07 nOrth Lake LOcaLOn Friday, August 19th, art lovers once again came out to stroll up and down Ruby and Main in downtown Tavares to peruse the artwork displayed by local artists. This quarterly event was the third hosted by the Tavares Chamber of Commerce’s Downtown Business Development Committee this year and had a great turnout!

13 sOuth Lake LOcaLOn August 26th various artists showcased and donated their art for a silent auction at the Jenkins Auditorium on Montrose Street. The event benefited New Beginnings of Lake County. It was requested that attendees donate $5 for the cause, and every ten minutes or so, there was a musical interlude performed by “a quartet of friends.”

I truly believe nothing says “Small Town America” quite like spending a Friday night at your local high school football game! The exuberance of the youthful players, the enthusiasm of cheerleaders, and the beat of a marching band… Since Dylan started at Tavares High School last August and joined the marching band, we have had the great joy of attending the games and supporting our Bulldogs!

For this month’s High School Football themed issue, we actually pulled together our biggest photo shoot yet! This month’s cover was a coordinated effort between the FOCUS staff and all eight of the Lake County Public School High School Football teams. Meeting and working with these great kids was more fun than I can begin to convey to you! The energy and camaraderie on the field, amongst the teammates and the rivals, was so much fun! I hope you enjoy getting to meet these players through this feature as much as I did in person!Of course, my love of the game of football is well documented and while I may wear the red and white for the Bulldogs on Friday… Come Sunday it’s the Blue and Silver of the Dallas Cowboys from head to toe!

Whatever team you support, or even if you just come out to support the band, take the time this fall to appreciate one of our American pastimes and support your local football team!As always…. Go Cowboys!

chamber happeningsEustisThe Lake Eustis Area Chamber of Commerce held it’s monthly member breakfast on August 11th. Over 90 members attended the event sponsored by The Mortgage Firm, Inc. The CEO of that company, Brett Lindquist spoke about being successful in a down market. Members were also able to hear remarks from former Florida State Legislator, Carey Baker who provided a review of key pieces of legislation passed earlier this year. Mr. Baker was the first in a series of breakfast speakers who have been invited to talk about key issues affecting businesses. Next month’s special guest is State Representative Larry Metz.

The August Lunch & Learn Seminar featured Jennifer Dempsey from 5th Monkey Interactive Marketing Agency. This session drew over 30 people who were interested in her presentation, “Social Media Strategies for Small Business Success.” The topic is so popular that future sessions are being considered.

LeesburgSunset Connections was held on August 18th at Lake Port Square. The theme was Cheeseburgers in Paradise. Everyone had a great time and enjoyed networking.The Leesburg Chamber Sunrise Breakfast, held on August 25th, was at Leesburg Community Building. The sponsor was

Beyers Funeral Home and the speaker was Dr. Barbara Wolf, who spoke on “Trials of the Century, Forensic Science in the Courtroom.””

TavaresTavares Chamber of Commerce, in conjunction with Lake Eustis Area Chamber of Commerce participated in a Scavenger Hunt as part of their Ribbon Cutting to welcome the Belton Financial Group, of Raymond James to the Downtown Tavares business community on August 25th. Guests followed clues as they were introduced to the beautifully renovated building, located at 531 W Main Street, Tavares. Refreshments were provided by Casa Mia.

The Safe Climate Coalition of Lake County, Inc. was awarded a 5 year, $650,000 Drug Free Communities Support Program FY 2011 grant by the White House Office of National Drug Control Policy and the Substance Abuse and Mental Health Services Administration. The Safe Climate Coalition is a non-profit organization which works with the community to educate and increase awareness on the importance of a drug and alcohol free climate for our youth.

Downtown tavares hosts art around town

On Friday, August 19th, art lovers once again came out to stroll up and down Ruby and Main in downtown

Tavares to peruse the artwork displayed by local artists. This quarterly event was the third hosted by the Tavares Chamber of Commerce’s Downtown Business Development Committee this year and had a great turnout! Artists work lined the sidewalks, porches, patios, and interiors of the hosting local businesses.

