DON MANUEL´SChristmas Eve Posada Cocktail Party at Don Manuel’s Bar, hosted by our General Manager Fernando Flores together with the management team. 6:30pm - 7:30pm.

Enjoy a special Christmas Eve Menu from 6pm - 11pm and a Kids Menu à la carte.

A Tempting Christmas Dessert Selection in Su Cocina will be served for all guests to enjoy from 7pm - 10pm Entertainment: Live Music + Special Performance

Thursday, December 24th

Welcome to the beginning of our festive season with the Christmas Eve Posada cocktail party hosted by our General Manager, Fernando Flores together with the management team. With the pacific ocean as the backdrop and sophistication of True Waldorf Astoria service as our guide, we start our festive celebration highlighted by a tempting Christmas Dessert Selection for all to enjoy.


Friday, December 25th

CHRISTMAS DAYWelcome home for the holidays. Over the years, our resort has created so many unique traditional special to our resort and cherished by our guests. Nothing speaks to a Pedregal Christmas better than Santa Claus and his escort of elves arriving in a horsed drawn carriage through the Dos Mares Tunnel. Presents are given to the children during a folklore festival with mariachis and traditional Mexican Escaramuzas. A holiday tradition made even sweeter with Mexican hot chocolate.


Saturday, December 26th

Rhythms and dance come to the beach with a menu that features more of international Latin flavors. Salsa and marenge dancers move to the sounds of live music for what will be an evening filled with energy, fun and memories.

Sunday, December 27th

Drive in movie night Cabo style. While the car may be a beach chair, children will enjoy a family friendly movie while adults enjoy a gourmet meal paired with wine and champagne.

Champagne Pairing dinner for our adult guestsLet the bubbles flow. Enjoy a three-course pairing menu where our Culinary Team partners with our Wine Manager Jhonatan Adame. Each course paired with hand selected varietals creates a great compliment to culinary creations. This is Baja Sophistication done right, while the kids watch a family friendly movie close by on the Don Manuel’s terrace.


Monday, December 28th

What is a visit to Mexico without enjoying the flavors and traditions of our destination? Our culinary team have created a menu from recipes cherished through generations. We have a rich history share through art, music and food. This evening will highlight the best of our history Pedregal style including art from our boutique AlmArte, music feature our favorite mariachis, and food root in family traditions passed down through the years.

Another idyllic al fresco experience with this Mediterranean sunset dinner featuring Steaks, Whole Fish, Salads and Desserts. Enjoy a three-course menu in a casual environment with live music from 7pm - 11pm


The intention of this day is to say good bye to 2020, and restore ourselves moving into the new year. Our Curandera and Mexican dancers will perform rituals meant to prepare us all for the new year. Waldorf Astoria Spa share treatments and wellness activities for the body and soul rooted in traditions passed down through the centuries.

Thursday, December 31th

DON MANUEL´SParty like it’s 2021 with a five-course gourmet dinner at Don Manuel’s, decked out in festive NYE decorations with a live band performing throughout dinner. After, let the ringing in begin for the New Year’s Eve Countdown Party with fireworks on Don Manuel’s Bar Terrace and dancing soundtrack provided by the “Classic Twelve Band”. Lights out at 1am.

EL FARALLONA bounty of freshly caught seafood is served from 5pm - 11pm, including prized softshell crab, Baja clams and Oysters. Make a night of it: Ask your sommelier for the Champagne pairing with Oysters & Caviar.

Entertainment: Live Music will be played throughout dinner.

BEACH CLUB Open with à la carte menu and specially prepared dinner specials 6:30pm - 10:30pm

Our biggest party of the year, featuring elaborate culinary displays, live music, and dancing under the stars, fireworks on the beach follow the theme of Sparkle, Glitter, and Shine. Ring in the a new year cliffside at El Farallon restaurant our at our signature restaurant Don Manuel’s followed by live entertainment and after dinner party for all. Spectacular fireworks show included!
