ometimes finding the
perfect gift for someone
leaps out at you; as soonas you picture your partner,
best friend or mum, an
image of just the right thing pops into
your head.
But other times, that crystal clear
Aha! moment never quite hits and
youre left desperately racking your
brain (and the department store
shelves) for the perfect gift.
Enter, stage left: sweet treats. The
star of the show.
Salted caramel is the flavour de jour
right now, and for good reason - its
delicious! Michel Cluizel, one of my
favourite chocolatiers from France,
is the creator of this sumptuously
sweet and salty block, and its one
of our bestsellers. Its the ideal treat
to complement a little after-dinner
espresso or dessert wine.
Weiss, the inventors of haut chocolat,also hail from France (like all good
things, really champagne, perfume,
fine wines!). Can you guess why I love
them? Its because of their unique
and unrivalled flavours, like white
chocolate and crisp red fruits, vanilla
and coconut milk, dark chocolate
roasted hazelnuts and milk chocolate
with crunchy roasted sesame seeds.
If youre having trouble deciding
which bar to get for your sweet-
toothed friend, we package up
all nine bars together in a fancychocolate library.
My favourite suggestion for anyone
whos feeling a little bit stuck on what
gift to get is a gorgeous chocolate
hamper. Because at the end of the
day, chocolate is always the answer!
Bockers & Ponyreleases decadentchocolate hamper
Spiced Poached Pearswith Salted Caramel
INGREDIENTS:
4 large pears peeled and cored,
keeping the stem in tact
4 cinnamon sticks
4 cardamom pods
4 staranise
2 vanilla pods
1 teaspoon of dry cloves
2 cups of soft brown sugar
2 cups castor sugar
200gms unsalted butter, at room
temperature, cut into pieces
1 cup thickened cream, at room
temperature
1 tablespoon salt flakes
METHOD:
Pears
1. Place 4 cups of cold water, vanilla, cinnamon, nutmeg, cardamom and
sugar in a saucepan over medium-high heat.
2. Bring to the boil and then reduce heat to medium-low.
3. Add pears and cook, partially covered and turning occasionally, for
18 to 20 minutes or until pears are just tender.
4. Remove pears from the stove and allow to cool in syrup, turning occasionally.
5. Using a slotted spoon, transfer pears to a plate.
Caramel
1. Heat the sugar over medium-high heat in the bottom of a saucepan.
2. Whisk the sugar until completely melted.
3. Continue cooking the sugar until it reaches a deep, golden colour
(ensure you watch the saucepan closely as the caramel burns easily).
4. Once the sugar is a dark golden colour carefully add the butter and
whisk until melted.
5. Remove the saucepan from the heat and slowly pour in the heavy cream
whisking until it is mixed in.
6. Whisk in the sea salt flakes.
7. Let the caramel sauce cool for 10 minutes in the pan.
8. Serve both the pear and caramel warm with your
favourite ice-cream or double cream.
9. Pour the caramel into a large jar and leave to cool
to room temperature.

Pretty Little Liarsis a gripping drama
centred around four girls whose ringleader
goes missing. Her body is eventually found
and the four girls start receiving threatening
messages from an unknown source. All four
girls are entwined by devastating secrets. In
the end it all depends on their ability to trust

are missing out on one fast-paced, exquisitely
acted drama. The main character Carrie
Mathison who has bipolar disorder, believes

Breaking Badfollows the cancer journey of

for his expensive treatments. He needs to
make money fast so he begins manufacturing
the illegal substance crystal meth and the
series becomes a fast-paced, violent and
unforgettable road of morality and mortality.
Once Upon a Timeis a fabulous family
series set in the fictional town of Storybrooke.
The residents of Storybrooke are all
characters from famous fairytales but whohave lost their memories due to an evil
curse. The characters have to each accept
and find who they once were in order to put
Storybrooke right again. It is a charming
series if youre a fan of magic and stories.
House of Cards
has been receiving
international applause,
offering some remarkable
performances by the
likes of Kevin Spacey
and Robin Wright. It is
a political drama that
follows the sinister plot
of an ambitious and evil
senator (and his equally
malevolent wife) to become president of the
United States. Think Macbeth and Richard III in
a modern context: ominous, dark and twisted!
Downton Abbeyis a
pre WWI period drama.
The heir to the estate of
Downton Abbey perishesin the sinking of the Titanic
and distant relatives are
forced to come and marry
off the daughters in the
hope of acquiring a new
heir. There are tensions
that unfold among the
aristocrats of Downton Abbey and the servants
and staff of the estate. Think romance, family
drama, loss, and monetary hunger woven
together into wonderful script writing. Perfect

INGREDIENTS:
320g of bananas, sliced thickly
60g butter
60ml banana liqueur100ml honey
2 scoops ofvanilla ice-cream
40ml caramel20g toasted flaked almonds
METHOD:
1. Melt the butter is a non-stick pan.
2. Add sliced bananas and cook on one side untilcaramelized.
3. Add the honey and liquor, making sureto flame off the alcohol as its pouredinto the pan.
4. Spoon out the bananas into abowl with the caramelized side up.
5. Pour the sauce over thebananas.
6. Spoon the ice-cream into the bowl
and drizzle with caramel.7. Garnish with flaked almonds.

