MEET THE SPEAKERS
Neal Barnard, M.D. Neal D. Barnard, MD, is a leader in nutrition and research. As an adjunct associate
professor of medicine at the George Washington University and a researcher funded
by the National Institutes of Health, he has led key research studies to improve the
health of people with diabetes, obesity, lipid disorders, and other serious health
problems.
He is the editor-in-chief of the Nutrition Guide for Clinicians and the author of more than
15 books on nutrition and health for lay readers. His research has been cited by the
American Diabetes Association and the American Dietetic Association in official policy
statements on healthful diets.
He completed medical school and residency at the George Washington University School
of Medicine in Washington, D.C. In 1985, he founded the Physicians Committee for
Responsible Medicine, a nationwide group of physicians and lay supporters that
promotes preventive medicine and addresses controversies in modern medicine.
Keynote Lecture: Kickstart Your Health The latest innovation in nutrition is using foods to trim away weight—not by starving the weight off, but by
letting foods control your appetite and boost your metabolism. Using Dr. Barnard’s program in research
studies, participants were able to increase their calorie-burning speed for three hours after each meal, helping
the pounds melt away. Two years later, the weight had never returned. The “side effects” are lower cholesterol,
healthier blood pressure, improved energy, and better overall health. Rather than require a lifetime change, the
Kickstart program gets you onto a healthier path in 21 days
Lecture 1: Power Foods for the Brain Five million Americans have Alzheimer’s disease, and many more fear that it may be in their future. Milder
forms of memory loss can be frustrating, too, ranging from momentary lapses to more persistent cognitive
impairments. Luckily, large studies at major research centers have shown that foods can help defeat threats to
memory. Diets high in “bad fats” (saturated fats and trans fats) and overloaded with iron and copper increase
the risk of developing Alzheimer’s disease, while certain antioxidants reduce risk. Aerobic exercise helps, too,
and has even been shown to reverse age-related brain atrophy. Cognitive exercises and getting regular rest and
sleep can boost memory, reasoning, and reaction time. Even people who are at genetic risk for Alzheimer’s
disease may benefit from diet and lifestyle changes. Many of the findings discussed in this lecture are based on
Dr. Barnard’s new book, Power Foods for the Brain, which presents results of scientific studies and builds
them into simple steps for improving the health of your body and mind.
Lecture 2: An Intensive Plant-Based Diet for Diabetes Management Diabetes is more prevalent than ever. For many individuals the diagnosis means endless doctor visits and
frequent trips to the pharmacist. Recent research has shown, however, that diabetes can be controlled and even
reversed with an easy-to-follow plant-based diet. By sticking to a few basic principles and making simple
lifestyle adjustments, individuals can enjoy a surprising degree of control over diabetes.
A long-time radio host and author, Michael A. Klaper, M.D. currently practices nutritionally-based medicine at
True North Health Center in California. His talent for presenting complex medical topics in a simple, enjoyable
format has made him a sought-after speaker at health conferences worldwide.

Hilton Becker, M.D., F.A.C.S.
Dr. Hilton Becker is a board-certified plastic and reconstructive surgeon and a voluntary
faculty member of the Cleveland Clinic Florida. He has published over 50 articles in the
plastic surgery literature and contributed several chapters to plastic surgery textbooks.
After years of wound healing-related research, Dr. Becker became aware of the delicate
balance that exists in the growth of fibroblasts, the cells that make collagen in the skin.
Aided by his background in chemistry, he investigated the effects of hyaluronic acid on
collagen synthesis and became keenly aware of the toxic effect of chemicals on cell
growth in the skin - particularly the chemicals found in skincare preparations.
Consequently he authored What Are You Putting on Your Skin? Dr. Becker is a
consultant to two cosmetic companies, has 12 patents related to medical devices, and a
patent pending on a unique natural moisturizer.
Lecture: What Are You Putting on Your Skin? Most health-conscious people will read food labels trying to avoid unnatural chemicals, preservatives, and
other additives. Many are not aware, however, that these same chemicals are found in skincare products. The
skin is the largest organ and is able to absorb chemicals in a similar fashion to that of the intestine, thus rapidly
introducing chemicals to the bloodstream. This lecture will give you insight into the skincare industry, how to
read beyond the hype, how to understand what skincare products contain, what to avoid and what really
works.

