How to cook a duck
Ingredients
• Approx. 2kg whole duck, cleaned
• Mixture of 20 ml of maple syrup and 20 ml of olive oil
• 2-3 teaspoons of sea salt
• A dozen of prunes
• 30 ml of cognac (brandy)
Prepare your ingredients
Rub the duck’s skin with mixture of maple syrup and olive oil
Put salt inside the duck
Stuff the duck with dozen of prunes
Splash of cognac inside the duck
Make a ball out of piece of aluminium foil and cover the hole in
the duck
Cover tips of the wings and the neck with aluminium foil
Important! Bake the duck breast down!
Bake the duck for 20 min per every half a kilo (1 hour and 20 min for
this 2 kg beauty)
Serve decorated with parsley and oranges
