How to prepare:

Beef 1. Blend the lemongrass, spices, garlic, ginger and red chillies in a small blender.2. Add in the soya sauce and sesame oil to make a paste.3. Rub the marinade into the beef shin and cover with cling film. Allow to marinate for at least two hours, or

up to 12 hours, in the fridge.4. Place the beef shin on a rack in a large oven-proof roasting dish. Add 500ml of white wine, 2 halved

onions and half a head of garlic.5. Cover with a lid or foil and place in a preheated oven at 150oC for 3½ to 4 hours.

Add a small amount of water into the tray during cooking.6. Remove the beef from the oven and allow to cool.

Beef brothSieve the cooking juice in a large pot, add the Asian concentrated stock and water and bring to boil. Check the seasoning!

How to prepare:1. Cut the beef in 2.5 cm bite size.2. Roughly chop the onions, carrots and celery.3. Pan-fry the beef in a large pan with the oil until browned.4. Add in the vegetables, red wine, tomato paste and bouillon.5. Cook on a low heat for 2 hours or until meat is tender.6. Once cooked, separate the meat from the liquid leaving the vegetables in.7. Blitz the vegetables in the sauce using a hand blender and pass through a

chinois (This will thicken the sauce naturally).8. Pan-fry the lardons in a large pan and reserve.9. In the same pan, sauté the mushrooms and reserve.10. Glaze the baby onions with a little water and sugar and reserve.11. Put the meat back in the sauce.12. Add the onions, mushrooms and lardons.13. Check the seasoning.

Serve with freshly cooked egg tagliatelle.
