My name is Jackson Murray. I have lived in Birmingham, AL and Knoxville, TN. My family moved back to Jackson in 2007. I am the fourth generation of my family to be a member of FUMC. I have three brothers, Roger IV, Cole, and Brooks, and a dog named Knox.

Joining this past Sunday were Tirey and Mary Ann Brady. Tirey and Mary Ann are transferring their memberships from United Methodist Churches in Mississippi. Tirey works for Trust Company Bank and Mary Ann is an occupational therapist at Jackson Madison County General hospital. Tirey has been in Jackson for about a year and Mary Ann moved to Jackson after their marriage in August. We warmly welcome Tirey and Mary Ann and rejoice in their decision to become part of our church family.

WELCOME NEW STAFF MEMBERIt is with great excitement that I accept a part time position on the FUMC staff as Director of Women’s Ministries. Serving as one of your lay leaders the past two years emphasized to me the importance women play in every area of our church. It afforded me an answer to my question: Why do we need Women’s Ministry?

Throughout scripture we see how God placed women together in relationships to encourage one another and provide a place of retreat. Just as God sent Mary to Elizabeth and Ruth to Naomi, He continues to place women together for mutual support, accountability, and friendship. Women are the heartbeat of the home, community and church.

2014 is going to be an exciting year for Women’s Ministries. We have Soul Sister events such as book club, road trips, retreats, Soul Sister After Hours, cooking classes, Tables for 6, Bible studies and much more.

We are organizing into four quarters, so you will always have something new to join and an opportunity to meet new friends.

To borrow from Bill Hybel’s words in Courageous Leadership: “God’s power working through us is breathtaking, God’s potential working in us is unlimited, and God’s love spilling from us knows no bounds.

The Road to DaybreakBook Review by Jennifer Trently

Henri Nouwen’s book, The Road to Daybreak: A Spiritual Journey is a book I return to repeatedly. I return to this book not because it is an easy read but because I find comfort in the reminders these pages offer. This spiritual journal helps me to remember that the Christian journey is not for the faint-hearted. It challenges me to try new disciplines.

In this book, Henri Nouwen describes how he moved from being a Harvard professor to being a priest for the L’Arche Daybreak Community. The journal entries are in chronological order but do not stand-alone. Nouwen emphasizes the stages of his journey by placing the entries in chapters giving each one a title. The titles of each chapter provide the reader with insight of how the entries are connected.

Published in 1988 by Doubleday; The Road to Daybreak speaks universally to the loneliness of the human condition. Nouwen explores the intersection of community; deep individual friendships and personal relationship with Jesus. The Road to Daybreak emphasizes how the maintenance of each of these is important as we navigate change.

The book is not just the physical journey to Daybreak community but also the inner journey of beginning a new life. The Road to Daybreak offers readers the opportunity to encounter Jesus in their hearts, minds and souls. Nouwen

suggests that Jesus cares about the big things in life like vocation but also about the details of how our time is spent. He discovers in this year; the importance of saying no and of just being. Our days do not have to be filled to the brim with activity. Jesus honors our seeking.

Yet seeking is not always easy. Throughout the book, we observe Nouwen struggling in his prayer life. Carving out the time and staying focused are his main issues. Nouwen wrestled too, with keeping his focus on Jesus. He was often caught up in trying to follow others’ expectations and seeking their affirmations. This is what makes the book so meaningful to me. Each time I return to read it; The Road to Daybreak is like a breath of fresh air. Nouwen’s honesty and struggles comfort me. If someone who spent 30 years in the priesthood lived often in the place of mystery; then I, too, can live in the place of mystery.

The Road to Daybreak: A Spiritual Journey provides a great start to thinking about the New Year and a fresh start. Its 227 pages; share Nouwen’s observations and encounters. The book takes its readers across two continents and many different countries. Its rich descriptions of people and places connect Nouwen’s experiences with people of all ages; nationalities and stages of faith. Available in both paperback and e-reader edition; The Road to Daybreak: A Spiritual Journey is a great place to start the new year and a great start to the writings of Henri Nouwen if he is new for you.

Gene Smith was one of three who received an outstanding alumni award. Gene, a member of Jackson First United Methodist Church, was recognized as the Distinguished Friend of Lambuth for his financial generosity and support of student programming and recruiting.

Cherished Family Recipes Shared by FUMC Members and Staff

24 Hour Salad Betty Morris

Yolks of 4 eggs beaten lightly. Add juice of one lemon and ¼ cup of milk. Mix well and cook in a double boiler until thick and creamy. Remove from heat and allow to cool. Fold in ½ pint whipping cream which has been stiffly whipped.Drain well 1 can pineapple tidbits and 2 cups Royal Anne white cherries. Place fruit in large bowl. Add 1 cup chopped pecans and 1-1/2 to 2 cups miniature marshmallows. Add whipped cream mixture. Stir well, cover and refrigerate for 23 hours.