David Blyweiss, MD
Dr. David J. Blyweiss began his medical career as a clinical pharmacist in South
Florida prior to earning his medical degree from St. George’s University School
of Medicine in 1982. Over the last twenty years, with the nutritional medical
knowledge base expanding in the fields of nutrigenomics, proteomics and other
related “orthomolecular” disciplines directed towards patients’ biochemical
individuality, Dr. Blyweiss became an early adherent and experienced
practitioner of what would become known as “functional medicine”. Dr.
Blyweiss has used this matrix of systems biology to effectively manage and
alleviate the symptoms related to the most “difficult-to-treat” conditions by
addressing the underlying causes, allowing the body to heal itself.
Lecture: Conducting a Nutritional Assessment This will be an interactive session with attendees observing, then doing, a nutritional physical examination
from start to finish. Participants will also experience exam room-based testing of mineral deficiencies
commonly seen in practice. After this session, the attendee will be able to identify essential fatty acid
deficiencies, multiple food sensitivities, adrenal dysfunction and tissue stored heavy metal toxins, among other
important findings.
Lecture: The GI Tract from Top to Bottom Ever more studies are revealing the importance of our microbiome and the health of the gut in acute issues and
chronic disease. In this lecture, you will learn about the importance of a healthy GI tract, how we lose that
health to daily lifestyle choices and the environment. Also, learn about the natural consequences to one’s
health when eating a standard American diet. Lastly, this lecture will discuss why we have increasing levels of
food sensitivity and how an abnormally increased intestinal permeability affects all of us on a chronic basis.
Lecture: Factors & Treatments in Autism, Arthritis, Eczema & Leaky Gut Case
Studies Case studies dealing with Autism, inflammatory arthritis, total body eczema
with adrenal dysfunction and leaky gut syndrome with overgrowth of Staphylococcal bacteria will be
examined. The attendee will to learn how to uncover relevant underlying factors of stressors, toxins, allergens,
nutrient deficiencies, inflammation and infection in the associated case studies and retard or reverse them.
Lecture: Common Nutritional Deficiencies Associated with Medications In this lecture the attendee will learn about the most common nutritional deficiencies associated with the use
of FDA-approved medications. Common secondary effects of medication, often not thought of, will also be
discussed.

T. Colin Campbell, Ph.D.
Dr. T. Colin Campbell, Jacob Gould Schurman Professor Emeritus of Nutritional
Biochemistry at Cornell University, is an author of The China Study. Startling
Implications for Diet, Weight Loss and Long Term Health (Campbell TC and
Campbell, TM II, 2005). With more than 70 grant-years of peer-reviewed research
funding (mostly NIH), he has authored over 300 research papers on diet, nutrition and
health derived from laboratory-based experimental research and large-scale human
studies in China and the Philippines. He has been advisor to several government
agencies, non-government organizations and corporate bodies. He has held senior
adjunct professorial positions at the University of Oxford in England and Jiao Tong
University in Shanghai.
Lecture: The Origin and Meaning of The China Study Research The China Study (published 2005), co-authored with my son Thomas M. Campbell, II, MD, was based mostly
on evidence gathered from my long career in experimental research and food and health policy-making, mostly
at Cornell University. Although this research was initially focused on diet and cancer, it evolved into a much
more expansive story about nutrition and health, in general. This story takes me back to the ancient Greeks,
especially Hippocrates, when he said, “Let food be thy medicine, and medicine be thy food.”
Lecture: The Origin and Meaning of Whole: Rethinking the Science of Nutrition The China Study is about ‘what’, while Whole (published 2013) is about the ‘why.’ It is possible to frame this
long-disparaged story of nutrition as an expose of conspiracy but this is not very useful. I prefer a much more
positive explanation, which simultaneously involves both professionals and lay people and which encourages
a new paradigm that is much more promising. It provides an answer that tells us why the public so confused
about nutrition, why medical training and biomedical research agencies ignore the discipline of nutrition and
why food and health policy-making often comes up short of the scientific evidence.
Lecture: Does A Future of Health and Happiness Make Sense? Resoundingly, yes! Reflecting on my experiences in cellular biology, especially its elucidation of the wonders
of nutrient metabolism, chemical carcinogenesis and enzyme function, I find the cellular world to be beyond
being merely awe-inspiring. The working environment of each of our cells (10-100 trillion body cells) also
illustrates a similar higher order dynamic for organ-to-organ communication that explains a characteristic of
nutrition function that has been substantially ignored. I am confident that when people get to know this, they
will change and it is a bottom-up evolution that will demand change at the top of our society as well.

