Commodore’s MessageHappy 2013. December ended with new beginnings. As we start the new year with a new board of directors, please join me in welcoming the new additions to the board: Rear Commodore, Dan Peck, Recording Secretary, Bryan Clutz, Corresponding Secretary, Bill Delaney, and Directors, Pat Leva, Kevin Moran and Joe Oster. Thank you all for volunteering your time and experience, it is greatly appreciated. Welcome aboard. Breakfast with Santa was a truly memorable event. Once again Santa arrived by helicopter to the delight of all the children and adults as well. Many thanks to Bill White for organizing Santa’s ride over the past 5 years. The Holiday Ball was well attended and a great time was had by all, a fantastic party. Thanks to the Entertainment Committee and decorating volunteers for making the club look like a winter wonderland and organizing a first class event. Some of you may have noticed that the water level is a tad low (ya think). In fact

we are at a 50 year low and since no one can predict the future we’re not certain where we’ll end up. What is certain, however, is that based on recent soundings some dredging is necessary. Due to the negotiating acumen of Skip Shumway we were able to secure a very favorable deal and have already begun to dredge the entrance channel. We will continue along the main fairway from slips 1 - 32 this winter (weather permitting) and spring.The plans for the upstairs kitchen remodel have been finalized and by the time you read this, work will have begun in earnest. Thanks to Past Commodore Fred Karshick for overseeing this complex project. We hope to have the majority of this project done during shutdown but it will take some additional time to complete. The impact on the bar and restaurant should be minimal.

Club Manager, Mary Smith and Education and Events Director Sarah Hannon have a number of activities and events planned for the cold winter months ahead. I’m sure you will find that the club is a warm and welcome retreat when the weather turns cold. See their columns for details.I would like to thank Past Commodore Keith Burhans (congratulations on your new job) and his predecessors for doing an excellent job on making RYC such an outstanding club. Each commodore I have worked with has been different in their approach to implementing the changes necessary to make the club a more rewarding experience for all of our members. While each one has been different, each has been the same in their respect for the traditions and values that have allowed the club to prosper for the past 135 years. Through change and tradition we have made considerable progress. There are many opportunities ahead. In the coming year we plan to develop programs to get more members (both boat owners and non-owners) on the water by expanding sail and powerboat instruction, offering more frequent and shorter cruise events and increasing spectator opportunities for races and regattas. In addition the membership committee under the guidance of Betsy Lawless has a number of activities planned to help ease the integration of new members into the club. I ask everyone for their support in these efforts.

RYC Board of Directors Meeting Highlights - December 13, 2012

RYC Annual Meeting

Call to Order: Commodore Burhans called the meeting to order at 1800 hours.

Moment of Silence: Observed in memory of all members who passed away since the last annual meeting.

Recognition was given to the many Past Commodores present.

Corresponding Secretary Mike Ebertz read a note from the American Legion thanking RYC for hosting the ceremony commemorating D-Day and the veterans who served. He also read a note from Curtis and Sheri Gilbert commending sailing coach, Jim Carminati, for doing such a terrific job with our youth program.

Treasurer Joe Altobelli reported on finances for the Fiscal Year Ending 2012. The club ended the year with a surplus that resulted in a positive variance vs. the budget, even though Capital Expenses slightly exceeded our budget.He thanked the finance committee for all of their hard work throughout the year and to Karen Servis for her diligence when it comes to preparing and reporting the financial statement. Also, thank you to Mary Smith for all of her efforts in managing the house, which ultimately played a significant role in the financial success of the club over the last year.He noted that we have many financial challenges facing us over the next year, but with a solid and growing membership, he remains confident that we will be able to maintain a strong financial position in 2013.

Basic & Bareboat Cruising Certification

RYC ASI will be launching a new course this May for members to earn the Basic & Bareboat Cruising Certi-fication from US Sailing. For many reasons we have decided our first cruise will take place on the Chesa-peake Bay departing from Annapolis, Maryland. Some may not need or wish to earn the certification, however you may be interested in learning how to cruise or go-ing on a cruise with members.