This recipe came from my mother, Betty Nunn. We would have it every Christmas Eve at their home, usually with country ham and fried corn. Now that I prepare Christmas Eve dinner, we have continued the tradition and it is always a part of our dinner; always requested by our son, Dick Morris. My friend, Martha Lynn Fisher used to get the Royal Anne white cherries for me.

Ingredients:Stew meat – 2 lbs. of beef stew meat, beef roast or sirloin depending upon tasteChicken breast, three breast halves, bone in with skinCut okra, frozen – 2 each, 8-10 oz. pkg.Vegall® – 2 standard cans (approx. 15 oz.)Tomatoes, crushed – 2 large cans (approx. 30 oz.)Creamed corn – 4 standard cans (approx. 15 oz.)Potatoes – 2 med size, diced into ½ to ¾ inch cubes Yellow onion – two large, finely dicedPeas, English – 1 standard can (approx. 15 oz.)Beans, lima, frozen – 1 each, 8-10 oz. pkg.Basil, sweet leaf, dried & crushed – 2 heaping tablespoons (if fresh basil is used, 2 level tablespoons, finely diced will substitute)Black pepper – ½ tablespoon (or less depending upon your taste)Onion Powder – 1 tablespoon

1. Dice beef into ½ to ¾ inch cubes and brown beef through and through in a skillet with about two tablespoons olive oil (the type used for sautéing or grilling). After browning, drain beef in a colander and set aside. Throw the drained liquid away.2. Boil chicken in a covered stock pot with about three quarts of lightly salted water for an

hour. Remove chicken and allow to cool. Save the chicken stock (water) for use in the soup.3. Dice the cool chicken in the same size pieces as the beef and place chicken and beef in a 3 gallon stock pot, preferably with a heavy bottom, which will help in preventing sticking as the soup is cooked.4. Pour enough water into the pot to cover the meat with one inch of water. Add the chicken stock to the pot and bring to a rolling boil.5. Add to the mix the crushed basil, diced onion, tomatoes and cut okra and again bring to a low to medium boil. Cover the pot and cook for at least one hour, preferably two, being sure to stir the contents every few minutes to prevent sticking.6. After one hour, sample the liquor and, if necessary, salt to taste. Also, pull out one or two pieces of the beef and taste test for tenderness. If not tender, cook an additional hour.7. When the beef has become tender, add all of the other ingredients EXCEPT the cream corn.8. Cook on a low heat (very slow simmering boil) for two hours with stirring ever fifteen minutes.9. At the end of the two hour period, add the cream corn and continue to cook on low heat, stirring every five to ten minutes to prevent sticking of the corn. Taste test and add salt if needed.10. Set aside enough for a couple of meals and freeze the rest in 1-2 quart containers. If you plan to keep the soup in the freezer for more than a month, don’t fill the container completely with soup and leave about one inch of space above the soup. Freeze the soup and then add about ½” of water to the top and refreeze. This will retard freezer burn. The additional water will not alter the flavor of the soup when cooked.

Serve with cornbread, crackers or maybe a grilled cheese sandwich. A splash of Louisiana Hot Sauce adds a great flavor, too.

A Christmas Coffee Cake from my late mother in law, Laura Scanlon

1/4 cup butter 2 tsp baking powder8 oz cream cheese (soft) 1/2 tsp salt1 1/2 cup sugar 1 tsp baking soda2 eggs 1 cup milk2 cups flour 1 tsp vanilla extract

Cream together butter, cream cheese, sugar and eggs. In another bowl sifttogether dry ingredients. In a third bowl combine milk and vanilla. Add milk mixture to creamed mixture, stirring until well blended. Add dry ingredients, a little at a time until well mixed. Spoon into 3 greased and floured round

Topping1/4 cup butter (cold)3 T good quality cinnamon1/4 cup flour Chopped nuts.1 cup brown sugar

Mix all ingredients together until a streusel type topping is formed. Bake cakes at 350 for 20 minutes. My tradition is to bake several in disposable pans and give as gifts-if my family doesn’t eat first. Delicious hot or cold.

Artichoke Dip Lane Camp

1 14-oz can artichoke hearts, drained1 cup mayonnaise1 cup Parmesan cheese8 oz. grated Mozarella cheesepinch of garlic salt

Chop artichokes and mix together with all other ingtedients. Bake at 350 degrees for 40 min.

