Iscream, you scream, we all scream

for ice cream! Yes, foodies, I have a

deep love for this cool and creamy

treat. I’m not alone here: Statistics show

the United States holds the No. 1 spot on

the list of Top 10 ice cream-consuming

countries in the world, and around 13

percent of men and 8 percent of women

will admit to licking the bowl clean after

eating ice cream. Are you one of them?

If you are, don’t be ashamed to admit

it and take note. I have hot spots in

store that serve up some chillingly

scrumptious ice cream options — and

even sorbets, for that matter (if you’re

on a diet or attempting to eat healthy,

that is). Therefore, get your sweet tooth

ready and tell the ice cream man these

following establishments serve up some

steep competition.

Sushii IchibanNothing satisfies

my craving for ice

cream more than the

one and only mochi

ice cream. Yes,

that’s right, this

Japanese confec-

tion made from

fresh mochi with an

ice cream filling is

one of the best

things known to man.

And to my delight, Sushi Ichiban on

Waialae Avenue surely knows how to

serve up dessert, along with its onoli-

cious sushi, made with only the freshest

high-quality ingredients.

With a little help from Bubbies Ice

Cream, which provides the modern sushi

bar and restaurant with its ever-popular

mochi ice cream, customers can go crazy

partaking in flavors that consist of green

tea, mango, azuki bean and strawberry.

“Customers requested for it, so we had

to add it to the menu. Right now, it’s defi-

nitely a favorite here,” says Manny

Nakasenh, manager of Sushi Ichiban.

Diners receive three morsels of mochi

ice cream for a reasonable price of $3.75.

Having said that, I couldn’t resist taking a

bite out of the green tea, strawberry and

azuki bean. Yum! A word of caution,

though, for those with sensitive teeth: Be

careful with the first bite as the mochi

ice cream is chilling. Beyond that, the

firm yet smooth texture of this fabulous

treat couldn’t be more perfect! Oishi

desu!

The Moana Surfrider, a Westin Resort & Spa,recently celebrated 11 hospitable decades ofcatering to Hawaii and its visitors from

across the globe. Known as “The First Lady ofWaikiki,” the Moana Surfrider is a renowned histor-ical landmark, and in all its elegance and glory, theMoana doesn’t skip a beat in offering up the finestin island cuisine as well.

Beachhouse at the Moana’s executive chef Rodney Uyehara satdown with Dining Out to share a meal of all meals that he and hisculinary team have expertly prepared in honor of this momen-tous occasion. This 110th anniversary, four-course tasting menuwas conceived from menu options at the Moana dated back tothe 1930s. Uyehara, who has served at the Beachhouse since itsinception in 2008, took these original ideas and modernized theminto culinary works of art that we see today.

DDOO:: Chef Uyehara, you’ve served as executive chef here at theBeachhouse since its doors first opened. Can you explain theconcept of the Beachhouse and what guests can expect whendining here?

UUyyeehhaarraa:: What we work hard to present is an upscale bou-tique-style steakhouse with bold flavors. But at the same time, wetry to keep the menu very simple and straightforward by notoverwhelming diners with too much flavor.

We also want diners to feel comfortable when they dine here,as if they were at home. Also, watching the sunset over the oceanwhen you dine here is something that everyone is amazed at.

DDOO:: The Moana Surfrider recently celebrated its 110th anniver-sary and you featured a fabulous four-course tasting menu tocommemorate the event. Tell us about this.

UUyyeehhaarraa:: The Bishop Museum presented us with archaicmenus from the 1930s that were previously a part of the MoanaSurfrider. These menus were greatly influenced by the Europeanchefs of that time. So, what we did was take some of those ideasand incorporate them into our tasting menu.

DDOO:: This month’s Beachhouse tasting menu made its debut aspart of the anniversary celebration last week. But will the menucontinue to be available to diners? And if so, for how long?

UUyyeehhaarraa:: Yes, this particular menu will be available nightlyuntil March 31 for $110 per person, not including tax or tip.

DDOO:: Great! What can hungry diners expect to feast on as part

of this tasting menu?UUyyeehhaarraa:: The first course is a Pan-Seared

Prosciutto Scallop. The scallop is wrapped inprosciutto and we’ve incorporated a poi vinai-grette sauce served over Nalo greens. The sec-ond course is a Moyer Farms Steak Diane. SteakDiane was another one of the classics that theEuropeans brought to Hawaii, so we’re changingit up some with Big Island baby spinach andOregon morels. The third course is Roasted VealOscar served with seared foie gras and king crabtempura topped with a tawny port demi sauce.Then for the fourth and final course, we’re fea-turing a Dark Rum Crème Brulee withcaramelized sugar on macadamia nut shortbread cookie.

