History
P.Bouchard (1814-1898) represents the 5th generation of the family; he was acharismatic character who o�ered an international destiny to the House, but also to theentire region and its wines. He was a brilliant statesman, combative and restless defenderof great causes, devoting his life to serve his region, his city and the wines. Hiscommitment led him to found a viticultural school (that is still open today!) to perpetuatethe tradition of passing on wine-growing techniques and skills to future generations.The Heritage du Conseiller range celebrates what we consider his legacy: the passion forthe Chardonnay and Pinot Noir grapes, and the will enhance their natural qualities usingour traditional know-how.

Colour : bright red garnetNose: delicate aromas of cherry and co�ee with subtly integrated toasted notesPalate: the mouth is appealing and fruity with delicate toasted notes and a medium body.Flavours of chocolate are emphasized by a hint of menthol, lying on silky tannins. The�nish is long with assorted fruit �avours and a subtle touch of oak.

Origins
This wine perfectly re�ects our commitment towards the enhancement of varietals, andmore speci�cally Pinot Noir and Chardonnay.
Vinification and maturing
The grapes were harvested mechanically, a great way to ensure a pre-fermentarymaceration period that will give a wine with brighter color and fresh fruity aromas. Afterthat 4-days period, the harvested plots were vini�ed separately with a long fermentationof at least 3 weeks. The tank fermentation process ended with a post-fermentarymaceration of 7 days at hot temperature to re�ne the tannins.Then, the wines were aged for 4 months on �ne lees for a quarter in oak barrrels and forthe 3 others in stainless steel tanks.

Full of history and with fine flavour, this wine pays tribute to the General Counsellor, a major figure of the family, who devoted his life to the renown of the noble grapes of his home region.
In his honour, the house is perpetuating the tradition of quality, elegance and prestige in selecting and making fine wines which marvellously express all the richness of the French terroirs.

The grapes for this wine were harvested in the Pays d’Oc area in the South of France, on well-chosen vineyards adapted to the cultivation of Pinot Noir. The soils are mostly clay limestone, the climate Mediterranean, with some oceanic in�uences.
