Preface
The Department of Economics & Statistics, Government of Kerala is the nodal agency for
collection, compilation, analysis of statistics relating to various sectors of Kerala Economy. The
Department is conducting ad-hoc surveys and studies on subjects of importance for planning
and development purposes by considering data needs and relevance. The hotel & Restaurant
industry in Kerala thrives largely due to the growth in travel and tourism industry, which is an
important employment generating sector and a significant source of foreign exchange for the
State. Due to the increase in tourism with rising foreign and domestic tourists; hotel &
restaurant industry has grown in the State.
2. Though statistics on foreign and domestic tourist’s arrival is available, no detailed
statistics relating to industry specific statistics like labour force, income generated etc are
available.
3. In this context, the Department of Economics and Statistics decided to conduct a survey
on Hotel & Restaurants in the State and subsequently has conducted a complete enumeration of
all such units functioning in the State, in order to get information about the number, activities,
characteristics, employment, income etc by utilizing the 13th Finance Commission award.
4. This report is prepared by Sri.Kiran.S, Research Officer under the guidance of
Sri.P.V.Babu, Additional Director (State Income) and Smt.C.S.Lathakumari, Joint Director,
Survey Design Division of the Directorate of Economics & Statistics. The schedule for data
collection was prepared by Sri.K.R.Pradeepachandran Nair, Research Officer of the Survey
Design Division. I record my gratitude to all the members of the survey coordination committee
and staffs in the Survey Design Division of this office for their sincere efforts.
5. At district level, the survey was supervised by the Deputy Directors and Research
Officers of the district offices and at Taluk level, Taluk Statistical Officers and Statistical
Inspectors. The data collection was carried out by the enumerators hired on a contract basis who
worked under the immediate supervision of Statistical Investigators working in the various
Taluk Statistical Offices. I acknowledge the tireless work done by all of them to make the survey a
success.
6. Admirable cooperation extended by the staffs & owners of the Hotels and Restaurants in
the State is also acknowledged.

Chapter 1
Introduction
1.1. Survey on Hotel & Restaurants in Kerala
1.1.1 Department of Economics and Statistics conducts surveys and studies on
subjects of importance for planning and development processes. Tourism industry is a
major employment generating sector and a significant source of foreign exchange for
the country. The booming tourism industry has a cascading effect on the economy with
an increase in investment and employment.
1.1.2 Hotels and Restaurants have played an important role in the travel and
tourism industry. This sector is growing with the expansion of domestic and foreign
tourist arrival, medical tourism, spiritual tourism and thousands of people move daily
across the State.
1.1.3 Department of Economics and Statistics conducted the “Survey on Hotel
& Restaurants in Kerala” using the 13FC assistance to study this sectors role and impact
on the economy with regard to employment generation as well as income generation. A
complete enumeration of these institutions was carried out through the survey and
covered the registered and unregistered Hotels & Restaurants in the State.
1.2. Definitions
1.2.1 Hotel: A hotel provides temporary lodging, accommodation with or
without arrangements for meals, other prepared food and refreshments. Such
accommodation may be provided in furnished or in unfurnished rooms. Hotels may
also provide room service, lounge facilities, conference room, entertainment and other
facilities. However, hostels run by educational institutions and other private agencies
are excluded from the purview of the survey.

1.2.2 Restaurant: A restaurant is generally an eating place where prepared
meals, other food and refreshments and/ snacks are sold for immediate consumption
without any provision for lodging. Bakeries, ice-cream parlors and Hostel messes and
canteens run by educational institutions, factories, hospitals, companies etc. are
excluded from the survey.
1.2.3 Tea and Snack Stall: Tea and snack stalls provide tea, coffee, drinks and
snacks only and are functioning in permanent structures. Those shops which do not
have a fixed/permanent structure and selling eateries are not included in the Tea and
snack stalls1.
1.3 Objectives of the survey
1.3.1 The main objectives of the Survey were to ascertain
i. The total number of Hotels, Restaurants and Tea & snacks stalls separately.
ii. The activities of these enterprises.
iii. Employment generation and number of migrant labourers in this sector.
iv. The monthly and annual income and expenditure of these enterprises.
v. The fixed assets of these enterprises.

carts are known as “Thattukada” in regional language, and were surveyed separately by Department of
Economics & Statistics, Kerala and report published. (“Report on Thattukada Survey 2015”).

