6 carrots, peeled3 stalks celeryRoasted turkey carcass, finely chopped2 cups cooked turkey meat, finely chopped2 medium onions, each cut into quarters5 sprigs parsley1 clove garlic, peeled1/4 teaspoon dried thyme1/2 bay leaf6 quarts water1 1/4 teaspoons salt1 cup regular long-grain rice, cooked as label directs2 tablespoons fresh lemon juice

1. Cut 2 carrots and 1 stalk celery into 2-inch pieces. In 12-quart stockpot, combine turkey carcass, car-rot and celery pieces, onions, parsley sprigs, garlic, thyme, bay leaf and 6 quarts water, or enough to cover; heat to boiling over high heat. Skim foam from surface. Reduce heat and simmer, skimming occa-sionally, 4 hours.

2. Strain broth through colander set over large bowl; discard solids. Strain again through sieve into several containers; cool. Cover and refrigerate overnight.

3. Remove and discard fat from surface; measure broth and pour into 5-quart saucepot. If necessary, boil broth over high heat until reduced to 10 cups to concentrate flavor.

4. Cut remaining 4 carrots and remaining 2 stalks celery into 1/2-inch pieces; add to broth with salt. Heat soup to boiling. Reduce heat and simmer un-til vegetables are tender, about 15 minutes. Stir in cooked rice and turkey; heat through, about 5 minutes. Remove from heat and stir in lemon juice. Makes about 13 cups or 12 first-course servings.

• Each serving: About 113 calories, 34g protein, 12g carbohydrates, 2g total fat (1g saturated), 21mg cholesterol, 355mg sodium.

Dealing With Damage from Hurricane Sandy

Q: After the recent megastorm, we had a lot of debris strikes on our house. The gutter and eaves took a lot of damage, with some of the gutters torn down and the eaves looking ratty. How expensive is this to fix? I don’t have a lot of money. -- Flores C., Taunton, Mass.

A: The gutters themselves should not be too expensive to re-hang, or replace if badly damaged. However, if there is damage to the roof eaves, you need to have a professional check it out and assess just how severely those debris strikes affected the roof. You also should contact your insurance company to report the damage.

Because the damage occurred as a result of Hurricane Sandy, which struck the East Coast in late October, your state was under a declared state of emergency. This means that in addition to state funds to repair and clean up storm damage, some federal funds have likely been allotted. Your state’s emergency management agency (MEMA, in this case) can provide information on how and where to report damage, how to work with your insurance company to get repairs made, and other important advice.

While you’ll need to do your homework to find out what funding is available to cover the repairs (if your insurance provider doesn’t), there are some general guidelines to follow no matter what. Have more than one contractor or roofing company check out the roof, eaves and gutters; have each provide you with a written estimate of the cost, as well as an estimate of how much time it will take to effect the repair. Do not allow work to start until you’ve agreed to the cost and scope of the work and have signed off on the estimate.

If you’re at all uncertain about your ability to negotiate a fair price for the repair job, or to fill out requests for repair assistance or reimbursement, ask a trusted friend or relative to help you with the process.

HOME TIP: Gutters and eaves are key protective elements of a house, part of the “envelope” that keeps water and pests out. Make repairs as quickly as possible to prevent damage to other parts of your home.

The Terrible Turk vs. GoofyThere’s only so much “Mickey Mouse Funhouse” a father can take. Desperate, I download a Spi-derman story to the iPad formy3-year-old son,an auto-turning storybook narrated by none other than Stan Lee.

But as I listened, the story arc went in a way I wasn’texpectingfromachild’sbook.Youknow... at that age, they kind of gloss over the stuff about inner-city murders. In this story, Spider-man decides to use his new powers for greed. His firststopisthelocalcoliseum,wherehetakesona wrestler offering anyone $100 if they can last 15 minutes in the ring. Spiderman easily wins the fight, goes to collect his earnings and demandsto be paid in cash. Then the cashbox is stolen at gunpoint and Spiderman lets the burglar go, be-causeit’snothisproblem,right?He’scountingthemoney.

Well,laterthatday,Spiderman’suncleismurdered...shotinthestreets.AnenragedSpideyfindsthemurderer,andwhatdoyouknow?Itwasthebur-glar from earlier, yada yada yada, and the take-away of the story being, kids bitten by radioactive spiders should not be greedy and use their powers forprizefightingor theirunclewillget shot. (Atleast that’s how I explained it.)Theprizefightingthing ...didpeopleactuallydothat?

