We thought our quest for

good old-fashioned bulla

recipes was simple enough.

Responding to the longing

of Vancouver, Canada,

reader Barbara Binns

realize that folks hold their

Rum balls are the perfectindulgence and they aregreat for holiday parties.

Crunchy Rum Ballsn 2 1/2 cups finely crushedvanilla cookie wafersn 2 tablespoons unsweetenedcocoa powder

n 1 cup confectioners' sugar (plussugar for coating)n 1 cup finely chopped walnutsn 3 tablespoons corn syrupn 1/4 cup dark rum

1: In a bowl, mix crushed wafers,cocoa, 1 cup confectioners' sugarand walnuts. 2: Add corn syrup,and rum. Mix.3: Form into 1-inch balls and rollin confectioners' sugar to coat.Makes about 48 rum balls.

Variations: Instead ofvanilla cookie wafers,try crushed shortbreadcookies, graham crackercrumbs, crushedmeringues, gingercookies or chocolatewafers.Substitute a cup ofpecans or desiccatedcoconut for the walnuts or go halfpecans, half shreddedcoconut. Or try ¾ cupconfectioner’s sugarand ¼ cup cocoa

Store in airtight con-tainer or freeze for upto a month. Bring toroom temperature before serving.

QUiCKtips- For maximum flavour, toastpecans.- To better control the stickinessof the batter, chill for about 30minutes and lightly butter thepalms of my hands before form-ing balls.- Roll balls in white sugar, cocoapowder or chopped nuts. Tastebetter if left for a few days toallow flavours to mingle andsoften.

Rum Balls and cake from Susie’s Bakeryand Coffee Bar, Southdale Plaza, Kingston

Creamy Smooth Egg nogn 6 eggs n 1 cup sugar n 1/2 teaspoon vanilla extract n 1/4 teaspoon ground nutmeg n 3/4 cup dark rum n 1/3 cup brandyn 2 cups whipping cream n 2 cups milkn Nutmeg

1: Beat eggs until very frothy. 2: Gradually beat in the sugar, vanilla

and nutmeg. 3: Stir in cold rum, brandy, whipping

cream and milk.4: Chill. Sprinkle nutmeg on top before

serving. Makes about 10 cups.

Low Calorie Egg Nogn 2 eggs, separatedn 4 cups skim milkn 1 teaspoon vanillan 2 teaspoons sugar substituten 1/4 cup dark rumn 1 dash nutmeg

1: Combine the egg yolks and milk in asaucepan. 2: Cook over medium heat until the mix-ture coats a metal spoon. Let cool. 3: Beat egg whites until they form softpeaks. 4: Add to milk mixture, add vanilla, sugarsubstitute, and extract. 5: Mix lightly. Cover and chill. Sprinkle nutmeg on top before serving.

Serves 6.

Butter Rum

Sauce

n 1 cup sugarn 1 cup half andhalf, evaporatedmilk or whippingcreamn 1/2 cup butter1/2 cup dark rum

1: In mediumsaucepan, bring toboil sugar, creamand butter. 2: Reduce heat,simmer, uncov-ered, stirring fre-quently, for 5minutes. 3: Remove fromheat and stir inrum. Makes 2 cups.Serve warm overrum cake or rumballs. Makes 2cups.