Approximately eighteen businesses hosted artists for this end of summer Art Walk, providing a wide variety of art of different mediums for visitors to admire. Event goers were also given an opportunity to win one of the amazing prize baskets, filled with goodies and gift certificates from the downtown businesses. All they had to do to qualify for the gift baskets was to visit at least seven different businesses and get their

map stamped to spell out “TAVARES.” They were then entered into a drawing to win the prizes.

Many of the host businesses also provided light refreshments and live musical entertainment for those who came out to enjoy the art stroll. New business, Living Green Health Foods, coupled the Art Stroll with their first day of business, hosting an artist and welcoming guests to check out their new store and sample some of the green foods they have for sale. Living Green is located in the Tavares Station building at the corner of Ruby and Joanna (same building as the FOCUS Magazine office).

The Lake Eustis Area Chamber of Commerce teamed up with the downtown dining establishments to

introduce the first “Dine Around Downtown Eustis” on August 17th. The collaborative effort of the Chamber and the downtown businesses allowed diners to purchase advanced tickets to the dining event! The tickets were sold for $20 in advance and $25 the night of the dinner and they completely sold out! A great feat for a first time affair.

The progressive dinner started at 5:30 at Gianni’s with a glass of wine and a Flat Bread appetizer, before guests moved around the block to Olivia’s Coffeehouse where

they enjoyed one of her delicious signature salads and beverage of choice. The fun and camaraderie continued, as the group ambled on down to Michael’s at a Third Place for the main entrée of Filet and Risotto. They tried to walk some of that off to make room for dessert at Doodlebugs Cupcakes, where they sampled a variety of fresh baked sweet goodies!

The event was a smashing success and the Chamber is already working on planning the next one for early December! For information on how you can get tickets, call the Chamber at 352-357-3434.

teacher appreciation breakfastFor more than 20 years the South Lake Chamber has hosted the Teacher Appreciation Breakfast. This year the annual Teacher Appreciation Breakfast was hosted by the Chamber, Pig on the Pond and the Community Foundation on Thursday, August 18 at the Wesley Center. A crowd of more than 800 teachers and administrators were in attendance. Each Teacher of the Year received $500 and a plaque and each Rookie Teacher was presented with $250 and a rolling cart donated by Office Depot. The carts were filled with supplies donated by BankFIRST and the Chamber. They were part of the People to People Ambassador Program. inspiration comes from that which is inside that we want to share with the world. Arts for a Cause is Amanda

Mendoza’s conception as a way to give back to non-profit organizations. A visual and performance artist herself, Mendoza wanted “to find a way for artists to use their talents for a good cause.” Arts for a Cause is a community event that takes place throughout the year to raise money for non-profit organizations.

On August 26 various artists showcased and donated their art for a silent auction at the Jenkins Auditorium on Montrose Street. It was requested that attendees donate $5 for the cause, and every ten minutes or so, there was a musical interlude performed by “a quartet of friends.” The quartet played some wonderful jazz pieces.

Arts for a Cause alternates the causes they support, and chose their first event at Jenkins Auditorium to benefit New Beginnings. New Beginnings is working diligently to improve the quality of life for homeless kids and adults through donations for food, and to continue the community center

renovations. Founder and President, Steve Smith said, “There have been 2,300 homeless kids identified in Lake County, and others we don’t know about. Teenagers sixteen, seventeen years old are not in school, and have been living in the woods, or cars.”

The silent auction featured artists who auditioned to donate their paintings, photographic art, and frames to raise money for New Beginnings. Mendoza was inspired to give local artists an outlet in order to put forth their talent towards helping the community and what better way to aid those less fortunate than by achieving it with art, an expression of emotion and profound translation of the world around us? Thank you to all who participated.

active is growing exponentially. Many reasons motivate our desire to be

physically active and fit: maintaining or improving health, reducing or eliminating medications, physical rehabilitation, desire to perform daily tasks functionally, recreational sports practice, fitness competitions, and professional sports. These reasons are creating or redefining the athlete in all of us, whether we are recreational athletes (individuals being consistently physically active by walking pets, practicing Yoga, playing with kids or exercising), industrial athletes (workers in all settings whether sitting at a desk or managing weight loads) or elite athletes (professional sport competitors).