1.4. Methodology
1.4.1 The survey was conducted on census method. List of all such units were
prepared by the investigators through local enquiry by visiting all Grama
Panchayath/Municipalities/Corporations. The details of workers, facilities, assets, etc.
were collected from these institutions through direct enquiry method by the
enumerators posted on temporary basis.

1.4.2 The survey started in the month of October 2014 and field work
completed by February 2015. Data entry was done through the department’s online web
portal using the online data entry software developed by the Computer Division of the
department. Data entry work completed by the end of March 2015.
1.4.3 Statistical Investigators of the department supervised the primary work
under the directions and supervision of Taluk Statistical Officers and Statistical
Inspectors. The responsibility of conducting the survey in each district was vested
upon the Deputy Directors in the districts.
1.5. Limitations
1.5.1 Some of the Hotels and Restaurants in Kannur, Kozhikode, Ernakulam,
Kottayam, Alappuzha and Kollam districts were not covered in this survey due to non-
cooperation from the management side. Hence, the report is prepared based on the data
provided by those enterprises that were ready to share all information needed for this
survey.

1.5.2 It is to be borne in mind that, getting information on income and
expenditure is a cumbersome effort. However, best efforts were made to ensure data
reliability and accuracy while on data collection.

The findings presented in the chapters ahead are grouped into three sections viz.:

General Characteristics
SECTION 1: HOTELS
2.1.1 An overview of Hotels in the State
2.1.1.1 As per the survey, it is seen that there are 4,762 Hotels across the State, out
of which 17.9% (852) are in Thiruvananthapuram district followed by Idukki (749 or
15.7%) and Ernakulam (605) with 12.7%. The lowest number of units is found in
Kasaragod district with 72 units or 1.5% of the State total.

2.1.1.2 It is seen that, out of 978 Panchayats, 49% of the Hotels are distributed
over 415 Panchayats and out of which maximum number of Hotels (6.5% or 152) are
found in Pallivasal Panchayat
followed by Kumily (5.9%) and
Munnar (5.7%). In the case of
municipalities, 27% Hotels are
distributed over 60
Municipalities and out of
which maximum number of
Hotels (9.4% or 120) are found
in Varkala Municipality followed by Alappuzha (8.7%) and Guruvayur (8.3%)
Municipalities. 24% is the distribution of Hotels over the 5 Corporations and out of
which maximum number of Hotels (48% or 552) are found in Thiruvananthapuram
followed by Kochi (31.3%) corporation.
2.1.2 Ownership
2.1.2.1 In the case of ownership of Hotels, around 75% or 3,563 hotels are
functioning under proprietorship and 16.3% or 777 hotels under Partnership.

2.1.2.2 Out of 3,563 proprietors, 3,518 or 98.7% are Keralites with Male to Female
ratio 92:8. All the proprietors from other States are Male.

2.1.2.3 It is seen that 86.5% or 4,120 hotels are functioning in own building, 7.5%
or 357 hotels in rented buildings and 5.2% or 248 hotels in leased buildings. Building
area of 58.3% or 2,774 hotels lie in the range 1,201 to 5,000 square feet. Only 1% of the
hotels have building area above 50,000 square feet.
2.1.3 Services and activities
2.1.3.1 The different services
outsourced in a Hotel are Cleaning,
Payroll and accounting, Laundry,
Marketing, Repairing and
Maintenance, restaurants and Other
Services. It is seen from the survey
that repairing and maintenance work
is outsourced by 20% of the Hotels, 11% of the Hotels outsourced cleaning while 18%
outsourced laundry.

