She fell in love with the country and its people, eventually met and married a Dominican. iNGredieNts For 10 PeoPLe:60 oz red tuna, 3 oranges, 3 lemons, 2 oz wakame seaweed, 1 lb fresh potatoes, 2 oz shiitake mushrooms, 50 cl cream, 1 oz shiitake mushrooms, ½ lb Arborio rice, 2 cl virgin olive oil, Maldon salt to taste, ½ oz black sesame seeds, ½ oz chives, 2 onions, 2 leeks, 300 ml vegetable stock, 3 egg whites, 3 oz breadcrumbs.

PreParatioN:Clean the tuna removing the skin, any bones, etc., then cut into 5-6 oz squares per person. Any remaining pieces can be used to make a tartare, or pickle for a salad, etc. For the crust, mix the breadcrumbs, dry seaweed (do not soak) and the grated citrus fruit. Dip all four sides of each tuna square in the egg white to help the crust stick, then coat in the crust mixture. Put to one side. For the Parmentier, peel the potatoes, slice them with a paring knife (don’t use a larger knife to chop them) and boil them in water

with salt and olive oil. When the water is absorbed and the potato is cooked remove from the heat, add the cream and shiitake mushrooms, previously soaked in hot water to rehydrate them, and once dried sautéed in a frying pan with olive oil. Blend in a food processor or blender to form a smooth mixture, adding virgin olive oil if needed. Check for salt

For the green oil, blend virgin olive oil, the chives and a few black sesame seeds in the food processor or blender, then strain and put to one side. For the risotto, cut the onion, the white part of the leeks and the shiitake mushroom in brunoise, then fry in virgin olive oil until soft. Add the rice and cook gently, adding the vegetable stock a little at a time, then bind and flavour with cream, parmesan cheese, virgin olive oil and salt.

Pat the tuna dry and sear both sides on a high heat in a non-stick frying pan with a little olive oil. Slice diagonally to serve. The middle of the tuna should still be pink and juicy. For a more well done finish, place in a hot oven at 180ºC for 2-3 minutes, depending on the thickness of the tuna and each person’s preference.

to serve:Place a tear-shaped drop of the shiitake Parmentier on the right-hand side of the plate, and to its left place the two slices of tuna, face up, then drizzle with the green oil and sprinkle with black sesame seeds.

reaLizaCióN:Limpiamos bien el lomo del atún de piel, espinas, etc., debemos darle forma cua-drada, nos tiene que quedar un lomo por persona de unas 5-6 onzas, lo que nos reste de darle forma podemos usarlo para hacer un tartar, escabecharlo para una ensala-da, etc.

Para la costra debemos mezclar el pan ra-llado, el alga wakame seca no remojada y la ralladura de los cítricos. Pasamos los cuatro costados de cada lomo por la clara del huevo, para que la costra quede bien impregnada, y seguidamente los empana-mos con la mezcla anterior. Reservamos.

Para el parmentier debemos pelar las pa-pas, cascarlas con una puntilla (no cortar-las con el cuchillo) y cocerlas en agua con sal y aceite de oliva. Cuando el agua se consuma y la papa esté cocida retiramos del fuego, añadimos la crema de leche y los hongos shitake que habremos remoja-do en agua caliente para rehidratarlos y una vez secos salteado en una sartén con aceite de oliva. Lo procesamos todo en la Thermomix o batidora hasta que nos quede una mezcla untuosa, pudiendo ayudarnos de aceite de oliva virgen, probar de sal.

Para el aceite verde deberemos procesar en la Thermomix o batidora aceite de oliva virgen, cebollino y un poco del sésamo ne-gro, colar y reservar.

Para el risotto hacemos un fondo con acei-te de oliva virgen, cebolla, lo blanco del puerro y hongo shitake todo picado en bru-noise, cuando ablande añadimos el arroz y lo cocinamos poco a poco añadiendo el caldo de vegetales, ligamos y damos sabor con crema de leche, queso parmesano, aceite de oliva virgen y sal.

