posted a picture and description. What happened there was incredible. There was not only an outpouring of well wishes and helpful tips from
many people, but there were individuals who made it their mission to help me find my ring. It was a group of strangers rallying for me. These were people I have never met, and they were going out of their way to help me simply because they were empathetic to my situation. There was even a woman, who worked near the Coffee Mug, willing to search the parking lot during her lunch break.
I went to sleep that night feeling hopeful, but still unsure. I woke up the next morning with a comment under my post. It was from a woman, another stranger, letting me know that there was a post in a Facebook group regarding a ring that had been FOUND, exactly where mine had been lost. It was promising news. I quickly made contact with the gentleman who had made the post, Dee Rasmussen,
and he sent me his phone number to call him. When he told me that his wife, Stephanie, had found my ring, I started to
cry. This was not about gold or diamonds, but about the sentimental value of the ring that my husband put on my finger on our wedding day. I thanked Dee again and again. He was very sweet and simply said, Its not our ringits yours. We're just happy that you are getting it back, and we would only hope that someone would do the same thing for us.
I have my ring back on my finger, but something is different about it. When I look at it, I remember my wedding day and vows, but now there is more. I am reminded that there is goodness around us. We are sometimes so distracted by the negative events we hear of or experience, that we forget this. When I sent Dee a message to thank him again, he said, Its no problem. There are lots of good people around. We are very happy for you. Dee and Stephanie Rasmussen are certainly included in that group, and there is not a doubt in my mind that they deserve and will be extended the same kindness in the future. I am also reminded of how positively powerful a community can be when people come together to help a neighbor, without expectations of receiving rewards for their kindness. I actually said to my husband, Maybe we should be living in Elkolook at this community! It has had a ripple effect. I am now far more conscious of acting with kindness, paying it forward, and giving more than I receive, and that is because of the Rasmussens and the Elko community.
When I called to interview Stephanie she was incredibly modest and humble, at one point she even told me I honestly dont think I deserve any applause, it was the right thing to do

I wasnt sure if maybe it was someone locals ring or someone out of towns.
If it would have been my wedding ring I would have been so grateful to have it returned. I would hope that anyone else would have done the same thing.
Hearing this story made me reflect a little about what Id do if I had found the ring, and honestly I would have probably just taken it to the police department and left it at that. Stephanie and Dee on the other hand used out of the box resources to do whatever was possible to get this ring to its rightful owners!
Now Id like you, our reader to think about what youd do in this situation
The Rasmussens went to a local Jeweler, used Facebook, anything possible to get the ring back to Cara.
Amazing how something so simple can create such a complicated equation. There are more than a few solutions, right and wrong. Luckily, the right thing was done in Caras case but more often than not this isnt so. Precious items like Caras wedding ring are sadly lost forever.
Id like to make this story a testimony to how amazing our community is and how a remarkable couple and a group of incredible community members somehow came together via social media to return an irreplaceable symbol; a symbol not only of Cara and her husband Chads union, but of memories made, shared, and yet to be created.

1 Set a fitness goal at the beginning of November, such as completing a month long triathlon. Over the course of the month, run 26.2 miles, bike 112 miles, and swim 2.4 miles. Chip away at your goal each day. Even if you over-eat a bit on Thanksgiving itself, your fitness throughout the month will help compensate for that.

DIRECTIONS: remove giblets from turkey. place turkey on a rack and stuff with the onion and half of the rosemary, thyme, and garlic mixture. loosen the skin from the turkey breast and place the remaining half of the mixture under the skin. to prepare the baste, stir together the cider concentrate, wild orange essential oil, lemon essential oil, olive oil, thyme, salt, and pepper. roast the turkey in a preheated 325-degree oven, basting every 30 minutes with the cider baste until an internal temperature reaches at least 165 degrees in the innermost part of the thigh, the wing, and the thickest part of the breast. (some diners may want the turkey cooked to a higher temperature.) carve and enjoy!
Cider Baste:
1/4 cup apple cider concentrate2 drops dterra wild orange essential oil1 drop dterra lemon essential oil2 tsp. olive oil1 toothpick dterra thyme essential oil1/4 tsp. saltFreshly ground black pepper

The Nevada Health launched in 2014 and some 38,000 Nevadans took advantage of plans offered to state residents through the Affordable Care Act, also known as ObamaCare.Now, it is time for the second year of the government program designed to make healthcare affordable to those who previously could not afford the cost of ever-rising health care premiums.
The plans offer government subsidies, based upon income.
One Elko resident was able to get a plan that cost $15 per month for a $250 deductible and 95 percent co-insurance until she reached $750 out-of-pocket expense. Then it paid 100 percent. The government subsidy was $681 per month in this case.

Open enrollment for 2015 on the Nevada Health Exchange is scheduled for November 15, 2014 and runs through February 15, 2015; though individuals will be allowed to start their applications as early as November 3, 2015 when the Health Exchange goes on line. The cost is the same if you work through an agent or do it yourself. Our service is free.
Those who have plans on the Health Exchange currently will need to re-enroll for 2015. The One-Stop Insurance Shop, formerly known as The Affordable Healthcare Pros, will be re-enrolling current customers November 15, 2014 to December 15, 2014. They will need to pay their first-month premiums by December 15, 2014 to have the plan begin on January 1, 2015.
Those who wish to change their private insurance or have no current insurance can also apply on the Health Exchange or through brokers like us, and
will be able to start their plans on January 1, 2015 if they pay by December 15, 2014; February 1, 2015 if they pay by January 15, 2015; or March 1, 2015 if they pay by February 15, 2015.
This year, the Federal website will be utilized, though it will still be known as the Nevada Health Exchange. Only certified brokers can sell plans on the Health Exchange.
Businesses will need to comply with the Affordable Care Act this year and we can help them both on and off the Nevada Health Exchange with a wide variety of different plans. We are available to explain the Affordable Care Act rules to area companies so they are in compliance. Those companies with 100 or more employees must offer qualified health plans to employees in 2015 and those with 50 or more employees will be required to offer plans to their employees in 2016.