2.1.3.2 Regarding disposal of wastes in hotels, 64% of the Hotels are practicing
local disposal methods while 23% of the hotels are using the facilities provided by
agencies like kudumbasree. 6% of the hotels are using biogas.
2.1.3.3 Nature of activities of a hotel is classified into 4 types viz. Hotel activity
only, Hotel and BAR, Hotel with trading2 and Hotel, BAR and Trading. From the
survey, it is seen that 87.5% of the hotels engaged only in hotel business while 3.2% of
them are running commercial shops along with hotel business. 8.5% of the Hotels have
attached BAR facility and 0.8% has all the three activities viz. Hotel, trading and Bar.
2.1.4 Hotels with Restaurant
2.1.4.1 As per the survey, 38.3% hotels have restaurants and among which 9.3%
are vegetarian restaurants. 73.2% of the restaurants provide both vegetarian and non-
vegetarian food. LPG is the major source of fuel used in 90% of the Hotels and firewood
is used in 9% of the restaurants as major source of fuel.
SECTION 2: RESTAURANTS
2.2.1 An overview of Restaurants in the State
2.2.1.1 As per the survey, it is seen that there are 36,507 Restaurants across the
State, out of which, the maximum number of restaurants 4,303 (11.8%) are in
Thiruvananthapuram district followed by Malappuram (3,802 or 10.4%) and Palakkad
(3,696) with 10.1%. The lowest number of restaurants is found in Wayanad district with
953 (or 2.6%) restaurants.
2 If a hotel provides a separate portion (or commercial shops) for performing activity of buying and selling of goods of any nature along with their Regular activity, such hotels come under the hotel with trading category.

2.2.1.2 It is seen that, 76.7% of the Restaurants (i.e.28,005) are functioning in
Panchayath area, 14.6% or 5,323 Restaurants in Municipal area and 8.7% or 3,179
Restaurants in Corporation limits.

2.2.2 Ownership
2.2.2.1 It is seen that, around 92.9% or 33,927 Restaurants are functioning under
proprietorship and 6% or 2,191 Restaurants under Partnership.

2.2.2.2 It is seen that 68.5% of the restaurants are functioning in rented buildings.
As per the survey, 99% of the proprietors are from the State and only 336 of the
proprietors are from other States. Regarding the type of building, 53% of the restaurants
are functioning in Pucca buildings, 40% of them are in semi-pucca buildings and the
remaining under the category of kutcha buildings.

2.2.3 Building and dining area
2.2.3.1 It is seen that 94.7% of the restaurants are functioning in buildings with
area less than 1201 sqft and 65.5% of the restaurants have dining area in the range 101 to
500 sqft and 10% have dining area in the range 501 to 1000 sqft.
2.2.4 Restaurant Activities
2.2.4.1 Out of the total restaurants, 6,855 or 18.8% are Vegetarian Restaurants.
18,378 or 50.3% of the restaurants operate from Morning till night while 16,025 or 43.9%
of them operates from dawn to dusk.
2.2.4.2 LPG is the major source of fuel for 41% of the Restaurants while 54% of
the restaurants use firewood as the major fuel for cooking.

2.2.4.3 The different services

2.2.4.4 Regarding disposal of waste generated from restaurants, 82% of the
restaurants are practicing local disposal methods while 13% of the restaurants are using
the facilities provided by agencies like kudumbasree. Only 1.5% of the restaurants are
using biogas plant. 3.5% of the restaurants are using other means like feeding to
poultry/duck/pig/cattle farms, composting etc.

2.2.4.5 At State level, 74.3% of the restaurants are depending well/bore well for
drinking water whereas public water connection is used by 22.5% of the restaurants. In
corporation areas, 63.7% of the restaurants are using public water connection as the
source of drinking water and in Panchayath areas, 81.8% of the units are utilizing
well/bore well water.

SECTION 3: TEA AND SNACKS STALLS
2.3.1 An overview of tea and snacks stalls in the State
2.3.1.1 As per the survey, it is seen that there are 16,461 stalls across the State,
out of which, 82.6% of the stalls (i.e.13,593) are functioning in Panchayaths, 12.8% or
2,102 stalls in Municipalities and 4.7% or 766 stalls in Corporations.

2.3.1.2 Out of 16,461 stalls across the State, the maximum number of stalls 2,649
(16.1%) are in Thiruvananthapuram district followed by Malappuram (2,365 or 14.4%)
and Kollam (1,455) with 8.8%. The lowest number of stalls is found in Kasaragod
district with 192 (or 1.2%).
2.3.2 Ownership
2.3.2.1 It is seen that, around 98.76% or 16,257 stalls are functioning under
proprietorship and 1.13% or 186 stalls under Partnership.

