OPERATIONConvectionBakingTips
Convection Baking uses heated airthat is circulated over and around
foods by the convection fan locatedin the back of the oven. When
convection baking, cookingtemperatures used in recipesshould be reduced 25 ° E.
METAL OR GLASS
Any type cookware will work inthe convection oven. However, metal pans heat faster and arerecommended. Glass pans cookmore slowly.
PAPER OR PLASTIC
Heat-resistant paper and plastic thatis recommended for regular ovensmay be used in your convection oven.
Because heated air is circulated
evenly throughout the oven, foodscan be baked with excellent resultson 2 or 3 racks at a time When using
mufti-rack baking, the cooking timemay be longer and foods may not beas evenly browned as using onlyone rack
During any oven operation you mayhear a fan noise. This is the internal
cooling fan that keeps all electricalparts from overheating It is notuncommon for this fan to keeprunning even after the oven isturned off.
A convection fan will run while
convection cooking The fan will turnoff when the door is opened
When Convection Baking or Roasting,as the number of rack positions usedincrease, steam may be noticeable asit escapes from the oven vent locatedjust above the oven doo_
When baking on 3 rack positions, place the first rack on position 1, thesecond rack on position 3, and thethird rack on position 5
• For cooking foods on 3 rackpositions.
° For large quantities of cooking
° Great for cooking biscuits, brownies, angel food cakeand bread
10
OPERATIONConvectionRoastingTips
During Convection Roasting, heatcomes from the top element. Theconvection fan circulates the heat
evenly around the food,Meats cooked in a convection oven aredark brown on the outside and tender
and juicy on the inside, In most casescooking time will be less when usingthe Convection Roast feature,
Use the recommended roastingtemperature, Preheating is notnecessary Check foods at the end ofsuggested time You may choose tocook longer.
When you are Convection Roasting, you should use the broiler pan andgrid that came with your new ovenThe pan is used to catch greasespills and the grid is used to preventgrease splatters,
To use the Pan and Grid
a. Place the rack in the lowest rack
position
b. Place the meat on the broiler panand grid

OPERATIONOvenCooking Tips
It is normal to have some odor when
using your oven for the first time. Tohelp eliminate this odor, ventilate theroom by opening a window or usinga vent hood
IMPORTANT: Never cover the ovenbottom or oven rack with aluminum foil.
Improper use can cause poor heatflow, poor baking results, and maydamage the oven finish To preventstaining from spiNovers, you mayplace a piece of aluminum foil or acookie sheet below foods which mayspill over.
Opening the door often to check foodswilt cause heat loss and poor bakingresults..
Preheating is bringing the oventemperature up to the temperature youwill be using during baking. Let theoven preheat thoroughly when recipescall for preheating
To prolong the life of your ovenlight bulb, follow this helpful tip:Always turn the light off when theoven is not in use or during a cleancycle. If your oven light is left on foran extended period of time, the ovenwill be warm when the door is openeddue to the heat generated from theoven light bulb
The oven vent is Iocated just above thedoor This area could become hot
during oven use. It is normal for steamto come out of the vent and/or collectmoisture underneath when oven is in
use The vent is important for properair circulation Never block this vent.
Oven Vent
Location
In the back of the oven you will noticea small tube. This is a heat sensor thatmaintains the temperature of the ovenNever move or bend this tube.
Oven '_Temperatu_._Sensor
The low temperature zone of your oven(between 170 ° and 200°F) is availableto keep hot cooked foods warm. However, foods should not be keptat these temperatures longer than2 hours.
12
OPERATIONOvenCooking Tips
When using your convenient DelayStart operation, foods such as dairyproducts, fish, poultry, etc., shouldnever sit more than 1 hour before
cooking Room temperatures and theheat from the oven light promotebacterial growth
Baking results will be better if baking pansare centered in the oven as much as pos-sible. If baking with more than one pan, place the pans so each has at least 1 to1 1/2 ° of air space around it. Place pansso one is not directly above the other
x
Most recipes for baking have beendeveloped using high-fat productssuch as butter or margarine (80% fatby weightithe federal requirementfor products labeled "margarine").You will get poor results if cakes, pies, pastries, cookies or candies are madewith low-fat spreads. Low-fat spreadscontain less fat and more water The
high moisture content of thesespreads affects the texture and flavorof favorite baked recipes. The lowerthe fat content of a spread product, the more noticeable these differencesbecome. To ensure best results, use
margarine, butter or stick spreadscontaining at least 70% vegetable oil
The Oven Temperature Sensor at theback of the oven continuously sensesand controls the temperature insidethe oven To keep a constant settemperature, the elements will cycle(turn on and off during cooking)
FLAT COOKIE SHEETS, withoutsides, allow air to circulate all aroundthe cookies for even browning
SHINY PANS reflect heat, and are
perfect for cakes and quick breadsthat need a light brown crust
GLASS, DARK NON-STICK ORDARKENED BY AGE BAKEWARE
absorbs heat, and can be used for yeastbreads, pie crust or foods that need abrown crust. When these pans areused, the oven temperature should bereduced by 25°F.

OPERATIONOvenCooking Tips
The oven racks are designed withstops, a convenience as well as a safetyprecaution The guides have a bump toprevent the racks from tilting whenracks are pufled out of the oven Thisdesign allows the racks to be insertedin only one way

Your oven has seven (7) rack positionsThe top position is only a guide.. Itcannot be used as a rack position
Guide

Always place oven racks in theproper position while oven is cool.
CAUTION: When you are using therack in the lowest position (1), you willneed to use caution when pulling therack out. We recommend that you putlthe rack out several inches and then, using two potholders, pull the rack outby holding the sides of it The rack islow and you could be burned if youplace your hand in the middle of therack and pull all the way out Be verycareful not to burn your hand on thedoor when using a rack in the lowestposition (1)
You may feel that your new ovencooks differently than the oven itreplaced We recommend that youuse your new oven a few weeks tobecome more familiar with it, followingthe times given in your recipes as aguide If you feel your oven is too hotor too cool for your cookingpreference, see Do It YourselfTemperature Adjustment in the backof this manual to make the adjustment.

OPERATIONBroilingBroiling is cooking by direct heat fromthe upper element The oven doorshould remain open to the broil stopposition during broiling
it is not necessary to preheat the ovenwhen broiling. Use the broiler pan andgrid that came with your oven Bothare designed for proper drainage offat and liquids
r
lf foil is used it must bemolded tightly to the gridand slits cut into the foilto match those of the
grid. This allows fats and liquidsto drain into the broiler pan, preventing fire and excessivesmoke.
Always remove thepan and grid fromthe oven. Storing orforgetting a soiledbroiler pan in the oven is a
potential smoke or fire hazard.
The US Department of Agriculturerecommends to cook meat and pouItrythoroughly--meat to at least anINTERNAL temperature of 160°F andpoultry to at least an INTERNALtemperature of 180°F Cooking to thesetemperatures usually protects againstfood-borne illness
The closer you place foods to the broilelement, the faster foods brown on
the outside yet remain red to pink inthe center
Moving meats away from the elementwill allow the meat to cook to the center
while browning on the outside. Cookside 1 at least 2 minutes longer thanside 2 If your oven is connected to 208volts, you may want to use a higherrack position and/or broil foods longer
