There’s no better way to start theday than with marvelous stacks ofFrench toast before you. And loyal

readers, this luxurious breakfast creationis yet another one of my many guiltypleasures. It’s just ridiculously good —stealing my heart with each and everybite!Contrary to popular belief, French

toast was not created in France, butrather Spain, with a recipe dating back tomedieval times. Even back then, they

knew French toastwas worthy enoughto be categorized asthe “most importantmeal of the day.”Gaga for this

crazy carb creation,it was my missionthis week to feaston some of the best

“Ono, You Know” French toast around.Now that I’m stuffed and blissfully satis-fied, I can tell you that the followingestablishments get two “yums” up in mybook!

The VerandaI was treated to an elegant and refined

dining experience on The Veranda at theMoana Surfrider, A Westin Resort & Spa,as nothing could be more delightful thanawakening my senses while amid the ele-gance of classic Victorian architecture,shaded under the canopy of a historicbanyan tree, while taking in the melodicsounds of live music and the crashing ofthe waves along the Waikiki shoreline.Craving the deliciously rich flavors of

French toast, I knew my day was off to the

perfect start when executive sous chefRichard Lancaster of the Moana Surfriderpresented me with the Tahitian VanillaHawaiian Bread French Toast ($16) withwarm maple syrup and whipped honey-rum butter.“Our rendition of the French toast is

special in that when it comes to the eggmixture we also include nutmeg, cinna-mon and Tahitian bean vanilla, in addi-tion to a touch of sugar and salt whichbrings out the flavors,” says Lancaster,adding that this favored item is availableon the a la carte breakfast menu dailyfrom 6 to 10:30 a.m. Lancaster’s Frenchtoast is incomparable by many standardsand when topped with a symphony ofberries, including raspberries, blueber-ries and blackberries — it’s quite entranc-ing to say the least. Don’t forget to pairyour French toast with some of TheVeranda’s famous teas; after all, tea timeis a time-honored tradition here at theMoana.

Makino Chaya is an island favorite when it comes to buffet-style eating.

After opening nearly a decade ago, it hasbecome the place to enjoy mountains of crabs legs,grilled salmon, lobster tails, calamari steak, all styles ofshrimp, sushi and any other deep-sea creature you candream up, all for an incredibly affordable price.

But, as Bob Dylan once sang, times are a-changing.Now, in addition to all the items folks expect to find

in the buffet line, Makino Chaya will be offering evenmore food with the re-introduction of a pre-set menu.

“We’re going back to our roots,” says Jo Makino,president of operations. “In the past, we used to havea menu along with the buffet, and everything was all-you-can-eat. Everyone really liked (the menu) — that’swhat distinguished us from the regular buffets — andpeople always ask about it, and I think it’s time to bringit back.”

With the menu’s return to the dining room alsocomes the arrival of new items like Puri Puri Shrimp,Saba Shio Yaki, Sake Shio Yaki, Iddako Karage and KuroButa Sausage. Past buffet favorites like Miso Butterfish,Pork Katsu and Half-Shell Oysters also will be making amuch-anticipated comeback.

“It’s pretty much all-you-can-eat everything,” Makinoexclaims. “It’s going to befood galore!”

In addition, some itemscurrently found in the buffetline will be shifted onto themenu, like the tempura.

“The tempura wenormally put on thebuffet right now, but

we’re going to do that to-order so that way it comes outnice and hot, nice and crispy,” explains Makino of theswitch.

“All the stuff on the menu is cooked to order,” he adds,“so everything comes out fresh, hot, crispy — you name it.”

Cold items also will be made-to-order from the sushibar: Maguro, Hokki Gai, Ebi, Tamago, Unagi, Soy BeanRoll, Ikura, Soft Shell Crab Roll, Sashimi Mori and more.

“We have all the udons and sobas, we even have curry,too,” Makino adds. “And we’re going to do a monthly spe-cial every month starting in May.”

Dishes being considered as future features include KingCrab, Live Abalone and Dungeness Crab with Black Beanand Garlic.

“I think we’re going to change the menu quite often,”Makino says. “It just depends how our customers like itand what’s in season.”

And the best part is, customersdon’t have to choose which way theywant to dine. For the regular buffet

price ($13.98, lunch, weekdays;$16.98, lunch, weekends; $28.98,

dinner, weekdays; and $29.98, din-ner, weekends), people can eat totheir hearts’ content from boththe buffet line and the new menu.

“People can order off themenu and they can also

pick from the buffet.It gives people anoption,” Makinoexplains. “It’s bet-ter, I think; it’s awhole different‘buffet.’”

