Sigmund Freund was an enterprising immigrant from postwar Europe, and in a manner consistent with the American Dream, was determined to build a new life. In 1949, he and his wife Eva purchased a small fish store on 15th Avenue in Brooklyn and three generations later, his son Morris and grandson Tzvi still run the company.

In the 69 years since its inception, Freund’s Fish Market has become a household name for excellent food and has earned an esteemed place in the industry as an exporter, importer, and distributor of high-quality fish products. Today, Freund’s Fish Market has become one of the largest kosher distributors of fresh and frozen fish, with sales in the United States and abroad.

The company still operates in its original location and has expanded

into neighboring premises. Production takes place at its two 15th Avenue locations where fish is received, handled and processed, and delivery is organized.

Freund’s Fish Market imports its products from approved sources

worldwide. Its’ broad range of products include fresh, frozen and breaded fish, ready to bake dishes, marinades, seasonings, gefilte fish and kishke, for both retail and commercial consumers.

The Kitchen started out selling just a few products

and expanded rapidly over the years. Today, Freund’s Kitchen produces hundreds of products daily! They sell, among other products, superior quality smoked halibut, smoked Chilean sea bass, and smoked Norwegian salmon, grilled and fried fish. The company manufactures over hundred varieties of dips and salads, and over fifty flavored herrings. Their professional chef on-site also specializes in pre-seasoned and spiced raw fish for at-home and commercial baking.

With a product line ranging from wraps

to sushi, salads to kugels, customers use Freund’s Kitchen as a one stop provider for all their needs. Freund’s Kitchen has earned a reputation as one of the most popular appetizing and takeout spots in Brooklyn and beyond.

In 2006, Pincus Freund established Freund’s Kitchen, the wildly popular takeout store after noticing that quality

appetizing was slowly becoming nonexistent. He put top notch herring, dips, kugels and many other products back on

Sushi Maven, the third Freund’s site, located on Dahill Road

in Brooklyn, sells and supplies restaurants and wholesalers with all sushi related products. The range of products being sold includes ginger, nori, rice, rice vinegar, tempura batter mix, sesame seeds, wasabi powder, surimi, sauces, bamboo mats, seaweed salad and sushi packaging products. The products are sourced from many sites abroad and in the USA.

The company’s sushi grade fish is filleted at the Sushi Maven

state of the art facility. The trained fish cutters ensure that only the freshest fish is shipped out.

Freund’s and Sushi Maven maintain warehousing space

of 25,000 square feet at their Brooklyn locations and a total of over 44,000 square feet at third party freezers and warehouses.

After expanding the takeout department, Freund’s Kitchen was having difficulty obtaining kosher certified ingredients to develop

their now famous line of sushi. They began manufacturing some products on their own; the first seeds of the sushi emporium that

is now known as Sushi Maven. Beginning with ginger and nori and slowly expanding their repertoire, in 2009 the official company was

launched and they haven’t stopped breaking new ground since.

Operations

Inventory is ordered strategically in advance. The products are trucked in from farms, fisheries, ports or airports and brought

to the company’s central locations. Fresh fish is packed in ice, and frozen fish arrives entirely frozen in temperature-controlled trucks. The receiving department inspects the fish, separating products of inferior quality to promptly be returned to its vendors.

Fish appropriate for sushi has distinct characteristics that ensure its quality and thus must be handled with proper care. The

fish is inspected for sea lice, pesticides, and other parasites, then cleaned and scaled. It is then subject to a second inspection by a dedicated inspector familiar with the laws of Kosher. After the fish is clean and has cleared inspection, it moves to the fillet table where the processor will cut, skin or fillet the fish according to customer specification. The packaging department hygienically seals the fish packages with the proper labeling and handling instructions. The packaged fish is boxed in ice and sent to the Shipping Department.

Shipping and Delivery

The shipping department develops routes to ensure that the fish arrives at its destination as quickly as possible. Boxes are

counted and sorted for delivery; dated labels are affixed. A FIFO (first-in, first-out) system is implemented to ensure freshness. The company runs a fleet of refrigerated vehicles used for delivery.

Deliveries are made locally throughout the day, and

deliveries within the tristate area are also delivered daily by truck. Orders shipped out of the tristate area are sent via common carrier. Delivery vehicles have GPS trackers that enable the shipping department to monitor their temperatures and connect with the drivers to ensure full efficiency in transit.