Many methods have been studied and applied to help different populations accomplish their fitness goals. Music’s intention and its use, in addition to exercise have been of great interest to health professionals. Therefore, purposely using music to achieve fitness goals resulted from thoroughly and separately understanding, the benefits of music and physical activity to human beings.

On one hand, music has multidimensional qualities resulting in psychophysical changes (Roberts 2002). Accordingly, music style or genre, tempo, lyrics, volume, song mood, and melody correlate directly and in that order (Kravitz 1994) to positive changes in breathing (Fried 1990), heart rate, physical strength, rehabilitation, and endurance performance (Kravitz 1994). These music qualities also enhance higher levels of thinking that allow us to better absorb, retain and recruit information (Rabalais 2002). This will contribute to learning new exercises, especially when proper execution form and tempo are taught for future practice and progression. Researches also suggest that music increases motivation to exercise (Bernard 1993), exercise duration, decreases pain perception, anxiety (Kendelhardt AR 2003), as well as fatigue and depression (McKinney 1997), due to its ergogenic effect. This is the increasing capacity to endure labor by eliminating fatigue symptoms (Karageorghis 2006). Consequently, active

individuals, whether being recreational athletes, bobsleigh competitors, superheavyweight boxers, or elite track and field athletes will be inclined to workout harder for longer periods of time then achieve their goals (Karageorghis 2006).

On the other hand, exercise has been equally beneficial to active individuals. Relieving effects of age and chronic disease, increasing capacity for work and nutrient blood supply are just few examples of its advantages (Fentem PH 1994). Interestingly these benefits along with improved joint range of motion or flexibility, stability and lubrication can be enhanced through consistent motion. At the same time, consistency results from the inherent motivation to adhere to a plan. Therefore, how can we use something we naturally enjoy, which is also proven to create psychophysical changes in our bodies like music, with exercise which naturally involves health benefits or is driven by an elite goal?

Karageorghis and Terry (2006) proposed an evidenced-based method of selecting music and Kravitz (1994) emphasized on individual musical preference and nature of fitness goals in order to achieve them. The first researchers mention various uses of music with successful results: asynchronous (movement and music tempo being independent from each other), synchronous (conscious synchronization between movement and music tempo), stimulant (mid-fast tempo [126-152 beats per minute or bpm] or energizing music), and sedative (slow tempo [100-120 bpm] or relaxing music [0-100-0 bpm]).

With this in mind create a plan of action according to your musical preference:

(1) Define your fitness goal or vision: reducing weight, muscle tone up, improving performance, maintenance, rehabilitation.

(2) Consult an exercise professional about the proper way of progressing workouts.

(3) Consider warm-up, main workout, cool-down and overall time available.

(4) Choose motivating, energizing, inspiring, relaxing favorite songs, and organize them to gradually increase and decrease tempo in your playlist according to the desired target heart rate zone in your workout. Use tempi previously described as a guide.

to Follow your dreamsthe courageThe moment struck me like a bolt of

lightning. It is a flash bulb memory that released a flood of emotions. It was a

simple question that made me think and made my heart smile with a radiance that very few EVER feel.“How did you find the courage to follow your dreams?”

The question, from a friend, send my memory back almost a year and a half. In a devastating economy I had a good job; I worked full time, had retirement, health insurance and paid vacation. It was dream job. Yet a growing piece of me was restless and bored. I had certain wanderlust and need that I just couldn’t fulfill at my job.

So in the midst of the record unemployment and financial woes I left my job to go out on my own as a personal fitness coach.

At the time I had no money, no location, and no real plan. All I had was faith in me and faith in the fact that things would work out.In the end they did but not before some more storms.

Just after going out on my own I went through a divorce then the man who has always been my rock, my father, passed away.Through these trying times I held to the belief that I can do it; that I have the courage to follow my dreams.

