money-saving tip: Look for couscous in bulk bins at many markets.

Combine couscous and chopped apricots in a heatproof bowl. Pour boiling water over just to cover. Fluff with a fork and add a little more water if necessary. Keep fluffing the couscous periodically as you chop the carrots, celery and red pepper.

Moisten the couscous with olive oil and sherry vinegar or lemon juice. Add salt and spices, and stir. Toss in veggies and stir. Blend in parsley and mint to taste. Top with pistachios and serve.