Keynote Lecture: Shift Easy - the Psychology of Joyful and Sustainable Diet
Improvement On this cruise, it’s easy to eat a whole-foods plant-based diet. Once we return to the “real world,” things get a
lot more challenging. The multi-billion dollar food industry markets junk food and animal products at every
turn. Well-meaning friends and family worry about where we get our protein. Our own cravings can hijack the
best of intentions. And social gatherings are a constant challenge. Join marketing consultant, coach, and
contributing author to Whole: Rethinking the Science of Nutrition, Howard Jacobson, as he shares ways of
inoculating ourselves against the marketing, social pressure, and internal chatter that can derail our best
intentions.

Keynote Lecture: From Operating Table to Dining Room Table – The Evolution of a
Nutritionally-Aware Physician Dr. Michael Klaper’s forty-year medical career has witnessed some of the most profound changes in medicine.
Old dogma has been overthrown, breathtaking progress has been made and profound, sometimes unnerving
changes have taken place in his beloved healing profession that now affect us all. Join him on his journey
though the most exciting decades of modern medicine to learn how he came to realize the cause and cure of
most Western diseases – which kill millions every year and threaten to bankrupt our economy – comes down to
three simple words: IT’S THE FOOD!
Lecture: Digestion Made Easy Join Dr. Klaper as he takes you on a fascinating journey through your digestive system to meet the amazing
organs that turn your food into YOU! You are NOT what you eat. You are what you DIGEST and ABSORB!
Learn how your remarkable digestive system extracts and utilizes the nutrients from your food – and along the
way get to know what your stomach, liver, pancreas, esophagus, intestine and colon really do. After this
journey of discovery, you will know how to prevent, and often reverse serious digestive diseases and to better
appreciate the miracle of every meal.
Lecture: Sense and Nonsense in Nutrition Dr. Klaper explores some common beliefs and practices in nutrition and discusses which may be of value and
which to avoid; along the way he exposes some “physiologic parlor tricks.” From “gallbladder flushes” to
colonic irrigations the list will include:
- “Fat-burning” pills
- The truth about sugar
- Multivitamins – smart idea?
- “Low-carb” diets – effective or dangerous?
- Red wine – as healthy as scientists say?
- Coffee – beneficial or hazardous?
- Does cooking kill the enzymes in food?
- And much more…

Lecture: Vitamin B-12 – “Molecule of Mystery” — Revealed! Perhaps no topic in vegan nutrition causes as much concern—and confusion—as vitamin B-12. What does it
do? Where is it found? How much do you need? What happens if you don’t get enough of it? Does it occur
naturally in food? If a vegan diet is complete, why do we need to take B-12 supplements? Are all B-12
supplements the same? Do you take them with food? These and other questions will be fully explored and
answered in this lively, illustrated presentation.
Lecture: Putting Nutrition to Work in Clinical Practice Dr. Klaper explains the mechanisms behind three formidable diseases every person fears and every physician
struggles with:
- Artery disease: high blood pressure (hypertension) and clogged arteries (atherosclerosis) leading to heart
attacks, strokes, amputations and death
- Ulcerative colitis and inflammatory bowel disease
- Type II (“adult onset”) diabetes
Janet Konefal, PhD, MPH, AP
Dr. Konefal is the Director of iCamp, the Integrative and Complementary Academic
Medicine Programs at the University of Miami Miller School of Medicine. Recently,
she collaborated with the Institute for Functional Medicine to develop a Clinical
Nutrition Training Program supported by the Wolfson Foundation. One of her
primary areas of expertise is in mind-body medicine, including the application of
acupressure for improving cognitive abilities and reducing negative psychological
states. She is community-oriented and focuses on team building as the process for
building a better health care system. She can be seen practicing what she teaches as
she jogs, rebounds and eats her veggies.
Lecture: Dietary Supplements: Policy, Regulation, & Safety The use of supplements in America is a billion dollar business, and while there are adequate legal regulations
to protect the general public, there is not yet the means to ensure companies abide by these regulations. In
addition, supplement research is difficult to interpret and to then extrapolate guidelines for use. Many
products are contaminated or without active ingredients. Balanced up against the Standard American Diet
(SAD), it is difficult for the health care provider, or anyone, to decipher what is best for an individual. This
presentation will address some major issues involved in providing safe and effective supplements, and discuss
problems and successes in supplement research.

