To improve value for health of organiccrops, we need to understand: How the production methods affect crop

composition. How crop composition affects human health.

This knowledge can be used to providehealthier foods: now and in the future.

Problems with product-orientedcomparison of production systems

It is not efficient for detection of smallbut systematic differences betweencomplex and variable systems.

The few compounds that arefundamentally different (*) tend toreceive most of the attention.

Such studies only give usefulinformation if the measured compoundsare important for health.

We know very little about which foodcompounds are in fact important for thehealth of generally well-fed humans! “Important for health” = a realistic change

in intake will make a real difference forhealth

Nutrients are not important for health ifthere is no deficiency.

Toxins are not important for health if theamounts are not harmful.

Advantages of function-orientedcomparison of production systems

Function-oriented comparisons focus onthose aspects where the productionmethod makes some kind of consistentdifference.

So if any of these functional aspects turnout to be important for human health,there will be difference between thesystems.

Advantages of function-orientedcomparison of production systems

Each of the functional aspects areimportant in themselves, so if it turns outto not be important for health, it is still ofvalue to understand how it works.

Once we understand both function andeffect, we can improve the methods forbetter health.

How the production methods affectcrop composition

Organic crops are more resistant thanconventional crops, simply becauseorganic farmers must select the methods(fertilisation, varieties etc.) that best preventdiseases and pests.

One of the resistance mechanisms in plantsis formation of “natural pesticides”,defence related secondary metabolites.

In nature, plants make a “trade-off” betweengrowth and defence.

Where we are now

There are many indications that organicfoods generally are better for health thancorresponding conventional ones.

These benefits can be explained throughstandard scientific concepts.

The benefits are easily lost, if anymethods for plant protection and/or soilfertility enhancement are over-used.

Future progress

Definitive understanding of an(y) effect of foodon health requires parallel, complementarystudies of foods, animal models and humanbeings (Brandt & Seal 2006).

Future studies should be designed to test themost likely beneficial effects.

Better understanding of cause and effect is thenecessary and sufficient prerequisite forimprovements of the benefits of (organic) foodon human health.
