this is a fair trade certified™ organic coffee grown in the marcala region of honduras. this coffee comes to us from cafe organico marcala, s.a. (comsa), a small cooperative founded in 2000 with just 45 original farmers. it has since grown to over 800 members. comsa was done significant work to increase the sustainability of the coffee industry in marcala, focusing primar- ily on bringing health back to the soil through the elimination chemical fertilizers. the cooperative composts the coffee waste to create organic fertilizer, which it then distributes free to farmers. this has allowed farmers to use their fields for not just coffee, but for sustenance crops and livestock grazing. this coffee is grown at 1300 - 1700 meters, and is fully washed. comsa members grow primarily bourbon, typica, caturra, and catuai varieties, and this lot is decaffeinated using the swiss water process. coffee is a family affair at one line coffee, we specialize in sourcing and roasting seasonal, single farm coffees in an ethical and sustainable way. we believe in giving credit to a farmer, and work hard to match their passion when we roast. visit us at onelinecoffee.com honduras marcala comsa decaf a well-balanced decaf. showing fresh apple on the nose, along with mulling spices, specifically cinnamon. the apple carries into the cup, with a juicy acidty balanced by a touch of savory. a caramel sweetness finishes the cup.