Lecture: Training Exercises to Improve Vision Thirty-eight years ago, after years of wearing glasses, my vision cleared—instantaneously changing my life. I
discovered that vision is not the same as eyesight, and that vision training can allow us to see in a whole new
way. Inefficient vision results in inefficient attention, reading and learning. Keeping your eye on the ball can
make the difference between an average performance and an exceptional one. Whether you wear glasses or not,
training your eyes can give you the winning edge in all aspects of your life. Discover your visual potential.
Exercise your eyes and see.

Lecture: Sensible Integrative Medicine and Nutritional Approaches to Some Serious
and Not So Serious Symptoms, Complaints or Illnesses Let us examine some of the common complaints, symptoms or illnesses in our society such as fatigue, over
weight or obesity, brain fog, memory loss, addictions, heart disease, hypertension, diabetes, hypothyroidism,
allergies and trauma-related illness, anxiety and mood disorder. Are there any common denominators or
sensible early warning signs and interventions that will get us motivated and get us acting in a sensible way
not only to get rid of symptoms or unwanted health issues but also to prevent or reverse more serious illness.
What does research show in regards to applied nutrition, exercise, environmental and psychological
interventions. What are the factors that put us at most risk. What leads to genetic expression—the science of
epi-genetics—or can gene expression be modified.
Lecture: From Symptoms to Recovery: Nutritional, Environmental and Psychological
Factors in Health and Illness There are numerous nutritional, psychological and environmental factors that contribute to health problems.
Knowledge, recognition and understanding in these areas may be the gateway to better prevention or treatment
with more successful outcomes in health or illness management. A flexible approach to simple or complex
health problems will aid the knowledgeable person or their health care provider in achieving more successful
outcomes with the choosing of better options, diagnostic tests and interventions. Examples will be discussed
with an overview of some practical information, new science, and applications on which successful healthcare
rely. The recognition of early signs of more high risk illnesses where nutrition and other early interventions
may prevent illness will be discussed.
Lecture: Understanding What Has Merits or Is Important – The Pros and Cons of Lab
or Diagnostic Testing, Nutritional Diets, Supplements and Other Recommendations
from Health Care Providers Let’s take a serious look at some of the common recommended nutritional supplement, lab tests, special
nutritional diets as the gluten-free diet, and discuss what may be helpful and what may not. How do some
current nutritional options fit with a macrobiotic diet or with what you are already doing. How can one become
a more successful advocate for your own health and well-being and make better choices in your own
healthcare. This session will be fun and interactive with information Dr. Parks has to share along with some
current information and strategies you can apply for your own health improvement or maintenance.
Lecture: Secrets to Being Healthy – Successful Living, Health and Longevity With our bombardment of information, how does one pick and choose and motivate oneself in doing a
successful health or recovery program? For this presentation let’s get everyone up and moving and
participating, but of course only if you wish. Let us not only explore nutrition and eating styles, but other
areas of health fulfillment as active exercise, yoga, meditation, ACT psychology, Emotional Freedom
Technique, and much more and of course your contribution of what has worked for you if you are willing
to share. Some discussion about what we know that contributes to health and longevity and what doesn’t.

