Cit rusy, intense and mineral ly with a smooth, creamy texture without the l ip-cur l ing ‘green ’ edge of poorer-qual ity Chalonnais whites.

Amonti l lado is a sherry that is darker than a Fino but not as heavy as an Oloroso. The Pedro Ximénez grapes are harvested and dr ied for up to 2 days in the hot September Spanish sun. The grapes are too sweet to ferment natural ly so are fort i f ied to 15% alcohol then aged in a barre l solera system producing the Classic PX which is on average 12 years old. Containing al l the intensity you would expect f rom a PX, there is coffee, l iquorice, sweet tobacco, prunes, f igs, rais ins, tea and a dozen other f leet ing scents. An incredible journey in a glass.