Candied Sweet Potatoes Hope Voegeli

4 medium sweet potatoes 1/2 stick margarine1 cup sugar. 3/4 cup water

Peel potatoes and cup into chunks. Mix sugar and water together and bring to a boil. Add potatoes and margarine turning heat to medium, cook until potatoes are soft. Reduce heat to low letting it cook down slowly to a syrupy consistency before serving. Serves 10-12.

My mother Lelan Kennedy Maners served this many times especially at the fall and winter holiday family meals at our home in Bath Springs, TN, where she and my dad George Maners reared 8 children.

My Father’s Pecan Pie Marie Henderson Pardue

3 eggs1 C dark corn syrup*1 C sugar2 T melted butter1 t vanilla1/8 t salt1½ C pecansBeat 3 eggs slightly. Mix in next 5 ingredients. Add pecans. Pour mixture into 1 unbaked pie shell. Bake at 400 degrees for 15 minutes, then lower temperature to 350 degrees and continue baking for 30-35 minutes. Center should be slightly less than edges when done.

*Original recipe uses cane syrup made from cane that is grown, squeezed, cooked and bottled on our Florida family farm. My brother carries on the tradition (4th/Generation). The pecans also come from our pecan orchard.

My Grandmother’s Kentucky Blackberry Jam Cake

Bobbie MaysServes 12-16

2 cups sugar1 cup butter4 whole eggs, well- beaten1 cup sour milk1 tsp. baking soda1 cup blackberry jam3 cups all-purpose flour1 tsp. ground cloves1 tsp. ground nutmeg1 tsp. ground cinnamonraisins

Mix together sugar and butter.In separate bowl, mix eggs, sour milk and baking soda.Add to sugar and butter mixture. Mix well.Add blackberry jam and flour.Add spices and raisins.Mix all ingredients until well blended.Bake in pre-heated oven at 350 degrees for 45-50 minutes in a 9x12 inch. pan or divide equally into (3) 9 inch round pans for 35-40 minutes. Note: To make sour milk, I add a Tablespoon of vinegar to regular milk.

Never Fail Caramel Icing

1 stick melted butter ½ cup evaporated milk1 cup dark brown sugar confectioners sugarVanilla

Cook butter and brown sugar 2 minutes. Add milk. Stir and bring to full rolling boil. Cool. Add confectioners sugar until of spreading consistency. Add vanilla. Optional: place whole pecans to top of iced cake.

It was a tradition for my grandmother Ross (Pat Goodpaster’s mother) who lived near Lexington, Kentucky to serve this dessert at Thanksgiving and Christmas. This recipe dates back to 1861.

Punch For 50 Jacki Hoveskeland 3 C sugar3 C water3 C tea (made strong) = (5 tsp tea per cup)3 C pineapple juice2 C lemon juice1 lb frozen strawberries

1 ½ Qts Ginger Ale Make a syrup of sugar and water. Boil 5 minutes and cool. Make a strong tea (5 tsp per cup). & coolCombine syrup, tea, fruit juices, and strawberries. Chill.Serve over block of ice in a large punch bowl. Add Ginger Ale just before serving.

Grandma’s Special K Loaf Jacki Hoveskeland 1 Large Onion (Chop and sauté in small amount of oil)1 Qt. Carton Cottage Cheese½ Cup Walnuts 1 Stick Butter1 Pkg. George Washington Broth Seasoning 4 Eggs, beaten with Fork½ Medium Size Pkg. Special K dry cereal 1 Pkg. Onion Soup Mix Preheat oven to 350°. Mix all ingredients together. Place in meatloaf pan and bake for 1 hour.

The first recipe is one that my mother would make for gatherings. She enjoyed entertaining and bringing out the “good silver and crystal”. She would make this for parties, weddings, etc. in North Dakota mostly in 1960’s - 1980’s.

New Year’s Day Good Luck Beans and Greens Soup Susan Crocker

1 onion. chopped1 green pepper, chopped1 bag frozen chopped mixed greens, thawed1 bag frozen chopped spinach, thawed2 T minced garlic8 oz smoked sausage, diced4 14.5 oz cans reduced sodium chicken broth 2 cans black eyed peas, undrained

Heat 1 T olive oil in a sauce pan over medium heat and add chopped onion, pepper, garlic and saute 2 minutes. Add smoked sausage and saute till veggies are tender. Add 1can of chicken broth to mixture and simmer. Meanwhile, in a large pot heat 1 T olive oil and add mixed greens and saute until tender, about 5 minutes. Add remaining 2 cans of chicken broth and bring mixture to a boil. Stir in peas and veggies from other pan. Heat and serve. Serves 8, but can easily be doubled.Yummy with drop cheese biscuits

We have had a big pot of this soup everyNew Year’s since we have been married – 26 years. Easy to double and triple for friends to drop over.