DDOO:: Sounds delicious! Aside from the dishes,there also are more than 200 varieties of winesoffered at the Beachhouse. Are there any specificwines that you would pair with these courses?

UUyyeehhaarraa:: I would definitely pair our Beachhouse

Cabernet with the Moyer Farms Steak Diane, andpair our Beachhouse Riesling with the Pan-SearedProsciutto Scallop. The Riesling has a nice citrusacidity to it, and it goes really well with the vinai-grette and the slight gaminess you receive fromthe prosciutto and the scallop.

DDOO:: Being that the cuisine is inspired by menusdated back to the 1930s, how does this tie into theMoana Surfrider’s 110th anniversary?

UUyyeehhaarraa:: The Moana Surfrider is a historicalsite, along with the Princess Kaiulani and theRoyal Hawaiian. These hotels have a lot of historyand Hawaiiana to them — so it’s really no surprisethat Bishop Museum has kept great records of theproperties, menus included.

DDOO:: While culinary practices have certainlyevolved since the 1930s, one particular practicehas remained constant. Tell us about this prac-tice.

UUyyeehhaarraa:: Back then, chefs tried to use local,

sustainable products and ingredients, like localgreens and veggies. This same practice continuestoday. We use Nalo greens from Waimanalo, andwe also use local poi, Big Island baby spinach andfresh asparagus from Kahuku.

DDOO:: Many love the Wagyu beef found on themenu as well. What’s so special about this meat?

UUyyeehhaarraa:: The Wagyu that we serve at theBeachhouse is actually from Australia, and weserve the Australian Wagyu strip loin and theAustralian Wagyu rib-eye. It’s a premier, top-quali-ty steak that our guests love.

DDOO:: Do you have any plans to expand theBeachhouse in the future?

UUyyeehhaarraa:: Yes, we hope to evolve the menu.Right now you can say the menu is catered to out-of-town guests, so what I would like to do is caterit more toward the locals by increasing the usageof local, sustainable products and adding a bit oflocal flair to the menu.

disappointing promise of discounted

pupus that often equates to tiny por-

tions — and empty stomachs.

However, when it comes to the

Happy Hour at Ruth’s Chris Steak

House, no worries. Every appetizer

on the discounted menu available

daily from 5 to 7 p.m. comes served

as a full portion — just as you would

get after ordering off the traditional

menu — but at a sweet price, as most

items are half off. The pau hana pit

stop also offers up drink specials on

everything from ice-cold draft beer to

wine and martinis.

The Oysters Rockefeller ($8) steals

the show, and is an event in itself. The

five half-shells are baked and served

flaming as a touch of Malibu 151 rum

is ignited on a bed of Hawaiian salt as

“It’s all about the flame,” says gen-

eral manager Don Asam after igniting

a plate of oysters at the Restaurant

Row location. “At night, the flame

shows blue.”

Ruth’s Chris also offers a stellar

selection of seafood starters head-

lined by the Ahi, served seared or

sashimi-style ($8). The freshly cut

fish is prepared with a lightly black-

ened crust or traditionally, and is

accompanied by a tangy mustard

If you’re from Hong Kong,you might think of authentic, perfect-ly textured wonton noodles. Born onthe East Coast? Rich, creamy NewEngland clam chowder could be thedish you dream about. And if you’refrom Eastern Europe, your favoritecomfort food might look like a bigbowl of borscht, the traditional beetsoup.

No matter where you’re from, youcan probably find the flavors of yourchildhood at Panya, the restaurant,bakery and catering service ownedby sisters Annie and Alice Yeung.

Chances are they’ll taste even bet-ter than you remember. The Yeungshave worked extensively to cap-ture the traditional essence ofevery dish on their extensivemenu. You won’t find muchfusion cuisine here, and that’sby design; Alice Yeung believesfusion somehow lessens adish’s ability to satisfy. Butthe menu’s cross-culturalappeal, which includesdishes designed forevery age andappetite, oftenhas colorfulresults.

“Sometimes the food on the tablesis so funny, so mixed!” she says. “Thekids are eating spaghetti or burgers,the mom has noodles, the dad hascurry with rice, and the grandpa iseating oxtail stew.”

International flavors seem to comenaturally to the Yeungs, who wereborn in Hong Kong, a city known forits cosmopolitan cuisine. Thoughtheir mother is an excellent cook,their father often beseeched them to

prepare meals for him. They’d spendhours perfecting dishes according tohis exact specifications. Many ofthose dishes are now on the menu atPanya, which also includes flavorsinfluenced by friends all over theglobe.

