    he heat of summer isalready settling on

    Lincoln and just daysbefore most schools getout for the summer, resi-dents of all ages weremaking their plans for thesummer.

    Brothers Daniel andAlan Palmer were pickingup a few sodas last weekand said they hope to beable to spend their free

    time lazing around out ofthe heat.

    For Daniel Palmer,school is another aspectof the upcoming summeras he will be attending

    summer sessions at SierraCollege.

    While the Palmers plan

    to take it easy, Shelly Ellis, who recently openedBookbuyers a bookstore

    at 510 F St. said she willspend this summer work-ing.

    It wont all be work,however, as Ellis said shehas plans for the Fourthof July.

    I look forward to theFourth of July Parade,Ellis said. We sit in mynieces yard near McBeanPark and watch the fire-

    works.Joyce Seeger, who lives

    in Sun City Lincoln Hills,said she has been invited

    to a barbecue on theFourth of July, as well as afew other events friends

    I dont have any bigtravel plans, Seeger said.The way the recession is,

    we have to take thingsday to day.

    Another Lincoln resi-dent whose summer hasbeen affected by therecession is WilliamCorky.

    Im unemployed as oftoday, Corky said lastweek.

    Although not the best of

    circumstances, Corky saidhe plans on making themost of the situation.

    Im going to take sometime off to spend with mywife and kids, Corky said.

    Well be going to Mon-terey at the end of thesummer.

    Alison Lukins said sheand her family will be

    doing the usual bygoing camping at RawlinsLake with friends.

    We take a trailer andjust head up there, Lukins

    said. Well go swimmingand keep cool.

    Heading half an oceanaway from Lincoln isLeland Rice, who will

    travel to the HawaiianIslands June 21 to cele-brate a wedding and hisown 27th birthday.

    Im going to Kauai andMaui, Rice said. Otherthan that, Ill just beworking.

    Traveling the opposite

    way this summer is Lin-coln resident Tony Breita-haupt but hes not com-ing back.

    Were moving to Wyoming, Breitahauptsaid. I inherited a rockshop. Were going to takeit over and learn aboutfossils.

    Breitahaupt said he

    expects to be buying, sell-ing and trading fossilsbefore summer is over.

    On the other end of theage spectrum from fossilsis one of Lincolns newest

    residents, who will becoming into the worldthis summer, according toexpecting mother LinneaRoberts, adding that hav-ing a baby will be hersummers work.

    For 5-year-old AlecRoberts, a new sibling

    isnt the only excitingaspect of the approachingsummer.

    I get to play sports,Alec said, adding that he will be playing soccerwith his friends. While notplaying soccer, Alec willbe racing his Matchboxcars, which he eagerlyopened just after getting

    out of the Target store lastThursday.

    Prep time: 15 minutesCook time: 20 minutes4 tablespoons unsalted butter

    2 tablespoons unsweetenedpineapple juice

    1-1/2 tablespoons honey

    -teaspoon chili powder1/2 -teaspoon cayenne pepper

    2 tablespoons dark rum

    2 firm mangos, peeled pittedand sliced into strips

    Nonstick cooking spray1 pint vanilla ice cream-cup flaked coconut sweet-

    ened, lightly toasted

    1/4 -cup sliced almonds, lightlytoasted 4 lime wedges (optional)

    Heat butter, pineapple

    juice, honey, chili powderand cayenne pepper insmall saucepan over medi-um heat; bring to a boil.Reduce heat and simmer,stirring occasionally, overmedium heat, until mix-ture begins to thickenslightly, about 10 minutes.Stir in rum; remove glazefrom heat. Set aside to

    cool completely.Brush mango slices withsome of the glaze and letstand 10 minutes. Spraynonstick ridged grill panwith nonstick spray and setover medium-high heat.Add mango slices and grill,turning occasionally, overmedium-low heat, untilbrowned and nicelymarked, 3 to 5 minutes.Place two mango slices in

    each of 4 dessert bowls.Top each serving with 1scoop ice cream, 2 table-spoons toasted coconut,and 1 tablespoonalmonds; top with addi-tional mango slices. Driz-zle with remaining glaze.