So I went to the history books and came face to facewitha300-poundmustachioedwrestlernamedYoussof,“TheTerribleTurk.”Andsomethingtoldme Stan Lee was familiar with the man, too.

The Terrible Turk barnstormed America during the late 19th century. Unlike the “productions” we get toseenow,inYoussof’sday,wrestlingwasabouttwo guys going into a ring and ripping the other guyapart, literally.Youssofwasanationalsensa-tion. He brought a carnival atmosphere to town with him and, yes ... if you had the guts, you could win$100($1,000attoday’sinflation)ifyoucouldlast 15 minutes in the ring with him. Legend has it that he never lost.

Youssofwas greedy.He demanded to be paid ingold coins before every match. He would put the coins in a money belt around his waist, concealed by one of those sarong-type belts, and go wrestle.

Whenhehit$10,000incoins,heannouncedhisre-tirement and sailed for home ... until a storm hit and theorder came to abandon ship.Youssof reachedthe deck as the ship began to keel over, and was out of range of the lifeboats ... he’d have to swim.

Only he didn’t have a life preserver around his waist...hehadamoneybeltfilledwithgoldcoins!In seconds, he was dragged under to his death.

The takeaway being to always use traveler’s checques and wear a life preserver ... at least that’s what I told my kid as we both sat down to watch Goofy learn to count gold coins in order to get past thelarge,mustachioedbadguyPete.

The story never ends.

Air Travel Without the Baggage

Air travel isn’t much fun anymore, and getting through the airport is the worst of it. Between the crowds, the TSA rules and dragging heavy luggage, some of us just want to stay home and not bother.

There is a way, however, to take care of at least one of the problems with air travel: send your luggage early.

UPS, FedEx and DHL all will pick up your luggage at your home and ship it to your destination for you. UPS, for example, has specially designed boxes to hold your suitcases.

As with anything else, there are both plusses and minuses to using this service.

The benefits:

--No standing in line only to be told that your bag is overweight and will cost even more.--No lost bags at the airport.--No chance of thieving airport personal going through your suitcases and stealing things or at least rummaging around.--Less chance of damage to your bags.--No wasted time at baggage claim and

then pushing through the crowd to pull your luggage off a moving carousel.--No wrestling with luggage through the airport or onto the hotel bus or into your rental car.

The downside:

--The cost. It can be expensive to use a service to get your luggage to your destination so it’s there when you arrive. But it can be a life (or back) saver if dealing with luggage in crowded airports is a hassle for you.

Hint: Have your bag shipped days in advance. That way you’re not paying overnight shipping costs. Also, don’t bother using a “luggage shipper.” They use the same DHL, FedEx or UPS services, but they add on their own handling fees.

Puppy Thinks Shoes Are Chew Toys

DEAR PAW’S CORNER: Help! Our new puppy, “Elwood,” is getting into everything, chewing up my kids’ shoes and tearing the stuffing out of stuffed animals. Any advice on getting him to stop? -- Jessica G., via email

DEAR JESSICA: Getting a puppy to completely stop exploring and chewing is a job that requires time and patience. You also need to reconfigure your house to keep Elwood safe. If he ingests a shard of plastic or some other indigestible item, a poisonous plant or medicines from lower bathroom cabinets, he could be in serious danger.

First, pet proof the house. Invest in toddler safety gates (if you don’t already have some) to limit Elwood to parts of the house where he’s less likely to find shoes, toys and other objects. In that gated-off area, remove kids’ toys, clothing, stuffed animals and other chewable objects. Lift potted plants out of his reach (the leaves of many houseplants are poisonous to pets).

Make sure Elwood has access to his pet bed and to appropriate chew toys, and check on him frequently. Puppies should not be left alone for long periods of time, for many reasons.

Next, get that basic obedience training regime going. Grab a book or three on dog training, all of which will cover important basic commands like “sit,” “stay,” “come” and “heel.” Spend at least 30 minutes every day working with Elwood, in addition to twice-daily walks and generous amounts of playtime.

Chewing behavior is very common in puppies, but tends to diminish as they mature. If he continues to destroy everything in sight, talk to his veterinarian or try a group dog-training class. Anxiety or other issues can be at the root of long-term chewing problems.