Liu puts stamp on perfect pork chops

Owned and operated by Henry Liu,New Liu’s Chop Suey remains astaple when it comes to top-

notch Cantonese-style cuisine inKalihi. Located in KamehamehaShopping Center on North SchoolStreet, the Chinese restaurant pres-ents customers with appealing fami-ly-style entrees in a casual atmos-phere.“I opened the restaurant

in 2002 and customerslove the food here, espe-cially my Salt and PepperPork Chop on Rice($4.75, $7.95 fullorder),” Liu says. “Iwas taught this recipeby one of my mentors,but I’ve added my owntwist to it, and it hasbecome one of our signaturedishes.”The pork chops are marinat-

Local Japanese fare meetscontemporary elegance atKochi Restaurant &Lounge, the ever-bustlingeatery that caters to just

about everyone.Dining Out recently sat down with general man-

ager Reid Mochizuki, who was eager to share howKochi keeps bringing customers back time andtime again.

DO: Kochi Restaurant & Lounge has proven tobe a popular hotspot among locals craving tastygrinds. Tell us more about the restaurant’s philos-ophy.Mochizuki: Kochi opened a little more than

three years ago and we brand ourselves as alocal-style Japanese restaurant. Many of the dish-es are quite reflective of our customer base and

incorporate many local flavors.

DO:What exactly brings out the local flavors inyour food? Also, what are some of your most-requested dishes?Mochizuki: We use a lot of ingredients like

fresh ahi, fresh salmon and fresh tako, forinstance. There are many things here that localswho dine here will be very familiar with. We havethe Shrimp Tempura Roll with Spicy Tuna($13.95). It’s dressed with a Kabayaki sauce(sweet, soy-based sauce), that doesn’t over-whelm the dish — it has a really nice, clean flavor.And the spicy tuna itself is a creation of our sushichef Aaron Kumura. It has a nice kick to it and isa bit spicier than your average spicy tuna.The Take Nigiri Set ($27.95) is a 10-piece assort-

ment of fresh Nigiri sushi with hamachi salmon,New Zealand snapper, eel, scallop, squid andmore.Customers also can’t miss out on one of our

DO: Readers will be pleased to know that noMSG is added to Kochi’s cuisine. Many turn toyou folks when it comes to celebrating specialevents as well as casual dinners with the family,correct?Mochizuki: Yes, the restaurant is very accom-

modating to large groups. We can seat parties of20 to 30 people for regular dinner service, and theweekends are when we cater to a lot of parties.

DO: Kochi also offers a special birthday promo-tion and a special deal for the keiki. What is thatabout?Mochizuki: If you show your ID within five days

of your birthday, you receive a free entree whenaccompanied by at least two paying adults. OnMondays and Tuesdays, kids eat free with at leastone paying adult. Our kid’s menu offers a choiceof chicken katsu, hamburger steak, teriyaki chick-en, breaded mahimahi or teri beef for $4.95. Allplates off the kids’ menu also come with a softdrink and ice cream.

DO: What is offered atthe bar that draws in thecrowds on a regular basis?

Mochizuki: We have a

good selection of Japaneseand domestic beers, sake,wine and cocktails. It’s apretty extensive list.

DO: What do you thinkmakes Kochi so appealingto diners?

Mochizuki: I think it’show we respond to ourlocal community. We wel-come our guests to come inwith their shorts or slip-pers; it’s basically a restau-rant for every occasion.Our menu has changedover time in response to

our customers who havemade suggestions. Itmakes a differencebecause such a largepercentage of our cus-tomers are repeat cus-tomers, so we really getto know them and inturn they give us posi-tive feedback.

Although widelyknown as the birth-place of democracy

and the Olympic Games,Greece also is recognizedfor its scrumptious lambdishes — from small sou-vlaki (skewered kebabs) tospit-roasted whole lamb.The abundance of lamb

in the European country isjust one reason why thedish is so common there,says Greek Marina co-owner Tarek Guirguis.“It is a traditional meat

in Greece,” he says. “Ittastes a bit different, butwe grow up eating it. InGreece, we love lamb.”

One of the most authenticways to serve lamb is as sou-vlaki. Called kandaulos inancient Greece, souvlaki wasoriginally served along withother meat and pita bread.More recently, however, sou-vlaki began to be sold moreconveniently by street ven-dors on a stick or wrappedin pita bread. Today, souvlaki — which

can be prepared with a vari-ety of meats — is a staple innearly all Greek restaurants,including Greek Marina inHawaii Kai. Served for lunch and din-

ner, Lamb Souvlaki($13.95/15.95) comes withchicken, beef, shrimp or incombination.