En sartén antiadherente con un poco de aceite de oliva virgen y a fuego vivo mar-camos el atún por los dos lados que no están empanados. Cortamos en diagonal para servirlo. El centro del atún debe que-darnos rosado, es así como nos quedará jugoso, si gusta más hecho podemos intro-ducirlo en horno caliente a 180ºC durante 2-3 minutos más o menos, siempre depen-diendo del grosor del lomo o del gusto de cada persona.

moNtaJe:En la parte derecha del plato colocaremos una lágrima del parmentier de shitake, a su izquierda los dos tacos del atún miran-do hacia arriba, decorar con unos hilos del aceite verde y las semillas del sésamo negro.

a fever is the temporary increase of body temperature above that established as normal in response to some illness or environmental factor. The parameters established for discussing fever in children is determined when their body temperature is at or above these levels:

• 100.4° F (38° C) measured in the rectum• 100.4° F (38° C) measured in the ear• 99.5° F(37.5° C) measured in the mouth • 99° F (37.2° C) measured under the arm

Fevers arise more frequently during the first three years of life and paradoxically, their appearance is fundamental to help strengthen children’s immunity. Therefore, it is not necessary in all case to choose treatment but rather it depends greatly on the symptoms presented by the child.

La Fiebre es el aumento temporal de la temperatura corporal por encima de lo establecido como normal en respuesta a alguna enfermedad o factor ambiental.

Los parámetros establecidos para hablar de fiebre en un niño se determinan cuando su temperatura corporal está en o por encima de estos niveles:

maiN CaUses oF FeverIn children, the main causes of fever, and not the only causes, are infections. Infections can manifest themselves with only a fever or with other symptoms. These tend to generally correspond to slight auto-limited respiratory infections with a viral origin that evolve towards spontaneous healing. In this case, children have a fever, cough and nasal secretion but feel generally good when there is no fever, since all children feel worse when they have a fever. Other frequent infections that cause fever are gastrointestinal infections, which are accompanied by vomiting, diarrhea and abdominal pain, as well as urinary infections that can cause a fever without any other symptoms.

Some fevers do not have an infectious origin. The most frequent fever is that caused by a high environmental temperature. Dehydration, some intoxications, auto-immune and neoplastic diseases can also produce a fever.

What shoULd Be doNe WheN a ChiLd has a Fever?

First of all, remove the child’s clothing and offer him/her liquids. Small children tolerate being naked well, while older children do not and ask for heavy clothing that may be substituted with light clothing that does not hold the temperature.

PriNCiPaLes CaUsas de FieBreEn los niños las principales causas de fie-bre, no las únicas, son las infecciones. Las infecciones pueden manifestarse solo con fiebre o acompañadas de otros síntomas. Estos suelen corresponder generalmente a infecciones respiratorias leves de origen vi-ral, auto limitadas que evolucionan hacia la curación espontáneamente. En este caso, los niños tienen fiebre, tos y secreción nasal pero con buen estado general en ausencia de fiebre, ya que todos los niños están de-caídos mientras tienen fiebre.

Otras infecciones muy frecuentes productoras de fiebre son las gastrointestinales que cursan con vómitos, diarrea y dolor abdominal, así como las infecciones urinarias que pueden producir fiebre sin ningún otro síntoma.

Algunas fiebres no son de origen infeccioso. La más frecuente es la fiebre por alta tempe-ratura ambiental. La deshidratación, algunas intoxicaciones, enfermedades autoinmunes y neoplasicas también producen fiebre.

¿QUé se deBe haCer CUaNdo UN Niño tieNe FieBre?

En primer lugar quitarle ropa y ofrecerle lí-quidos. Los niños pequeños toleran bien quedarse desnudos, los mayores lo toleran mal y reclaman ropa de abrigo que puede ser sustituida por ropa ligera que no mantie-ne la temperatura.

