The Beverage Quality section is designed to educate SUBWAY® franchisees on the

importance of serving a quality beverage in your restaurant to increase soft drink and

tea sales. This section will educate you on the recommended daily, weekly, monthly

preventative maintenance routines for maintaining your FUZE Brewed Tea

Equipment. At the end of this module, you will be able to:

• Describe why Beverage Quality is important

• Describe the components of a quality beverage

• Implement the required quality routines in your restaurant to minimize service

expense and increase dispenser uptime

Why is Beverage Quality Important?

Maintaining your soft drink system will ensure you are dispensing soft drinks at the

Coca-Cola® “Gold Standard” specifications. Every drop you serve is an opportunity

to increase soft drink sales and profits. The foundation of the basic “Beverage

Marketing Pyramid” is the “Optimal Guest Experience”. Good food + a good drink.

= the “Optimal Guest Experience”. Customers recognize and reward an “Optimal

Guest Experience” with repeat business. Your personal involvement is the only way

to ensure the customer gets a quality soft drink every time.

FUZE Overview

Because food safety is in the forefront of every foodservice operator’s mind,

executing “safe” tea replenishment routines and comprehensive cleaning and

sanitizing of the FUZE brewed tea equipment is critical to delivering a safe tea

product to Subway consumers.

At the end of this section, you will be able to:

• Successfully brew a 1.5 or 3 gallon urn of FUZE tea

• Understand the hazards of storing FUZE tea beyond 6 hours

• Correctly perform the necessary daily/monthly equipment cleaning routines to

ensure you are delivering a safe tea product

• Correctly troubleshoot the most common tea brewing equipment problems to

minimize service expense

Importance of Water Filtration

Importance of Water Filtration & FUZE Tea

Brewed leaf tea is 99% local water. Its flavor is such that the quality of the water

and condition of the brewing equipment is crucial to a quality fresh-brewed iced

tea product.

Using pure filtered water is important to the quality of your FUZE product and your

brewer performance.

Pure filtered water will:

• Reduce sediment and chlorine taste and odor ensuring tea-beverage quality,

consistency, and customer satisfaction

• Reduce sediment and abrasive hard particles to help prevent wear on the

BUNN equipment and extend the life of pumps, valves ,o-rings, and seals

• Save energy, lower your maintenance costs, and help maintain the steady

performance of your BUNN brewer.

Water filter cartridges must be changed once a year in your restaurant to ensure

that you provide your customers with the best tasting FUZE tea product possible.

Brewing TeaFUZE Tea Brewing Procedures

The Bunn tea brewer has flexible brewing capabilities and can brew either a 1.5 or 3

gallon brew of tea depending on your restaurant’s demand. When brewing FUZE tea

with the Slimline unit, both tea urns can remain on the BUNN brewer with the use of a

specially designed diverter kit.

The diverter kit includes a diverter to direct the water into each urn, a new rotating

funnel and installation and brewing instructions. It is a recommended, non-compliance

item. Replacement pieces can be ordered through your FWH coordinator. The

rotating tea funnel (item no. 78695), costs $10.69 and the brewer diverter (item no.

78696), costs $3.99. If the diverter kit is not used, a single urn should be placed in the

middle of the brewer directly underneath the brew funnel during the brew cycle.

When the brew cycle begins, hot water will be dispensed through the brew basket and

ambient water will be dispensed through the black nozzle mounted on the Slimline

brewer behind the brew basket.

Brewing TeaFUZE Tea Brewing Procedures

The SUBWAY® authorized BUNN tea brewer offers brew flexibility for either 1.5

gallons or 3 gallons of fresh FUZE iced tea.

For preparing a 1.5 gallon brew:

• Use only 1 (one) tea bag for each complete brew cycle

• Make sure to use the GRAY COLORED quick brew, basket

• Place the tea bag in the center of the brew basket and replace the brew

basket in the brewer

For preparing a 3 gallon brew:

• For a 3 gallon brew of FUZE tea, place 2 (two) tea bags in the center of the

brew basket next to each other. Never stack the tea bags on top of one

another.

Brewing TeaFUZE Tea Brewing Procedures

SUBWAY® restaurants should brew FUZE tea 30 minutes prior to planned serving

time. Restaurant staff should complete the FUZE tea brewing log to keep up with

FUZE brewing times and ensure brewed tea is not being held longer than 6 hours.

Tea held more than 6 hours MUST be discarded. Freshly brewed FUZE tea

should never be mixed with old tea.

Executing safe tea replenishment routines within the restaurant are critical to the

safety of dispensing a quality FUZE tea product.

The primary cause for high bacteria counts found in tea served by food

establishments is related to excessive holding times and/or poor cleaning and

sanitizing procedures.

Display Screen

When the brewer is ready to brew tea, the display screen message “ready to

brew”. The water temperature must be 205 degrees Fahrenheit or 96 degrees

Celsius before the BUNN brewer is ready to brew.

• Make sure the Enable Brew indicator light comes on.

• Press the button labeled “HALF” to make a 1.5 gallon brew of tea and press

the button labeled “FULL” to make a 3 gallon brew of tea.