“I started making my sou-vlaki dishes about 22 yearsago. You cannot open aGreek restaurant withoutsouvlaki. People come in andexpect to see it on themenu,” Guriguis says.At Greek Marina, the lamb

is cubed and then marinatedin salt, pepper, garlic, oliveoil, cumin, red pepper and avariety of other Greek spices.The meat is then skeweredand barbecued. After barbe-cuing, the tender lamb isserved on warm pita breaddressed with tomato andtzatziki, a Greek toppingmade from yogurt and spicedwith grated cucumber andmild garlic. hen you think ofpizza, “pure” is prob-ably the last wordthat comes to mind.

However, zpizza is changing thedefinition of this infamous fastfood item with its healthy and cre-ative take on the popular pie dish.The restaurant is innovativebecause of its organic and tastyproducts, but the Hawaii fran-chise in particular is undergoing a“pure pizza” revolution, accord-ing to owner Cesar Llarenas.

“We started our new taglinethis year — ‘the pure one,’”Llarenas says. “It means that zpiz-za uses the highest-quality andbest-tasting ingredients. Ouringredients are fresh, all natural,organic, free of any additives andlower in fats.”

“The ‘pure’ (part of the tagline)is all encompassing,” echoesKaren, Cesar’s wife, who helpswith running the franchise. “Ittells you what we are about.”

The zpizza chain opened inHawaii in December 2008, with itsfirst location at Ward Centre. Thesecond zpizza store opened lastNovember in Kailua. Cesar intro-duced zpizza in Hawaii after yearsof searching for the right restau-rant franchise to own. The chain’shealthy aspect appealed to theLlarenases, as zpizza prides itselfon serving delicious productsusing fresh ingredients.

“The ingredientswe use are the high-est quality,” Cesarexplains. “We use low-fat mozzarella cheese,MSG-free pepperoniand natural chicken.We also offer a gluten-free option (for ourcrust).”

“Our dough is madefresh daily from 100percent certified organ-ic wheat,” Karen adds.“Our tomato sauce isalso 100 percent certi-fied organic. The uniquefusion of gourmet toppings thatcreate savory flavors in our piz-zas makes us different. We useingredients such as capers, truffleoil, shiitake mushrooms and pinenuts.”

The restaurant’s menu offers avariety of selections for pizzas,salads and sandwiches. The aver-age pizza — available in small,large or extra large sizes — costs$13-$15. The Napoli — made witha homemade roasted garlic sauce,Roma tomatoes, basil, Parmesanand low-fat mozzarella cheese —is one of the most popular pizzas.The Arugula Salad and the Pear &Gorgonzola Salad are two of themost highly requested saladentrees. The Rustica pizzas, how-ever, make zpizza’s menu unique,according to Karen.

“The Rusticas set us apart,” shesays. “The crust is thinner, crispi-er and lighter; it’s a free-form

pizza.”While zpizza is already

revolutionary in its piecreations, several recentchanges have takenplace on the Hawaii fran-chise’s menu. ABerkeley Vegan pizza, inwhich vegan cheese isused instead of soycheese, was introducedlast summer.“Shareables,” or appe-tizers, is anotherrecent menu addition.These “Shareables”

include the popularMediterranean Plate, a composedof flatbread and various toppingslike cucumbers, Greek olives, fetacheese, roasted peppers and hum-mus.

What’s not on the menu — butis still available to customers —is the Apple Pie Pizza, zpizza’sonly dessert. Covered with mas-carpone cheese, roasted Fujiapples, cinnamon brown sugar,toasted almonds, powderedsugar and caramel syrup, theApple Pie Pizza was part of a pre-vious promotion. It became sopopular, though, that theLlarenases decided to unofficiallykeep the dish as part of the zpiz-za menu.

“It’s like our ‘secret menu’ item;they (customers) can always askfor it,” Karen affirms.

The restaurant currently hasseveral limited-time promotions.From April 1 to May 24, zpizza isoffering a “zpassport” to its cus-tomers, in which they receive asixth pizza free after purchasingfive large or extra large “zcre-ation” pizzas. On April 24, zpizzais offering a “Family Meal Deal forFour” for its Easter promotion.For $48.95, customers will receivetwo Rusticas or any large pizza,choice of salad, an appetizerplate, four drinks and dessert forfour.

While they acknowledge thefranchise’s increasing popularity,the Llarenases know morechanges are to come for Hawaii’szpizza. These include openingmore stores islandwide, rebrand-ing the company’s image andaltering the menu. Despite thesefuture changes, the Llarenasesremain committed to serving theirhealth-conscious consumers withdelicious gourmet pizzas madewith the purest ingredients.

“Our target customers are peo-ple who appreciate high-qualitygourmet foods that are healthyand nutritious,” Karen says.“They understand the value is inthe quality of ingredients andpureness of the product and thevalue of eating healthy.