2.3.2.2 At the State level, male to female ratio of proprietors is found as 91:9. In
Thiruvananthapuram District, the said ratio is 83:17 and in Malappuram, 98:2.

2.3.2.3 As per the survey, 99% of the proprietors are from the State and only 127
proprietors are from other States. 44% of the stalls are functioning in Pucca buildings
and 46% of them are in semi-pucca buildings. Also, it is seen that 61% of the stalls are
functioning in rented buildings and only 35.3% of the stalls in own buildings.
2.3.3 Activities
2.3.3.1 It is seen that 62.5% of the stalls are opened from morning to evening and
27.5% of them are working from morning to night. Firewood is the major source of fuel
for 41% of the stalls. LPG is used as major source of fuel by 51% and Kerosene by 5% of
the tea and snacks stalls.
2.3.3.2 Regarding waste disposal, it is seen that 93% of the stalls are practicing
local disposal methods while 5% of the stalls are using the facilities provided by
agencies like kudumbasree.
2.3.3.3 Only 16.8% of the stalls are depending public water connection as the
source of water while 79.7% of them are depending Well/Bore-well.

SECTION 1: HOTELS
3.1.1 General facilities
3.1.1.1 Facilities offered by hotels to its guests are presented in Table 1.19. It is
seen that 21% of the Hotels have Banquet / Conference Hall and 33% have online
reservation facility. Doctor on call facility is offered by 35% of the Hotels and 21% offer
pickup and drop service.

3.1.1.2 As per survey results, 28% of the Hotels in Kerala are having “Emergency
fire exit/ Fire Fighting Measures”. In Kozhikode and Thrissur district, 45% of the hotels
are having this while in Wayanad; the said percentage is 11%. The percentage of hotels
having this safety measure in Ernakulam and Thiruvananthapuram districts are 34%
and 30% respectively.

3.1.1.3 Regarding Eco-friendly3 practices, 21% of the Hotels are using solar
energy along with electricity and 11% of the hotels have rain water harvesting system.
3.1.2 Accommodation
3.1.2.1 As per the survey there are 77,973 rooms available in all Hotels in Kerala
out of which 54% are Non A/C Rooms with Attached Bathroom. The percentage share
of A/C rooms out of total rooms in all accommodation units come around 33% only.

3.1.2.2 In Ernakulam district, 51% of the Hotels are having A/C Rooms and in
Pathanamthitta, 23% of rooms are let out on monthly rent basis. In the case of Idukki
and Wayanad, only 7% and 17% of the rooms are air conditioned while 86% and 79% of
the rooms are Non A/C Rooms with Attached Bathroom.
3.1.2.3 A total of 4,828 beds are available in the dormitories in the hotels in
Kerala, out of which 442 beds are in air conditioned dormitories. Maximum number of
dormitory beds are available in Wayanad district (1,969 or 41%) followed by Ernakulam
(649 or 13%).

3.2.1.1 AT State level, only 4.6% of the restaurants have parking area and 41
restaurants have Banquet / Conference Hall. Debit/Credit card payment is accepted in
0.50% of the restaurants in the State.
3.2.1.2 Regarding Eco-friendly practices, 63 restaurants are using solar energy
along with electricity and 166 restaurants in the State have Sewage/Water treatment
facilities. 77 restaurants have rain water harvesting system.