• Select the appropriate BREW BUTTON to brew a batch of FUZE tea.

• Allow the brew cycle to finish before adding the correct flavor pack

• Discard the tea bag from the brew basket immediately after the brew cycle is

finished

• Never re-use a tea bag.

Once the brew cycle is complete:

• Empty the entire contents of 1 correct flavor pack into the 1.5 gallons of

freshly brewed tea

• Empty the entire contents of 2 (two) flavor packs into the 3 gallons of fresh

brewed tea.

• Use a long, clean stainless steel spoon that will reach the sweetener in the

bottom of the tea urn. Mix extremely well stirring enough times until the entire

contents of the package are fully dissolved with no remaining flavor/sweetener

on the bottom of the container can be seen.

• Immediately place the lid on the tea urn.

Urn Cleaning ProceduresCleaning the FUZE Tea Urn

1. Place the dispensing urn inside a 3 compartment sink. Fill the urn with a solution

of dish detergent and hot water. Thoroughly clean the inside surface of the

dispensing urn using a small brush to remove any dried particles. Clean all inside

parts. Thoroughly rinse the dispenser with clean water.

2. Add sanitizing solution to the urn, and let stand for at least 1 minute. Empty out.

3. Allow the dispenser to air dry completely.

Wash, rinse, and sanitize the brew basket in the three compartment sink after

each brew.

Daily cleaning of the tea urn faucet is essential to serving a safe quality tea

product. Dirty faucets can become rancid and create an off-taste for the FUZE tea

product.

Step 1: Turn the faucet in a

clockwise direction while

holding the faucet wing-nut

and remove the faucet

from the dispenser.

Step #2 - Unscrew the

faucet cap from the faucet

body and disassemble all

faucet parts

Step #3 – To disassemble

the faucet cap, use your

thumb and press up on the

faucet seat cup

compressing the spring.

Step #4 - With the slotted side

of the plunger stem towards

you, slide the faucet handle

forward freeing the notches in

the handle from the slots in the

plunger stem.

Step #5 – Remove the

faucet cap from the

plunger stem.

Step #6 – Remove the

spring from the plunger

stem.

Step #9 – Place the urn

faucet parts in the food

pan with dish detergent.

Step #7 – Remove the

plunger stem from the

faucet seat cup. Inspect

the faucet seat cup for

wear and tear to avoid

faucet leaks and replace

if necessary.

Step #8 – Using two clean, empty, food

pans, place the food pans in the 3

compartment sink. Fill one food pan with a

solution of dish detergent and warm water

and fill the other food pan with sanitizing

solution.

Daily Urn Faucet Cleaning

Step #10 – Use the bristle

brush found in your

maintenance kit to thoroughly

scrub the faucet body, and all

other parts, to remove any

foreign particles.

Step 11: Remove the

parts from the dish

solution, rinse and place

in the food pan filled with

sanitizing solution and

allow to sit in the solution

for one minute.

Step #12 – Remove the faucet

parts from the sanitizing

solution and allow parts to air

dry.

Reassemble the faucet parts in

reverse order of steps 1

through 7.

Brewer Cleaning Procedures

Step #1 – Remove the

spray head from the BUNN

brewer daily. Make sure

this step is not performed

after brewing as the spray

head will be hot.

Step #2 – Remove and

thoroughly wash, rinse and

sanitize the spray head.

Use the spray head

cleaning tool received in

the maintenance kit to

make sure the spray head

holes are open and clear of

any mineral deposits.

Step #3 - Use the spray head

cleaning tool to clean the

spray head tube.

Step #4 – Wipe the spray head

panel clean with a damp

cloth. Caution: Make sure

this step is not performed

right after brewing tea as this

area will be hot.

Step # 5 – Reattach the

sprayhead after cleaning.

Step #6 – Wipe down the

entire outside surface of the

brewer with a clean damp

cloth.

Monthly Cleaning – Once a month, replace the

faucet seat cup . This is critical as wear and

tear on the faucet seat cup is the most likely

cause of leaks in the dispensing faucet handle.

Discard the old faucet seat cup.

A brewed tea cleaning log has been developed by FWH to assist restaurant

staff with tracking the recommended daily cleaning procedures for the

FUZE tea equipment. This log is available at Subway Partners>Restaurant

Operations.

One FUZE tea maintenance kit was shipped with each new FUZE tea brewer to

assist restaurant staff with the recommended daily brewing and cleaning FUZE tea

procedures. Replacement kits can be ordered through BUNN using part #

41812.000.

• Recipe Card Update

– All restaurants installed before April 1,

2009 must update the recipes on their

BUNN brewer.

– A maintenance kit with the new recipe

card was shipped to all stores affected.

– To check if a brewer has the updated

recipes, turn off the brewer by pressing

the "Enable Brew" button. Then, press

"Brew A."

– The display should read "Green Tea." If

it does not, the brewer needs to be

updated.

– If the recipe has not been updated,

contact BUNN to order a new recipe

card kit using part #42037.0000.