Alice learned how to make theThai-Style Rib-Eye Salad ($15.95), forexample, from a Thai student. “Wewould go clubbing, and afterwardswe’d have to eat something. Shetaught me how to make the salad.For a couple weeks, I cooked it everyday!”

Even Panya’s catering menu,which includes delights like home-made spicy Shanghai wontons, cur-

ried chicken salad with cranber-ries, spaghetti with clams andtiger prawns, and roast rack oflamb stuffed with garlic androsemary, is diverse and inter-national.

“I tell people, ‘Give me yourbudget and head count, and tellme your kind of style.’ It’s verysimple,” says Annie Yeung. “Wecan serve sit-down meals or buf-fet-style; weddings, anniver-

“All our salad dressings are home-

made, our food has no MSG, and we’re

100 percent zero trans-fat,” confides

Alice proudly. “We use premium, very

expensive rice bran oil from Japan, and

we change it daily.”

($3.95), in which each mouthful of

lightly sweetened crème frosting con-

tains a perfectly ripe fresh berry slice;

or the Crème Cheese Buns ($1.75), lit-

tle sugar-dusted pillows stuffed with a

secret treasure of cream cheese; or

even the Vegetarian Curry Donut

($1.75), which could rival the samosas

at the finest Indian restaurant.

Increasingly, report the Yeungs,

Panya’s customers consist of moms

and dads with busy schedules who

don’t want to endure another night of

fast food. “These are people who aren’t

very good at cooking or they have a

family and business to run, so they

order things to take home when they

come in at lunchtime,” Annie says.

E nter a restaurant at 2 in the after-noon and you expect to find busi-nessmen enjoying a late lunch, par-

ents treating their children to a before-din-ner snack, or surfers fueling up before going in for another set.

But what’s the crowd like at that same restaurant at 2 in themorning? Not too different, according to Wailana Coffee Houseco-owner Kenton Tom.

The popular 24-hour restaurant opened in 1969 on Ala MoanaBoulevard in the very spot the landmark Kapiolani Drive Inn wasstood.

“Wailana’s lineage comes from Kapiolani Drive Inn,” Tomsays. “Kapiolani Drive Inn stood on this very same spot and wasopened 24 hours with car hop service. It was very popular withthe late-night crowd, and that tradition continues today.”

Popular menu items at the casual eatery include BroastedChicken ($10.95), Oxtail Soup ($11.25) and breakfast itemsserved any time of day or night, including the JamboreeBreakfast ($6.35) and Eggs Benedict ($9.85).

“The key is the sauce, made fresh with egg yolks, drawn but-ter, lemon juice and spices,” says Tom of the egg, ham and Englishmuffin treat.

“The Jamboree Breakfast (comes with) all the hotcakes one caneat with two eggs and two strips of bacon,” he adds. “Our pancakebatter is our special recipe made every day. One can change tobanana, macadamia nut, blueberry, coconut, pineapple or even com-bination pancakes for a $1 more.”

And with its close proximity to Waikiki, don’t be surprised if youfind yourself bumping into a famous face or two.

“We have had many celebrities come through the restaurant, frommovie stars to great athletes, people like Wilt Chamberlain andShaquille O’Neal,” Tom confesses. “However, in general we noticethat they like to be treated just like our regular customers and enjoythe local foods and ambiance.”

There’s a saying that contends, “If you’re luckyenough to be Irish, you’re lucky enough!”

JJ’s opaka confit aclassic fusion dish

Fusion-style restaurants have been

increasing in popularity since the

1970s, thanks to their ability to suc-

cessfully blend separate ethnic foods and

cultures onto one plate. These eateries are

particularly popular in locations where

various ethnic groups live closely together,

hence their steady growth in Hawaii.

J2 Asian Fusion is one of the newest

fusion-style restaurants on Oahu, and its

owner and chef, Praseuth “JJ”

Luangkhot, is well-versed in the art of

fine cuisine. His Poached Opaka Confit

dish, for instance, is a classic example of

what happens when you take an exotic

dish and present it in a beautiful manner.

“It looks more like a French dish, but

tastes more Asian,” says Luangkhot.

The Poached Opaka Confit ($12.95) is a

filet of opakapaka delicately poached and

plated with a light butter sauce. The fish is

served over choi sum, topped with green

onions, shiitake, fresh ginger and a light

shoyu sauce. It also is served with a bed of

jasmine rice on the side.

“This dish is more on the light and

healthy side with the way the (opakapa-

ka) is prepared and served,” says

Luangkhot. “It is a blend of a Chinese

sauce with a French technique of cook-

ing, something very interesting and

unique.”

