GREEN GROVE EXPRESS
Concept Summary
The concept of this design is to create a Grab-and-Go unit in the new projected Building IV at
the Universities at Shady Grove. The size of the unit is approximately 1,150 sq. ft. It will
include new combo vending machines that students, faculties, and staff would still be able to
purchase items when part of the unit is closed. The new vending machines will offer fresh house
made salads, sandwiches, wraps and dispense hot beverages such as assorted teas, regular coffee,
and decaffeinated coffee. This new idea will provide students, faculties and staff a wide variety
of healthy and fresh food. Hopefully, the Green Grove Express will lessen students traveling
time to off campus restaurant or grab-and-go to purchase food.
The Green Grove Express is going to be in an open space with a smooth and quick flow. Self
serve salad bar and soup station are going to be located at the middle of the space. Storage area
with several refrigeration units is going to be located at the back of the house area for restocking
purposes. Food preparation is going to take place at the kitchen in Building II and food is going
to be transferred at least twice a day, or on needed basis. The vending area of the Green Grove
Express is going to be operating 24/7. The fresh food is going to be replenished by the staff on a
regular basis. Based on the food transportation requirement of the Green Grove Express, the
Hours of Operation of the Grab and Go is going to be similar as the Green Grove Café and the
Corner Bistro. The operation hours of the buffet area are going to be as follow:
Monday – Thursday: 8:00 am -8:00pm
Friday: 8:00 am - 3:00pm
Saturday: 8:00 am - 3:00pm
Sunday: 11:30 - 5:00pm
Target Market
The unique creativity proposition for the Green Grove Express Grab-and-Go is for students,
staff, and faculties of USG to have access to quick grab and go refreshments without waiting in
lines in the cafeteria. Moreover, it is to help in assisting consumers to minimize outside
purchasing of food within 0.1 mile to 5 miles radius. The targeted areas are FallsGrove shopping
area, Travilah Square, the Traville Village Center which is located directly behind campus.

Competitive Analysis
Such direct competitions are as mentioned above. The Travilah Square with has lots of shops
such as, 7 Eleven, Ledo Pizza, Sweet Frog, Michael’s Noodles, and not to mention a Burger
King which frequently advertises there seasonal specials. On the other hand, just a mile or less
away, there is Fallsgrove Village Center which is approximately 150,000 sq. ft. of retail space to
accommodate neighborhood retail, restaurants, a major grocery store and other community retail
services. Some stores at Fallsgrove are; Jerry’s Subs and Pizza, Mama Lucia, Panera Bread,
Wings Stop, Safeway Grocery Store, and others. The Village Center is immediately surrounded
by dwelling units in a diverse mix including traditional single-family homes, townhomes,
courtyard homes, patio homes, stacked townhouses and low and mid-rise multifamily units.
Lastly, the indirect competitors would be students driving out of the 3 mile radius to purchase
food like Rockville Pike because they are looking for affordable prices.

All equipments are going to be shipped directly to the Green Grove Express location. Shipping
fees are included in the listed price. Installation fee are going to be excluded for all the
equipments. The range of the installation fee are going to be varies based on the size and the type
of the equipments. The installation fees range is from $100 - $500 respectively.

FLOOR PLAN
The suggested design for the currently designed Green Grove Express is a rectangular unit with
approximately 1,150 ft2. Due to our decision of not incorporating seating in the design, we are
fully utilizing the space as a place to provide food services to the students, faculty, staff and
other guests of the building. We will provide similar food products as the Green Grove Café,
with the addition of a salad bar buffet and three vending machines.
All components except for the food storage indicated in the image above are accessible to all
guests entering the Green Grove Express. Food storage is used as a space to store all cold foods
and equipments needed in the café. Bon Appetite staff will be delivering all foods to the storage
several times a day and replenish whenever it is necessary.

The buffet station is stocked with all salad foods; with the containers provided, the Bon Appétit
staff can utilize the POS system to tare off the weights and charge the salads by the pound. At the
station we will also have self-service soup priced by cup. The hot drink station is composed of
freshly brewed coffee, decaffeinated products, and hot water. The cold food display will have all
the items the Green Grove Café has, such as energy drinks, Coco Cola products, fruit and
vegetable juices, yogurt and teas.
The service flow is indicated as the arrows in the image. Although both openings are suited for
entrances and exits, the ideal flow is to enter from the entrance on the right and exit on the left.
The entrance on the right side of the image is designed with a sliding door there it can be locked
when the café closes at night. The dash line in the image is a lockdown protection at night time
when the café closes at night. The design is inspired by the similar design at the Green Grove
Café. After the closing hours, guests of Building IV will still have access to the vending
machines on the left side of the image.

DESIGN ELEMENTS
“Grab and Go” is known as ready-to-go foods that focus on the type of customer who want a
fast, quick meal before head out to do their work. As Building IV, a new building will be
constructed at the Universities at Shady Grove campus as a biomedical and research building for
graduate student. Green Grove Express is a rectangular unit, which is used to provide food
services to the engineering and medical graduate students, and public patrons. The design
elements will be focusing on the fresh new modern look theme with a lime green color, which
will bring a bright, fresh and energetic look for this new food outlet.
Referring back to our design, there will be two sections in the Grab-and-Go: the right side will be
a buffet area which carter fresh salad, sandwiches, snacks and coffee; and the left side will be the
vending machines area which include a wide variety of fresh prepackaged food and packaged
snacks. A siding gate will be used two separate the two sections. The gate will be closed and
locked after the services hours of the buffet area. Vending area will remain open 24/7. The
sliding gate will not only perform a separation purposes, but it also perform a security purposes
after the service hour of the buffet area is over.
For lighting, we are planning to use monorail lights, which is very similar to track lights. The
lighting will add the modern and elegance look to the facility. The lighting kit heads will
coverage the light equally to different areas by having different bud lights. There will be two
LED emergency exit lights on the right side entrance and the left side entrance.
Two flat screen TVs will be hung on the wall at the snack display and cold food display stations.
One of them will be used to show the menu of the day with the ingredients, and calories counter.
Other will be used to show the history as well as advertisement of Bon Appétit Management
Company.