have the difficult job of having
to try any new crazes, and
the cronut is a new craze that
has definitely taken Sydney by
storm. Originating in New York
and created by Dominique Ansel at
his popular Soho Bakery, New Yorkers
were lining up around the block to
get a taste of the cronut when it first
emerged on the food scene.
This prompted the queson who rst
made the rst Australian version, so I
went on the hunt to nd out. This lile
invesgaon led me to the very talented
Robert Pirina at Glenorie Bakery.
When probing Mr Pirina on how he
managed to nab the tle of being the
rst Australian to bring the cronut
craze down under, he admits it was a
case of right place, right me.
I was in my shop last year when a
regular customer asked if I had heard
about this new craze that had hit the
states. No sooner had I answered no and
the customer had whipped out his phone
and was thumbing through images of the
cronut craze, explained Mr Pirina.
I was blown away, and got baking as
soon as I could. I saw that The Today
Show was featuring the cronut in one of
their segments. I decided to call in andtell them I could make cronuts and within
24 hours I was on naonal television.
Aer bringing the cronut to Australia,
Mr Pirina has been through a whirlwind
of publicity, with rapid acceleraon into
the lime light of Australian baking and
even meeng original Cronut creator
Dominique Ansell.
He inspired me to think even further
outside the box and deliver fresh
ideas mixed with the latest baking
techniques, said Mr Pirina.
Mr Pirinas version of the cronut
is dierent from its Americancounterpart, with the reduced sugar
content and rich, vanilla custard
making it a staple Australian dessert
and an overwhelming success at
his Glenorie Bakery and Outback
Bakehouse store in Windsor.

Te Rocks Brewing Co.crew are expanding their
ootprint o great crafbeer venues in Sydney.
Craft beer has taken Sydney by storm over the
past five years, with bespoke brews seemingly

Rocks Brewing Co. has been riding the wave of

Minutes down the road in Redfern you will find the
latest Rocks Brewing Co. project, the Lord Raglan.
Recently refurbished with a grungy upcycled look
(with expansions to come!). There are 16 rotating taps
to entice craft beer lovers from afar. The menu is all
about food thats good to drink with, with choices
such as Baltimore-style crab cakes, spicy chicken
wings and tacos. You can hang out on the vintage
sofa or try your luck on the pinnies in the corner
this pub oozes a warm and friendly environment.

With the kitchen boasting a smoker importedfrom the USA that slow cooks overnight,
youll love the Texas-style brisket or pulled

has released its
special edition
2014 Extra StrongVintage Ale.
Retaining its title as the
strongest beer brewed by
Coopers, the limited release
beer was officially launched at
three key events in Adelaide,
Sydney and Melbourne on
Friday 4 July.
Coopers Managing Director
and Chief Brewer Dr Tim
Cooper said Vintage Ale
2014 demonstrates the
same high standards as
previous vintages, maintainingthe essential hop-driven
characteristics that are
expected from this highly
anticipated brew.
This years selection of
hops has been given careful
consideration to ensure the
best combination of bittering
and aromatic varieties, Dr
Cooper said. Four varieties
two Australian and two
American make up the 2014
Vintage Ale.
American variety Bravoprovides the foundation for
the bitterness of the brew,
while Galaxy and Ella from
the hop-growing regions
of Tasmania provide fruity
aromas and flavours of peach,
grapefruit and passionfruit.
Layers of spicy notes add
another dimension and round
out the beverage.
The other American variety,Cascade, harmonises and
emphasises the floral and
fruity undertones arising from
the Tasmanian hops and
from Coopers distinctive ale
fermentation process.

winter was the perfect time to
enjoy Vintage Ale.
Limited production and
strong demand in the market
saw last years run of Vintage

Vintage Ale continues its reign

Since its first release in 1998,

in cool conditions to mature

he best thing about
winter is being
able to indulge
in sweetdesserts,
from the classic
cheese platters to
rich, chocolate self-
saucing puddings
and everything else
in between.
To accompany almost
any desserts you cannot
go wrong with a bottle of
sticky. A sticky is a name
given to wine that has been
made from grapes that are late
picked or affected by a mould calledbotrytis. Essentially it is a wine that is
made from raisin-like grapes that produce a
luscious, sweet drinking wine.
The reigning champion of all stickies
continues to be De Bortoli Noble One.
Having been awarded more than 117
trophies and 376 gold medals both nationally
and internationally, Noble One ranks in as not
only one of the most awarded wines in history
but also a truly iconic Australian wine. Many
consumers rank Noble One alongside the
likes of Penfolds Grange or Henschke Hill of
Grace, but at a price that everyone can afford
to indulge in.
In recent years we have seen an explosion in
Moscatos, off dry Rieslings and even sweet
reds. I am not ashamed to say that I love
Moscatos, especially the ones that are fruit
sweet rather than sugar sweet. I also love
them because of their versatility with cheese;
youll be hard pressed to find a cheese that
they dont go with.
Brown Brothers Cienna is a light red wine
that delivers fruity sweetness that can be
consumed at room temperature or chilled.
It is a variety that was created in Australia
by crossing a Spanish grape variety called
Sumoll with Cabernet Sauvignon. Try this
beauty with poached pears, berry cobbler,
rhubarb crumble, or a loganberry pie. So if
youre having any dessert thats rich in sweet,
mixed berries, add Cienna for the perfect
palatable
experience.
Wine is not the
only beverage that
accompanies desserts. In the last few
years we have seen an increase in different
flavoured spirits, particularly bourbon. The
ultimate bourbon to accompany your dessert
is Wild Turkey American Honey. This bourbon
liqueur is an easy to prepare drink that you
can enjoy with or without ice, or for an extra
special taste, mix it with lemonade and a