Si el niño es pequeño y la fiebre es elevada se debe bañar con agua tibia fresca duran-te 15 – 20 minutos o bien aplicarle paños fríos mojados en la frente, axilas, ingles, brazos y piernas, paños que periódicamente deben cambiarse por otros mojados porque rápi-damente se calientan. Los niños mayores suelen rechazar el baño fresco, toleran me-jor los paños fríos. Con estas sencillas medi-das se puede controlar la fiebre cuando no es elevada. En estos casos además hay que administrar fármacos antitérmicos.

Los fármacos antitérmicos de primera elec-ción en pediatría son paracetamol o ibu-profeno, los cuales se deben usar siguiendo las recomendaciones en las tablas de do-sificación sugeridas por el fabricante hasta que pueda ponerse en contacto con su médico.

If the child is small and the fever high, he/she should be bathed with fresh warm water for 15 – 20 minutes or cold damp cloths should be applied to the forehead, underarms, groin, arms and legs. These cloths should be changed with other damp cloths because they heat up quickly. Older children tend to reject a cool bath and tolerate the cold cloths better. These simple measures can help control the fever when it is not high. Fever medications should also be administered in these cases.

First choice fever medications in pediatrics are paracetamol or ibuprofen, which must be used following the recommendations on the dose tables suggested by the manufacturer until a physician can be consulted.

WheN to Be CoNCerNed aBoUt a Fever?Newborns with a fever or with a low temperature (below 35.5ºC), because in both cases an infection must be ruled out.

Infants under three months of age with a high fever, with no apparent cause or with other accompanying symptoms including weakness, irritability and refusing to be fed. Children under the age of two years, with drowsiness (in absence of fever) or difficulty breathing. Children of any age with fever and red spots on their skin, spots which appear when pressing down on the skin. These spots may be petechiae, a sign which makes it necessary to consult a physician urgently as it could correspond to a very serious infection called Sepsis or septicemia.

Children of any age with a temperature above 40ºC. In other cases of fever, when the general condition of the child is not poor and his/her vitality is not clearly decreased, a visit to a physician can be delayed some hours, [up to] 24 or 36 hours. In the meantime, it is necessary to watch for the appearance of symptoms of alarm and bring down the fever with physical measures and medication.

Bebé menor de tres meses con fiebre eleva-da, sin causa aparente o con otros síntomas acompañantes entre los que están el de-caimiento, la irritabilidad y el rechazo de la alimentación.

Niños menores de dos años con fiebre, ten-dencia al sueño (en ausencia de fiebre) o di-ficultad al respirar. Niños de cualquier edad con fiebre y manchas rojas en la piel, man-chas que al apretar la piel. Estas manchas pueden ser petequias, un signo que obliga a consultar con mucha urgencia porque puede corresponder a un tipo de infección muy grave llamada Sepsis o septicemia.

Niños de CUaLQUier edad CoN temPeRatuRa PoR enCima de 40ºC.

En los demás casos de fiebre, cuando el es-tado general del niño no es malo y su vitali-dad no está claramente disminuida, puede demorarse la visita al médico algunas horas, 24 o 36 horas. Mientras, es necesario vigilar la aparición de síntomas de alarma y des-cender la fiebre con medidas físicas y con fármacos.

When you think of Punta Cana, you probably picture Caribbean sand and surf. However, you should also consider a visit to the awe-inspiring Indigenous Eyes Ecological Park and Reserve, a privately protected area of lowland subtropical forest in the heart of Punta Cana.

This self-recycling, secondary forest is home to trees that are no more than 200 years old, but it is able to constantly refresh its own habitat without the interference of human contact. Featuring more than 500 different species of plants, 36 percent of those endemic to the island, the Indigenous Eyes Ecological Park and Reserve offers visitors the opportunity to personally examine the local natural culture, flora, and fauna.

In addition, the reserve is home to 12 freshwater lagoons, three of which visitors are allowed to swim in. Although the water can be somewhat chilly, it is crystal clear and refreshing after a day exploring the subtropical forest.
