This year’s event will take place on Saturday, August 30th at the Crawford County Courthouse Square in
historic Steelville, Missouri. The Fire In the Square BBQ Contest is part of a town-wide festival called
“SteelFest”. Enjoy BBQ perfection and outstanding bluegrass music all weekend long!

RULES AND REGULATIONS
ENTRY FORM
The entry fee is $125.00 per team. Entry fees are required to be paid with the submission of the entry form.
BOOTH SPACES
Each team will have a 20 x 20 space assigned to them. For double spaces, the fee is an additional $50.00. Contestants
must stay within the boundaries of their assigned area. Electricity is limited. To have electricity available at your
booth, the cost is an additional $25.00.
TEAMS
Each team will submit an official team name that cannot be changed. A cooking team shall consist of a chief cook and
as many assistants as desired as long as they fit into your cooking area. We want each team to have a good time and
want a family friendly atmosphere for those who attend. The chief cook will be held responsible for the conduct of
his team and guests.
SUPPLIES
Each contestant shall supply all of his own meat, cooking ingredients, cooking devices, utensils, prep tables, etc. The
only thing provided for you is the cooking area, water access and electricity if requested. If you select to purchase
electric, you will need to bring an extension cord.
Each team is required to bring a trash can and fire extinguisher. A dumpster, port-a-potties and ash can will be
available on site for your use.
All contestants must adhere to all electrical, fire and other codes set forth by the Steelville Chamber of Commerce
and the City of Steelville, Missouri.
Be sure to leave your area in good shape at the end of the contest.
REGISTRATION
Upon arrival, check in at the Registration tent for your space assignment. You may set up any time after 6 AM on
Saturday, August 30th. All teams must register by 8 AM on Saturday, August 30th.
PARKING
Each team will be allowed to unload their vehicle at the cooking area. We will have designated parking for teams that
will be in close proximity to the cook off area. There are no available hook-ups for campers or RVs. There are local
campgrounds that have camper and RV hoop-ups.
MEAT INSPECTION
All meat will be checked upon arrival to make sure it is sealed and iced down. Meat may not be marinated, brined,
injected or seasoned before meat check-in. All meat must be in its original packaging and kept at a maximum
temperature of 40 degrees. Cooked food must be kept above 140 degrees.
COOKS MEETING
There will be a required meeting for all Chief Cooks at 8 AM on Saturday, August 30th at the registration tent. Food
containers will be passed out at this time.
JUDGING CRITERIA
Each team will turn in 6 separated and identifiable portions per category for judging. Judges cannot cut, pull, or share
submissions.
The event organizers will provide white, foam containers to each team. These containers cannot have any marking or
distinguishing factors. If that does occur, the team will receive a one (1) in all criteria for that category. These are the
only containers the team will receive. They will have a number on them determined by the event organizers.
Each division will be judged on the following:
Appearance
Taste/Flavor
Tenderness/Texture
Sauces are optional, however there cannot be an additional cup of sauce added to the container. The only garnish
allowable for the presentation box are limited to chopped, sliced or whole leaves of fresh green lettuce, curly parsley,
flat leaf parsley and/or cilantro. No other vegetables and/or vegetation are allowed.
Meat may not be stamped with any distinguishing marks or it will receive a score of zero for that entire category.

OTHER RULES
No golf carts or ATV’s are permitted in the cook off area. No Alcohol permitted on the premises. If you are found to
have any alcohol, you will be asked to leave and your entrance fee is forfeited.