Rookwood PotteryQ: My grandmother in Texas collected pottery through-out the 1940s and ‘50s. One of her favorite pieces features the image of an Indian and was made by Rookwood. She had it appraised in 1960 and was told it was painted by Matthew A. Daly in about 1900. The value at that time was $250. Even though I love the piece, I certainly would sell it if it is valuable. -- Susan, West Palm Beach, Fla.

A: According to “Warman’s Rookwood Pottery: Identifi-cation and Price Guide” by Denise Rago and Jonathan Clancy and published by Krause, your vase is currently worth about $10,000 ... not a bad appreciation since 1960.

***Q: My dad lived in Colorado and was an avid fisher-man. Needless to say, he accumulated quite an array of fishing items, including rods, reels, tackle and three older creels. I would like to determine values. Do you have any suggestions? -- Lon, Pueblo, Colo.

A: There are several guides that might be helpful. My favorite is “Fishing Collectibles: Identification and Price Guide” by Russell E. Lewis and published by Krause. Copies are available at www.amazon.com. This refer-ence features current pricing for hundreds of fishing collectibles with more than 2,000 illustrations in full color.

***Q: My grandmother had a doll that was given to her by an uncle during World War II. Can you tell me its value? -- Win, Surprise, Ariz.

A: A free appraisal is generally worth what you pay for it. In other words, if it is important to know the value of an antique of collectible, you can contact dealers in your area for their opinion. A more accurate as-sessment would be an appraisal by a certified profes-sional, and you should, of course, expect to pay for this service.

Since you live fairly near Phoenix, I suggest you con-sult the business pages of the phone book and check the listings under “appraisers.” Make certain the ap-praiser you hire specializes in personal property, not real estate. They are listed together as a rule. You can get either a verbal appraisal, which is less expen-sive, or a written opinion, which is best for insurance purposes.

DEAR DR. DONOHUE: Three or four months ago, the ring finger on my right hand started making popping noises when I bent it. Now it’s still doing that, and it catches in a bent position from time to time. I work as a carpenter, and I can’t afford to take time off. What do you think this is? -- R.B.

ANSWER: My guess is trigger finger. The tendons that bend the fingers travel from the forearm into the palm and then onto each finger and the thumb. On their way to the fingers, a sheath of tough tissue encircles them.

Repetitive movements of the fingers irritate the protective tendon sheaths, and they swell. The swelling squeezes the tendon, and the popping noise you hear is the tendon freeing itself from its swollen sheath. That snapping noise sounds like the noise heard when cocking a gun’s trigger.

As time goes by, the finger might become locked for some time in the bent position.

You don’t want to hear this, but rest is essential to permit the tendon to move smoothly. If you must work, padded gloves afford some protection for the finger. Gripping a tool like a hammer is particularly hard on the tendon and its sheath. Tools with a larger-than-normal handle are less of a problem. The best protection is wearing a metal splint so that the finger can’t move.

Your doctor can give you a cortisone injection into the problem area, and that often reduces the swelling quickly. You must rest your finger after the injection for at least three days.

If two injections fail to free the finger, then you need to consult an orthopedic surgeon for an opinion on surgical release of the tendon.

***DEAR DR. DONOHUE: This past summer, I got the shock of my life at a family get-together. My cousin,

whom I hadn’t seen in 10 years, has bulging eyes. Her mother -- my aunt -- told me it was due to a thyroid problem. I’d never heard of a thyroid problem affecting the eyes. Does it? -- G.D.

ANSWER: It can. An overactive thyroid gland can lead to deposits of material in the eye sockets, which causes the eyes to protrude. There are treatments for this complication of hyperthyroidism. I’m sure this cousin is under the care of a thyroid specialist and an ophthalmologist.

ANSWER: Never in my life have I seen hair on people’s lips. Lips have no hair follicles. You even could shave the lips if you felt so inclined (but please don’t try this), and hair would not grow on them. If you have evidence to the contrary, let me know.

At age 60, I believed I was a model of good health. I’d been a runner for more than 30 years. I was certified as a Red Cross Water Safety Instructor. I took my vitamins,

drank my juice and ate (mostly) healthy food.

But there was one area of my health that I overlooked: my strength and building back the muscles I lost as I aged. Oh, I tried working out in gyms. But I didn’t like the time it took, and I struggled with the equipment. I have bought and sold more home exercise machines than I want to admit.