4.1.1 An overview
4.1.1.1 Details of employees in Hotels were collected according to the categories
of workers viz. Managerial, Chef, Commis (trainee chef), Barman, Wine waiter etc.,
Waiters & Delivery persons, Dish washer /Cleaners (Restaurant & Bar),Supervisor
(Floor, Room, Public Area, Banquet etc.), Housekeepers, Room Attendants, Cleaners,
Engineers (Electrical Civil etc), Technicians (Electrical Civil etc), Accountant/Cashier,
Clerical/Administrative/ Front Office staff, Security, Drivers, Lift Operators,
Gardeners and Others.
4.1.2 Employment in hospitality sector
4.1.2.1 Number of employees in the hospitality sector who passed Hotel
Management Courses and those who have only working experience were collected
separately.
4.1.2.2 As per statement 4.1.1 below, it is seen that the ratio of male to female
employees in the hospitality sector is 80:20. In the hospitality sector, male to female
ratio of employees in the managerial cadre is 93:7 and that in the category chef is 89:11.
4.1.2.3 Ratio of employees who passed hotel management courses to employees
having only experience out of total employees in the hospitality sector stand at 26:74.
Ratio of employees who passed hotel management courses to employees having only
experience in the managerial cadre is 34: 66 and that in the category chef is 51:49.
4.1.2.4 Male to female ratio of employees passed hotel management courses in
the hospitality sector is 91:9 where as that of employees having only experience is 77:23.
In the case of chef, the said ratio is 95:5 and 82:18 respectively.

Clerical/Administrative/ Front Office staff, Security, Drivers and Others.
4.2.2 Employment in restaurants
4.2.2.1 Number of employees according to the categories viz. Managerial, Chef,
Commis (trainee chef), Waiters, Dish washer /Cleaners and Supervisor (Floor, Room,
Public Area, Banquet etc.) who passed Hotel Management Courses and those who have
only working experience were collected separately.
4.2.2.2 As per statement 4.2.1, it is seen that the ratio of male to female employees
in the restaurant specific sector is 82:18. In this sector, male to female ratio of employees
in the managerial cadre is 92:8 and that in the category chef is 74:26.
4.2.2.3 Ratio of employees who passed hotel management courses to employees
having only experience out of total employees in the restaurant specific sector stand at
2:98. Male to female Ratio of employees who passed hotel management courses to
employees having only experience in the managerial cadre is 3: 97 and that in the
category chef is 2:98.
4.2.2.4 Male to female ratio of employees passed hotel management courses in
the restaurant specific sector is 92:8 where as that of employees having only experience
is 82:18. In the case of chef, the said ratio is 91:9 and 73:27 respectively.

4.2.5.2 It is seen that majority of migrant labourers (full time and part time
together) in the restaurants in Kerala are from West Bengal (4,779 or 31.29%) followed
by Tamil Nadu with 22.07% and Assam with 15.19%.
4.2.5.3 Maximum number of migrant workers are found reported in Ernakulam
(21.5%) followed by Thiruvananthapuram (12.4%).
SECTION 3: TEA AND SNACKS STALLS
4.3.1 Employment in tea and snacks stalls
4.3.1.1 In most of the tea and snacks stalls, the firm is run by the proprietor
himself, along with some hired workers. As per the survey results, there are 27,211
employees (including working proprietors) in these stalls with male to female ratio
76:24. At the State level, the ratio of male to female employees is 76:24, and the ratio is
higher in Malappuram, where it is 93:7. In Pathanamthitta, the said ratio is 61:39.
4.3.2 Migrant labourers
4.3.2.1 As per the Survey results, there are 694 migrant workers engaged in the
tea and snacks stalls, which is 2.6% of the total workers. Out of these 694 migrant
workers, 96.7% or 671 are full time workers and 3.3% or 23 are part time workers.

Financial Aspects
5.0 General Concepts and Definitions
5.0.1 Working Capital: Working Capital means the total capital locked up in
stock of food, refreshments, drinks and other materials for use of the enterprise and
amount receivable and amount payable. Total capital locked up also includes various
stores and spares, other provisions for raw vegetables and other items, soft drinks,
crockery, cutlery, glassware and other utensils, blankets and other furnishing materials
of durable and semi-durable nature excluding fixed assets. Amount Receivable is the
sum of money due to the enterprise for goods sold, amounts advanced in connection
with the normal work of the enterprise, short term advance to staff etc. Amount payable
is the sum of money which the enterprise has to pay for materials purchased, short term
loans and advances taken by the enterprise, outstanding wages, rent, tax on purchase,
etc.
5.0.2 Fixed assets: Fixed assets include the assets of the units Vehicles,
Machinery and Equipments, Other fixed assets like furniture and all other equipments,
new or used, that have a normal economic life of more than one year from the date of
purchase regardless of their use. The value of the assets, whether fully paid or not,
owned by the unit is determined on the basis of monetary value the asset can fetch in
the present condition.
5.0.3 Total Emoluments: This include salaries, wages and allowances etc.,
bonus paid and value of benefits, if any, provided to all non-hired employees.