This 5-day cruise is set for tdeparture May 18th and return on May 24th but is tentative based on those who wish to participate and their availability. The sailing season in Annapolis is Mid-May through Mid-October. If you are interested in participating, please contact [email protected] and I will provide you with more information.

Rules & Tactics seminar with Dave Perry

Rules & Tactics New rules take effect January 1, 2013. The Rules & Tactics Seminar explains the rules (old and new) and explores how the rules shape racing tactics. Using a curriculum created jointly by Dave Perry, David Del-lenbaugh, and Bill Gladstone, you’ll learn how to use the rules to control other boats and how to keep your rivals from controlling you. Everyone receives the 2013 Rules & Tactics Seminar Workbook.

Rochester Yacht ClubJanuary will bring some temporary changes to our Restaurant due to the upcoming Kitchen renovations. Although we won’t have the Upstairs Kitchen available, it is my hope that we can still provide a quality dining experience for all.

We will be closed for a regular January shutdown from the 2nd to the 17th. On the 17th, in conjunction with the Bar being open and limited cooking capacity, we will have a limited Bar Menu available. It will include a variety of Burgers, Wings, a few Salads, and a few Wraps. On Friday, we will have a limited Dinner Menu with the Friday Fish Fry as the main focus. Other items could include Prime Rib, Filet Mignon, whatever Fish swims up to the Sea Wall that I can club to death & cook, if I get lucky & run something over, etc. We will have very limited cooking capacity, so I’m afraid variety will be lacking.

After speaking to Mr. Basset, Mr. Lissow & Mr. Leva, I’m hopeful to have the Kitchen back in time for Valentine’s Day. If so, we will have our New Lunch & Dinner Menu later that week. I already have started to create it & I can’t help but think of “Duck Bacon”....

Anyway, here is a recipe that has been in my family for years. It’s perfect for a cold January day, while spending time with your family.

cassouletingredientsFor the beans: 1 tablespoon butter 1/4 cup onions, chopped 1/2 cup celery, chopped 1 pound Dry cannellini beans 1/4 teaspoon salt 1/8 teaspoon cayenne pepper

8 cups water 1 bay leaf

For the meats 1/4 cup all-purpose flour 1/4 cup oil 1 cup chopped onions 1/2 cup chopped celery 1/2 cup chopped bell peppers 1/2 cup chopped carrots 1/2 teaspoon salt 1/8 teaspoon cayenne pepper 8 each duck legs confit 1 pound andouille sausage links, cut into 6 equal portions 2 cups chicken broth1 pound roasted duck, cut into 2-inch pieces

DirectionsFor the beans:In a large saucepan, melt the butter. Saute the onions and celery for 3 to 4 minutes, or until they are slightly wilted. Add the beans, salt, cayenne, water and bay leaf and bring to a boil. Reduce heat to medium-low and cook until beans are tender and most of the water is absorbed, about 2 hours. Preheat the oven to 400 degrees F. For the meats:In a large oven proof skillet, over medium-high heat, combine the flour and oil. Stirring constantly, make a medium brown roux. Add the onions, celery, bell peppers, carrots, salt and cayenne. Stirring constantly, cook for 3 to 4 minutes or until vegetables are slightly wilted. Add the duck legs and sausages and cook for 2 to 3 minutes on each side. Add the chicken broth and stir the mixture until the roux and broth are combined and mixture thickens. Scrape the bottom and sides of the pot to loosen any brown particles. Bring to a boil. Add the beans and duck meat. Reduce the heat to medium-low and cook for 30 minutes.

From the Manager’s OfficeDear Members,

I hope everyone enjoyed the Holidays and is ready for the New Year!