Ronald Peters, M.D., M.P.H.
Ronald Peters, MD, MPH graduated from Stanford University with honors. He then
attended UCLA School of Medicine followed by a Masters in Public Health at the
UCLA School of Public Health. Recognizing the limitations of conventional medical
training with its emphasis on drugs and surgery, he has devoted the past 40 years to the
study of integrative, or functional, medicine. He worked at the Pritikin Longevity
Center and then developed the InnerHealth Program, both in Los Angeles. Looking
more deeply into the nature of disease, he studied with Master Teachers for 20 years,
thereby realizing the unity of mind and body. Mindbody medicine is an essential and
unique healing approach that allows people to experience the timeless Truth:
consciousness creates both health and disease. He summarized the formative power of the conscious and
unconscious mind in his book, Edgework, Exploring the Psychology of Disease. Dr. Peters is an accomplished
writer and lecturer and is highly effective in helping people learn from their health problems and transform
stress and disease into health and healing.
Lecture: Osteoporosis: The Myth of Diagnosis and the Reality of Prevention and
Treatment In 1994, a World Health Organization committee changed the definition of osteoporosis from a fragility
fracture to a measure of bone density. Suddenly millions of American women were diagnosed with
osteoporosis and began taking a variety of drugs, staring with hormone replacement therapy and later
switching to Fosamax and a host of others. The problem is that bone density is not a measure of bone strength
and therefore is a poor predictor of fracture risk. There are many factors that lead to fractures, not just bone
density. Age, heredity, body weight, diseases, lifestyle, frailty, vitamin D levels, and amount of trauma all play
important roles. In this lecture you will learn how to evaluate the health of your bones and how to maintain
and restore strength to this dynamic, living tissue that gives your body support and definition.
Keynote: The Psychology of Disease and the New Mindbody Medicine
Revised and updated with new research The great psychoanalyst Dr. Franz Alexander summarized the mindbody connection when he wrote: “The fact
that the mind rules the body is, in spite of its neglect by biology and medicine, the most fundamental fact
which we know about the process of life...” The origins of physical disease are within consciousness – the body
is the messenger of the conflicts, sustained fears, suppressed emotional traumas, disturbed patterns of
thinking, and other imbalances that lie within the conscious and unconscious mind. Disease is the body’s way
of getting your attention and inviting self-exploration, thereby offering true healing. In this workshop you will
learn a new model of healing that will guide you to greater levels of health, self-understanding and wisdom.
Powerful new research on the DNA and consciousness connection will be presented.

Lecture: Cancer – What Are the Causes within Body and Mind?
Revised and updated with new research Cancer is easy to prevent and hard to treat. In this lecture, you will learn how the terrain of the body
deteriorates over time, thereby allowing a renegade cancer to escape immune surveillance and spread in the
body. Chronic inflammation, weak immunity, impaired digestion and assimilation, nutrient deficiencies, viral
and bacterial overgrowth, toxin accumulation and lowered oxygen levels are a few of the conditions that permit
cancer development. However, the most important factor may be psychological stress, which can be conscious
and unconscious. You will learn about the latest research on cancer development in mind and body, which will
help you prevent the disease, or, help to reverse it if it has already developed.
Lecture: The Science of Longevity - A Mindbody Perspective “Youthful immortality” is a dream of Mankind forever. Are we any closer to the fulfillment of this dream? You
have an “immortality gene” in your DNA called telomerase, which allows certain microorganisms to live
indefinitely. What about loss of energy and vitality as we get older? Has science brought us any closer to
therapies for aging and age-related degenerative diseases? Come and hear the mindbody research on these
intriguing topics.

Lecture: The Importance of Nutrition in Primary Care The epidemic rise of nutrition related chronic diseases in our older and younger generations drives home the
need for primary care medicine to expand its role in diagnosing nutritional risks and recommending lifestyle
changes to reduce the risks. The continuing increase in obesity, which for some begins in infancy, leads to
multiple risks in diabetes, coronary heart disease, cognitive impairment and gastro-intestinal issues. The role
of the primary care provider is essential in reversing the present developing crisis.