5.1.2 Expenditure
5.1.2.1 From the survey results, it is seen that, in October 2014, 35% of the total
expenditure was for paying salaries/wages to the employees and 8.5% for paying
electricity charges. In 2013-14, the above rates were 33% and 7% respectively.

5.1.4 Fixed Assets
5.1.4.1 The total value
of fixed assets as on the date

5.2.1 Working Capital
5.2.1.1 As per the survey, the total amount of capital locked up in the stock of
Food & beverages and other materials for use was Rs. 8,175.36 lakhs as on the date of
survey. Like the other two sectors, amount payable is much more than amount
receivable.

5.2.2.2 It is seen that, around 55% of the total expenditure incurred was for
purchase of raw materials for food & beverages and 6.7% of the total expenditure was on
account of fuel charges.
5.2.2.3 Emoluments to employees (October 2014 and 2013-14) of different
category viz. Hired full time and part time workers, supervisory and managerial staff,
working proprietors etc are presented in tables 2.22-A to 2.22-E. Statement 5.2.2 above
gives the breakup of expenditure.

5.2.3.2 It is seen from the survey results that, almost 97.5% of the Income in
October 2014 as well as 2013-14 were from Food & beverages and 0.5% from catering
services. Statement 5.2.3 above gives the breakup of income from different categories.

5.3.2 Expenditure & Income
5.3.2.1 The total expenditure incurred by Tea and Snacks Stalls in Kerala is found
to be Rs.6,337.66 lakhs and Rs.66,059.20 lakhs while income stood at Rs.7,754.75 lakhs
and Rs.80,996.49 lakhs during October 2014 and 2013-14 respectively. Statement 5.3.3
below gives district wise profit from Tea and Snacks Stalls in Kerala.

Rs. 37,122.15 lakhs. Rs. 404.07 lakhs spent for Purchase, construction, improvement etc during
2013-14.

Chapter 6
Summary of Findings
1) General Characteristics
a) HOTELS
i) There are 4,762 Hotels across the State, out of which, a maximum of 17.9%
(852) are in Thiruvananthapuram district
ii) 49% of the Hotels are distributed over 415 Panchayats and out of which 6.5%
of the Hotels ( 152) are found in Pallivasal Panchayat of Idukki district.
iii) 27% Hotels are distributed over 60 Municipalities and out of which 9.4% of
the Hotels (120) are found in Varkala Municipality
iv) 24% is the distribution of the Hotels over the 5 Corporations and out of which
48% of the Hotels (552) are found in Thiruvananthapuram corporation
v) 86.5% or 4,120 hotels are functioning in own building, and 7.5% or 357 hotels
are in rented buildings
vi) Regarding disposal of waste generated in hotels, 64% of the Hotels are
practicing local disposal methods while 23% of the hotels are using the
facilities provided by agencies like kudumbasree
vii) 38.3% or 1,822 hotels have restaurants, among which 9.3% are vegetarian
restaurants
b) RESTAURANTS
i) There are 36,507 Restaurants across the State, out of which, 11.8% of the
restaurants (4,303) are in Thiruvananthapuram district followed by
Malappuram (3,802 or 10.4%)
ii) 76.7% of the Restaurants (i.e.28,005) are functioning in Panchayaths, and out
of which 0.4% of the Restaurants (125) are found in Karakulam Panchayat of
Thiruvananthapuram district.
iii) 14.6% or 5,323 Restaurants are in Municipalities and out of which 5.9% of the
Restaurants (312) are found in Palakkad Municipality