“It’s nice that (with zpizza), youdon’t have to sacrifice flavor andtaste to do that.”

immense offerings of fresh seafood, lean cuts of meat andtasty vegetables that come in each shabu shabu set.“The House Special Set with beef and pork is the most

popular — it’s a customer favorite — and the price is very,very reasonable. There's more than enough to feed every-one,” says general manager Kenny Ikeguchi.He’s not exaggerating. The Shabu Shabu House Special

Set is a platter of thinly sliced beef and pork that looks likeit could easily satisfy two or three people. Surviving in the restaurant industryfor eight years is a feat manycannot claim. But to flourish in a

field where food trends go in and out ofstyle faster than you can say “shabu shabu” takes determina-tion, business savvy and a quality product.

So how does Shabu Shabu House do it?“(Our food is) simple, simple but healthy and delicious,”

says general manager Kenny Ikeguchi of the straight-forwardfare found within the Kapiolani Boulevard restaurant.

Ikeguchi and owner Toshimitsu Matsuzaki opened Hawaii'sfirst hot-pot house in 2003 after seeing a need for a conven-ient and quick-service restaurant that could serve both the sin-gle and family set.

Eight years later and despite the emergence of other shabushabu restaurants, Shabu Shabu House remains the only seri-ous Japanese-style shabu shabu eatery in town.

“There never was this type of restaurant before I opened(Shabu Shabu House),” Matsuzaki says. “Now, many shabushabu restaurants haveopened, but they arenot Japanese-style, allChinese-style shabushabu.”

In Chinese-style shabushabu, according toMatsuzaki, diners selectvarious meats and veg-etable plates from cool-ers and cook their foodin a flavored broth. WithJapanese shabu shabu,however, there is a pre-set menu of items thatare delivered to thetable, and boiling hotwater is used to cook thefood quickly withoutadding any salt or oil tothe meal.

“It is a very health-conscious-type of fast-food restaurant, easy togo in, eat enough andpay cheap, and it's veryhealthy,” Matsuzakiadds. “We also serve abigger volume (of food),more than any other restaurant, but the food is healthy, so even thoughit is big portions, the next day your stomach is very comfortable.”

And if the enormous shabu shabu sets don't completely satisfyyour hunger, there also are extra side orders of meat — like rib-eyebeef ($12.95), lamb leg ($7.95), beef tongue ($7.95) — and seafood— large shrimp ($10.95), small shrimp ($6.95), lobster balls ($5.50)and scallops ($5.50) — to be had, along with side portions of veg-etables, tofu, noodles and rice.

Additional sauces and soup bases also may be ordered to addextra flavor and depth to the meal.

Annie and Alice Yeung have workedfor 14 years to build and improvePanya Bistro, constantly adding dish-

es to their eclectic menu. The siblings aimto create “Delicious andMemorable Moments,”as the tagline reads ontheir menu, and takepride in pleasing first-time customers to loyalregulars.At Panya, everything

down to the bread ismade fresh daily, and allitems are cooked with-out trans fat. Thisapproach to cookingallows customers to “feelgood about eating,” saysAnnie Yeung. The eateryoffers a hodgepodge ofdishes, cooking styles andpresentations, and whenasked how she woulddescribe Panya’s style, Yeung concludes:“Hawaii is such a melting pot. Ingredients:• 1 piece (12-14 ounces)Tyson Cornish game hen • 2 cups Aloha low-sodiumsoy sauce• 2 cups chicken stock• ½ cup sugar• 1 tablespoon ginger• 1 stock green onion• 1 stock Chinese parsley• 1 whole garlic, cut in half• 1 tablespoon choppedgarlic• ½ tablespoon wholeblack pepper

Preparation:• In a sauce pot, combineAloha Shoyu, chickenstock, sugar, ginger, greenonions, Chinese parsley,

garlic and black pepper.Make sure hen is sub-merged in sauce. Bring to aboil.• For presentation, tightenthe legs of hen togetherwith a string, (this will pre-vent legs from spreadingout), drop in shoyu stockand bring to boil at medi-um-high heat for a coupleof minutes. Remove anyscum. Then, simmer for 15-20 minutes, depending onthe size of the hen.• Remove hen from potand let it rest a few min-utes before serving.

Stir-fried Sugar Snap PeasIngredients:• 1 cup sugar snap peas• ¼ cup young baby corn• ¼ cup red bell pepper,cut to bite-size• 1 tablespoon vegetableoil• ½ tablespoon oystersauce• 2 tablespoons white wineor chicken stock• ½ tablespoon AlohaShoyu• pepper, to taste

Preparation:• In heated sauté pan, addoil and sugar snap peas,and sauté for 30 seconds.Add bell pepper and youngcorns, and sauté for a fewseconds. Add chickenstock, oyster sauce, shoyusauce and pepper, to taste.• Cook for a minute or twoor until the snap peas iscooked.