Times have not been easy. The road has been a broken one but the light, as it ALWAYS does, is shining for me at the end of the tunnel. I’ve made it though the tough times and now my business is growing. I’ve met and fallen in love with the girl of my dreams and am planning a wedding.

Things are looking good now.

My response to the above question is this, “How do you not have the courage to follow your dreams?”

This life is way too short to sit back and wonder why you aren’t living the life of your dreams. Stand up to your life and say “I have the courage to follow my dreams…”

Today I sit here and wonder how I ever lacked the courage to follow my dreams…”and I am so thankful that I did because I am living an AMAZING and RICH life and wouldn’t trade it for the world.

For parents

it’s time for the new school year to begin in Florida. We have thousands of students shifting from their familiar

elementary and middle schools into unfamiliar territory with new peers, new teachers and new school norms to navigate.

We know that these times really challenge youth and their parents. One challenge is that beginning at age 11 and not ending until the mid-20s the human brain begins to change. It prunes connections from early childhood that aren’t being used and builds new ones to prepare for adulthood. In addition, the fully developed emotional part of the brain slows down to help the brain continue to develop other functions, such as decision making.

This set of physical developments adds confusing signals to an already hectic time for teens and their parents. As with early childhood, teens at this stage need a lot of support, very specific types of experiences and training to help their maturing brain develop capacity.

Most of Florida’s youth don’t drink alcohol, but this is a dangerous time as the developing brain also leads to increased risk taking. In Florida we’ve launched a social

marketing campaign for parents who are navigating these waters.

Its message is welcome news for parents who are struggling to keep up with their teens’ shifting emotions during this normal developmental stage.

Be The Wall is a statewide social marketing campaign. Sponsored by the Florida Governor’s Office of Drug Control, Florida Department of Children and Families, and the Strategic Prevention Framework State Incentive Grant.

What is the “Be the Wall” Campaign?

The process of sealing or expunging one’s criminal record may appear complicated and overwhelming at first, but in most

cases, the process can be easily completed by anyone with little to no legal experience. The process does not necessarily require the legal advice or assistance from an attorney, and the first steps toward sealing or expunging your record are outlined in detail on the Florida Department of Law Enforcement’s (FDLE) website: www.fdle.state.fl.us/expunge/. The FDLE website includes the required documents for the Expunge/Seal Package, which was previously obtained only through the local law library or other designated locations, but now, these instructions and documents are available for free from this website.

After accessing the FDLE website, it provides links to the laws governing the

sealing or expunction process. While these laws should be read and considered carefully, the process will include much of that information along the way. The next link provided, “Instructions for Applying for a Certificate of Eligibility,” details the requirements for a Certificate of Eligibility used to petition the court to seal or expunge a criminal record. These requirements are also your checklist after completing the Expunge/Seal Package and should be completed in full prior to sending the information to FDLE.

The requirements include completing and signing Section A of the Expunge/Seal Package before a notary public, completing the fingerprint form of the package in which you must be “fingerprinted by authorized law enforcement personnel or a criminal justice agency,” providing a certified disposition of

the case you are attempting to have sealed or expunged which “may be obtained from the Clerk of Court in the county in which the charge(s) were brought,” enclosing a “nonrefundable money order or cashier’s check for $75.00 made payable to the FDLE, and “if you are requesting an expunction of a criminal history record, you must have the state attorney or statewide prosecutor complete Section B of the application.” (FDLE website)

The fourth link down, “Download Expunge/Seal Package (Required Documents),” contains everything you need to complete the package for FDLE. Section A of the Expunge/Seal Package must be completed and signed before a notary public. This section includes your basic identifiable information, the option to Expunge or Seal, spaces available for the charges you wish to seal or expunge, and also spaces for the notary’s identifiable information. Section B of the Expunge/Seal Package is completed by the state attorney or statewide prosecutor only if you wish to have your record expunged, and Section C is completed by FDLE only. The package also includes General Instructions and

Information with Applicable Law, Mailing and Contact Information to FDLE, and it also includes Reasons an Application for Certificate of Eligibility to Seal or Expunge a Criminal History Record Will Be Denied and Disqualifying Charges for Expunction/Sealing. Finally, the package also includes the Fingerprint form which requires your basic identifiable information again, spaces for the signature of the official taking fingerprints and the person fingerprinted, and spaces for all fingers to be printed.