J2 Asian Fusion focuses its menu on

homestyle comfortability and care, while

giving guests a bit of flair and excite-

ment. “I invented this opaka dish

because J2’s is more like a mom and pop-

type of cooking, except we bring it to the

next level with our presentation,”

Luangkhot adds.

The dish is served on both the lunch

and dinner ala carte menus.

Bruce McEwan, associationboard member and chieftainof the nonprofit CaledonianSociety of Hawaii, the largestScottish organization inHawaii.

To be a Scotch whisky,McEwan explains, the drinkmust be made in Scotland, beat least 3 years old and havematured in an oak cask.However, every single-maltand every blended Scotchwill taste slightly different,which is why there will bewhisky experts on hand tohelp guide guests through thetasting.

“Whisky sort of goes withthe mood you’re in,” McEwansays. “It’s a drink that can

The Willows executive chef Jay Matsukawa alsois pulling out all the stops with a pupu buffetinspired by traditional Scottish fare but with hisown twist. For example, Scottish Bangers tradition-ally are heavy pork sausages served over mash(mashed potatoes and turnips) or colcannon (cab-bage). Matsukawa’s version is a daintier, lighterScottish Banger Hot Dog made from beef andserved atop fresh vegetables and cabbage slaw.

Other delicacies to try are Fish and Chips,Shepherds’ Pie, Corned Beef and Salmon Soup,Petite Scottish Meat Pies and Butterscotch BreadPudding. There also will be unlimited soft drinks,iced tea and coffee provided.

The Grand Scotch Tour takes place from 5 to 8p.m. in the main banquet hall. Cost to attend is$65 pre-paid, $75 at the door, but reservations arehighly recommended by March 23, as space is lim-ited.

“We’re hoping to get anywhere between 100 to200 people at this event,” says McEwan. “It’s real-ly for people who are interested in trying Scotchfor the first time, and also for people who knowand understand Scotch and want to try some fineScotches.”

For those looking for a bigger celebration, waita week for the fifth annual Taste of ScotlandCeilidh.

According to McEwan, a “ceilidh” (pronouncedkay-lee) is a time to come together in celebration,and folks will do just that April 1 as the Hawaiian

Scottish Association takes over the entire proper-ty of The Willows from 5 to 9 p.m. for this officialkick-off party to the next days’ festival and games.

In addition to food and beverage stations nes-tled around The Willow’s lush gardens and pools,there will be live Scottish entertainment fromgroups like the Celtic Pipes and Drums of Hawaiiand Mainland band Mythica and Melissa Cox.

Cost to attend is $25 in advance, $30 at the door,and includes access to unlimited pupus, softdrinks, iced tea, coffee and three drink tickets goodfor beer, wine or 1.5-ounce Scotch tasting.Children’s tickets cost $15 each and include a sep-arate children’s buffet and unlimited soft drinks.

“It’s a true Scottish evening,” McEwan says.“The quality of the food is very good, as well as

Ingredients:

• 8 ounces fresh ahi

(fresh pink tuna) cut into

an inch-long tube

• 2 sheets nori (roasted

seaweed)

• 1/2 cup all-purpose flour

• 1/4 cup cornstarch

• 1 whole egg

• 1/2 cup bread crumbs

(panko)

• 1 tablespoon furikake (if

available)

• 1 tablespoon chopped

macadamia nuts

• 2 cups vegetable oil, to

fry fish

Preparation:

• Wrap fresh ahi tube

with nori, put aside.

• To prepare tempura bat-

ter, in a bowl, add flour,

cornstarch and egg with

1/4 cup of cold water. Mix

well until the batter has

no lumps. Make sure bat-

ter is on the thick side.

• In a sheet pan, mix

bread crumbs with

chopped macadamia nuts

and furikake. Set aside.

• Dip fish already

wrapped with nori in the

tempura batter, then

“We bring the sorbets infrom La Gelateria, a localcompany, which uses pri-mary local ingredients,”Longworth says. “What’sunique is that we are able toobtain local flavors that areunique to Hawaii.”

I don’t know about you,but after a heavy meal oflasagna or penne rustica,savoring each scoop of sor-bet as it cleanses my palateis complete heaven.

An order of Italian Sor-betto is priced at $6.59 andfeatures six mini scoops ofItalian sorbet with an as-sortment of f lavors tochoose from — be it guava,mango, coconut, Kaao or-ange or dragon fruit.

All are refreshing in theirown right, but my absolutefavorite is coconut sorbet.It’s relatively healthy, minusthe sugar, and made out ofreal coconut without sacri-ficing the creaminess of icecream.

My second-best f lavorpick would have to beguava. Sweet in taste with abit of tartness to bring thesorbet to the next level, I’msure all you foodies wouldagree that these sorbettosare melt-in-your-mouth de-licious.