iv) 8.7% or 3,179 Restaurants are in Corporations and out of which 30.2% of the
Restaurants (961) are found in Thiruvananthapuram corporation
v) 92.33% of the restaurants are functioning under proprietorship and out of
which 1% of the proprietors are from other states.
vi) 68.5% of the restaurants are functioning in rented buildings and only 28.7% of
the restaurants are functioning in own buildings
vii) It is seen that 94.7% of the restaurants are functioning in buildings with area
upto 1200 sqft
viii) 30.8% of the restaurants provide upto 10 seats and 44.1% of the
restaurants provide 11 to 20 seats
ix) Out of the total restaurants, 6,855 or 18.8% are Vegetarian Restaurants. 18,378
or 50.3% of the restaurants operate from Morning till night
x) Regarding disposal of waste generated in restaurants, 82% of the restaurants
are practicing local disposal methods while 13% of the restaurants are using
the facilities provided by agencies like kudumbasree.
xi) In corporation areas, 63.7% of the restaurants are using public water
connection as the source of drinking water and in Panchayath areas, 81.8% of
the units are utilizing well/bore well water.
c) TEA AND SNACK STALLS
i) There are 16,461 stalls across the State, out of which, 82.6% of the stalls
(i.e.13,593) are functioning in Panchayaths. The majority of stalls 2,649 (16.1%)
are in Thiruvananthapuram district followed by Malappuram (2,365 or
14.4%)
ii) 44% of the stalls are functioning in Pucca structured buildings and 46% of
them are in semi-pucca structured buildings and 61% of the stalls are
functioning in rented buildings
iii) Regarding waste disposal, it is seen that 94% of the stalls are practicing local
disposal methods while 5% of the stalls are using the facilities provided by
agencies like kudumbasree

iv) 16.8% of the stalls are depending public water connection as the source of
drinking water while 79.7% of them are depending Well/Bore-well.
2) Facilities and accommodation
a) HOTELS
i) 21% of the Hotels have a Banquet / Conference Hall and 33% have an online
reservation facility.
ii) 28% of the Hotels in Kerala are providing “Emergency fire exit/ Fire Fighting
Measures”
iii) 21% of the Hotels are using solar energy along with electricity and 11% of the
hotels have a rain water harvesting system
iv) There is a total of 77,973 rooms available at all Hotels in Kerala out of which
54% are Non A/C Rooms with Attached Bathroom
b) RESTAURANTS
i) 4.6% of the restaurants have individual parking area and 41 restaurants have
a Banquet / Conference Hall
ii) 63 restaurants are using solar energy along with electricity and 166
restaurants in the State have Sewage/Water treatment facilities.
iii) 77 restaurants have a rain water harvesting system.
3) Employment Details
a) HOTELS
i) The total workforce in the hotels in Kerala is found as 43,315 and Male to
female ratio of employees found as 81:19 at State level
ii) Ratio of employees who passed hotel management courses to employees
having only experience out of total employees in the hospitality sector is
26:74.
iii) There are 4,201 migrant workers engaged in the Hotel sector, which is 9.7%
of the total workforce
b) RESTAURANTS
i) The total workforce in the restaurants in Kerala is found as 1,30,540 and Male
to female ratio of employees found as 82:18 at State level

ii) The ratio of male to female employees in the restaurant specific sector is 82:18
and Ratio of employees who passed hotel management courses to employees
having only experience out of total employees in the restaurant specific sector
stand at 2:98.
iii) There are 15,273 migrant workers engaged in the restaurants, which is 11.7%
of the total workforce
iv) Majority of the migrant labourers (full time and part time together) in the
restaurants in Kerala are from West Bengal (4,779 or 31.29%) followed by
Tamil Nadu with 22.07%
c) TEA AND SNACK STALLS
i) There are 27,211 employees (including working proprietors) in tea and snack
stalls with male to female ratio 76:24
ii) There are 694 migrant workers engaged in the tea and snack stalls, which is
2.6% of the total workforce
4) Financial Aspects
a) HOTELS
i) The total expenditure incurred by hotels during 2013-14 is Rs. 1,91,918.73
lakhs and income generated during the same period is Rs. 3,62,606.81 lakhs
approximately.
ii) The total value of fixed assets as on the date of the survey found as
Rs.13,85,381.47 lakhs approximately
b) RESTAURANTS
i) The total expenditure incurred by restaurants during 2013-14 is Rs.4,
22,060.54 lakhs and income generated during the same period is Rs.
5,28,842.17 approximately.
ii) The total value of fixed assets as on the date of the survey found as
Rs.2,45,705.67 lakhs approximately
