Welcome to our second edition of the Harvests of Haldimand Local Food Guide.

Haldimand County’s farmers produce a bounty of goodness, fresh from some of the most prized agricultural land to be found anywhere in Southern Ontario. This diversity of food inspires our local chefs to create unique and delectable Haldimand Dishes. A celebration of the Harvests of Haldimand occurs throughout the year, from fruit, vegetables, meat and poultry to cheese, eggs, jams, and maple syrup.

Blueberry Streusel Muffins1/3 cup sugar1/4 cup butter or marg, softened1 egg, beaten

2 1/3 cup flour4 tsp baking powder1/2 tsp salt

1 cup milk1 tsp vanilla extract1 1/2 cup fresh or frozen blueberries

Streusel:

1/2 cup sugar1/3 cup flour

1/2 tsp cinnamon1/4 cup butter or margarine

In mixing bowl, cream sugar and butter. Add egg; mix well. Combine flour, baking powder and salt; add to creamed mixture alternately with milk. Stir in the vanilla. Fold in blueberries (if using frozen, do not thaw). Fill 12 greased or paper- lined muffin cups 2/3 full. In a small bowl, combine sugar, flour and cinnamon; cut in butter until crum-bly. Sprinkle over muffins. Bake at 375° for 25-30 min or until browned. Yield: 1 doz.

Snyder’s Sweet Corn Tips

BOILED CORN ON THE COB

Remove husks, silk and ends, from each ear. Rinse corn in cold water and drop into a kettle of

vigorously boiling unsalted

water, making sure water completely covers corn. Allow water to return to a boil for four minutes. Drain and serve im-

mediately with butter, salt and pepper (if desired).

MICROWAVED CORN ON THE COB

Cook fresh corn on the cob in microwave with husks and silk intact. They

will cook in their own natural moisture.

Cooking Timetable:

Remove and wrap in kitchen towel, foil or stick in oven mitts for at least 5 minutes. Remove husks and silk (which is

easier than when cold) and serve.

BARBEQUED CORN ON THE COB

Take unhusked corn on the cob and submerge in water for about 20 minutes. Remove corn from water and place into

hot coals, or on a gas grill. Turn occasionally until done (a

pproximately 15 to 20 minutes) or until outside of husks are

burnt. Remove husks and season with butter and salt.

Steamed Mussels with Bacon, Shallots & AppleIngredients

4 oz. smoked bacon (Hanson Meats, Cayuga), cut into 1/4 inch lardons

2 shallots, peeled and sliced into thin rings (Richardsons Farms,

Dunnville)1 tart apple, peeled and small diced 1 pound mussels, washed and bearded 1 ounce dry white wine

1 ounce apple cider1/2 ounce apple cider vinegar2 ounce heavy cream (Hewitt’s Dairy, Hagersville)

1 fresh thyme branchKosher or sea saltFresh ground black pepper

DirectionsCook bacon over a medium high heat in a wide saucepan until rendered and crisp. Drain off some of the fat. Add shallots and

apple. Cook until slightly caramelized. Add mussels and stir to coat. Deglaze with white wine, apple cider, and vinegar.

Reduce slightly. Add cream, thyme, salt, and pepper. Cover and cook until all the mussels are open and the sauce is reduced and

slightly thickened. Serve in the pan or transfer to a large, wide bowl. Delicious with toasted country bread.

Makes 6-8 servings.

1 can (400 ml) Coconut Milk

4 Tbsp finely diced fresh ginger root.

Boil all together in a pot until sweet potatoes are soft when pierced with a fork or knife. Cool. Blend in a blender, sieve and

then add 2 Tbsp of lime juice. Taste for salt.

Serve.

Maple Syrup Pie

1 baked 9” pie shell, cooled1 1/2 cups maple syrup (preferably dark)1 cup whipping cream (35%)

1/4 cup cornstarch1/4 cup cold water

In a medium size heavy bottom pot, combine maple syrup and cream. Blend cornstarch together until smooth. Stir into cream mixture. Bring mixture to boil over medium heat and cook 2 to 3 minutes, stirring constantly until thickened. Pour into baked pie shell and let cool until set. Sweet Potato Supreme

Ingredients

2 cups Ontario Sweet Potatoes, peeled, mashed, cooked

2 Tbsp cream or milk

2 Tbsp melted butter

1/2 tsp salt

1/4 tsp paprika

125 ml Ontario Maple Syrup or 1/2 cup Brown Sugar

1/2 cup butter

1 cup pecan halves

Instructions

Thoroughly mix sweet potatoes, milk, melted butter, salt and paprika. Spread in grease