After completing the Expunge/Seal Package, the last page of the documents is a standard checklist for Section A, disposition of the case, fingerprint form, and a $75.00 check or money order to FDLE. Please confirm all sections have been completed, because a missing document will only add further delay to the normal timeframe of six months to a year for processing. All of this information may appear complicated and overwhelming at first, but once again, this process can be easily completed by an individual with little to no legal experience and does not necessarily require the legal advice or assistance from an attorney.

Thinking of relocating from south Florida, Olivia Spilotros and Fred Ledden visited a Eustis First Friday

Street Fest looking to enjoy some great music by local performers. The charm of the downtown and spirit of the people hooked them immediately. Fred turned to Olivia and said, “Any town that shuts down on a Friday night every month to have a big street party with live music is our kind of town.” Three years later, they weren’t just living in Eustis, but were owners of a successful coffeehouse and wine bistro, and involved, committed members of the Eustis community.Located in the heart of downtown Eustis, Olivia’s Coffeehouse is an eclectic, artistic setting with a beautiful view of Lake Eustis. As music lovers, Fred and Olivia wanted to create a place for the many talented local musicians to perform, especially folk, acoustic music. The rest of the details for the coffeehouse came together around that desire for a musical venue. The coffehouse’s menu evolved over time and uses a combination of recipes contributed by both Fred and Olivia. Olivia’s Coffehouse

is open for breakfast, lunch, and dinner six days a week. They serve a full line of specialty coffees and teas, as well as fresh pastries which are prepared daily, such as muffins, scones, and biscotti. The menu also includes breakfast sandwiches and sausage gravy and biscuits. However, their homemade quiches usually steal the show. Choose from a Spinach and Feta Cheese Quiche or Quiche Lorraine, with bacon and three cheeses. The quiches are served with their special recipe Waldorf Salad on the side. For the lunch and dinner crowds, the menu has a large selection of soups, salads, sandwiches, and wraps. “Fred’s Amazing Chili” is one of the most popular menu items and is available by the cup or bowl, as is their soup of the day. O’s Signature Salads feature fresh ingredients and delicious homemade dressings. Whether resting on top of a bed of greens, stuffed in a tomato, spread between two slices of bread, or wrapped up in a tortilla, O’s Famous Chicken Salad is aptly named, as it almost needs its own fan club due to its popularity! They also have a broad selection of wraps

which Fred and Olivia describe as “healthy gourmet.” With mouth watering choices such as a Chicken Cordon Bleu (with breaded chicken tenders, sweet ham, and swiss cheese) or Chicken Picata (with chicken breast meat sautéed with tomato, artichokes, garlic, and olive oil and topped with spinach and mozzarella) or O’s Turkey Brie (sliced turkey breast, Granny Smith Apples, Brie Cheese, and baby greens), your biggest complaint will be having to choose just one! For the purists, they do have “Just Plain Jane” which are your basic lunch meat sandwiches on your choice of bread.

If you are looking for something lighter to go with a glass of wine or a cold beer, their “Lite Bite Delights” is sure to have something which will pair perfectly. For the diner with the sweet tooth, the tasty desserts are guaranteed to satisfy. All the cakes, pies, cobblers, and scones are homemade and completely decadent. Olivia’s Coffeehouse has also become a popular hangout for live entertainment as well as special events. Their proximity to the Bay Street Players theater has made them a popular spot to catch a bite to eat or a drink before or after the show. They organized a “Bob Dylan Night” in conjunction with the theater this past March, which included four to five bands doing their own version of Bob Dylan songs in tribute to great musician. Fred and Olivia are also supporters of the Lake County Folk Festival which will take place throughout downtown Eustis October 8th & 9th with forty-six groups scheduled to perform. Olivia’s Coffeehouse will be one of the venues and will have music from 10am-10pm on Saturday and 10am-5pm on Sunday.
