This top qual ity Oloroso f rom Valdespino is blended with 8-10% of a sweet, very old Pedro Ximénez. This results in a sugar content of around 45-50g/l , which means the wine is off-dry rather than thoroughly sweet. A truly stunning example of an Oloroso.

Amonti l lado is a sherry that is darker than a Fino but not as heavy as an Oloroso. It starts l i fe as a F ino and is then considered to be Amonti l lado i f the layer of f lor (or yeast within the barre l) fai ls to develop adequately, thus giving the wine an oxidative f lavour whi lst st i l l maintaining darker, oak aged f lavours. A proper sherry dr inker ’s sherry.

PEDRO XIMENEZ ‘CLASSIC’ FERNANDO DE CASTILLA (500ML) NV JEREZ SPAIN
The Pedro Ximénez grapes are harvested and dr ied for up to 2 days in the hot September Spanish sun. The grapes are too sweet to ferment natural ly so are fort i f ied to 15% alcohol then aged in a barre l solera system producing the Classic PX which is on average 12 years old. Containing al l the intensity you would expect f rom a PX, there is coffee, l iquorice, sweet tobacco, prunes, f igs, rais ins, tea and a dozen other f leet ing scents. An incredible journey in a glass.