As I write this article I can barely see out through the frosted glass on my office windows. We just had the first major snow fall of the season and outside the club looks like a “Winter Wonderland”. What great fun it is for the children to have this much snow during their school break. I am sure the Skiers will take advantage of the new fallen snow as well. Inside we are warm and comfortable. The fireplaces are on, the popcorn is made, and the members are at the bar enjoying our Holiday drink specials.

It was great to see so many members using the club during the Holidays and we look forward to seeing you again in January. Our annual shut- down this year will begin January 2nd and we will re-open Thursday, January 17 in time for the

January board meeting. Reciprocal dining privileges have been set up with some of the local clubs for your use during shut down. The list includes Oak Hill Country Club, Locust Hill Country Club, Monroe Golf Club, The Country Club of Rochester, and Genesee Valley Club. As always we are welcome to use Penfield Country Club any time during the year. Most clubs have dress codes and require reservations. You can find a list of Club names with their phone numbers and dress codes in the log and on-line.

During shut- down we traditionally do some major cleaning, general overhaul of equipment and work on any projects that require more than general maintenance. This year’s project is to replace the upstairs kitchen floor, which will begin on January 3rd. The project is due to be completed approximately by mid-February with our goal being fully up and running by Valentine’s Day.

This project will have some or minimal effects on our food service when we re-open after shut-down. Due to limited accessibility of the upstairs kitchen equipment and work space, we will offer our bar menu for lunch and dinner service during the week. Sunday breakfasts will resume mid-February when we return to full-service.

Chef George will create a special limited dinner menu that will be available on Friday nights and will include our traditional Fish Fry. Along with the bar, our “Pot of Gold” will not miss a beat! Come to the club on Friday nights, have a ticket open by 6:15 and wait for your name to be drawn. You could be our next Winner!

Our plan is to be fully functional by Valentine’s Day so make your reservations with us. Chef George is planning a Special Menu for you and your Valentine to enjoy. To make the night even easier for couples with children, we will have a baby-sitter in the kid’s room from 5:00 until 9:00. Dinner service will begin at 5:30 and go through 9:00 p.m. with music until 9:30 p.m.

The Mayans predicted that great change would occur after December 21st, 2012 and with the joyful New Year here, let’s all be sure to make great changes in 2013. This month I will be traveling to the National Sailing Program Symposium to attend seminars and break-out sessions related to every area of program management. I anticipate learning quite a lot and furthering this growing desire to take the helm this summer myself (one of my many resolutions). As you think about your new resolutions & goals for the year, keep RYC in mind. Whether you decide to learn a new skill, improve your sailing abilities, or to spend more time here at the club, I will be there to help make your resolutions a reality.

The Adult Sail Instruction program will be entering a year with new offerings for boaters of all skill levels. Our goal this year is to allow more people to get out on boats and try something new. Our membership is sure to reap many benefits from our new courses. Our Keelboat program has expanded to include the following certifications from US Sailing: Basic keelboat, Coastal Navigation, Celestial Navigation, Basic Cruising, and Bareboat Cruising. Also new this year is a 2-hour discover sailing course to allow even the most hesitant of boaters a chance to try sailing. We are also in search of 2 more Keelboat certified instructors- if you would like to share your love for sailing, along with your skills, consider joining our team this summer. We will arrange for the Keelboat Instructor certification course for you. Course dates and times for the summer sailing season will be posted soon. If you would like additional information about any of these courses or would like more information on how to become an instructor, feel free to email me at [email protected] or catch me at the club on Friday nights.

For those who prefer to stay on land, you can look forward to more member socials and activities this coming year. Consider joining us on January 11th for a not-so traditional Friday night with the club. We will enjoy a great dinner at Dinosaur BBQ & then watch the Rochester Amerks take the ice. This is sure to be a fun time so sign up and bring a friend or the whole family. There will be a member social in February or March- take the time to come down and introduce yourself to members new & old.

While you may not be able to anchor at the club until the 17th this month, I sure hope you keep in mind all that the New Year has to offer as soon as you can come back.
